1 loaf crusty French bread, diced into 1-inch cubes
1 stick butter
2 cups finely diced celery (leaves included)
2 carrots, peeled and very finely diced
1 large onion, diced
4 cups low-sodium chicken broth, plus more if needed
2 to 3 teaspoons fresh rosemary, chopped
1/2 teaspoon ground thyme
1/4 teaspoon ground sage
1/8 to 1/4 teaspoon turmeric
Kosher salt
1/4 cup fresh parsley leaves, chopped
Skillet cornbread, recipe follows, diced into 1-inch cubes
1/4 cup plus 2 tablespoons shortening
1 cup yellow cornmeal
1/2 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup buttermilk
1/2 cup milk
1 whole egg

Steps:

  • Spread the Skillet Cornbread and French bread cubes out on 2 baking sheets and let them dry for about 24 hours until totally crisp. Once dry, transfer the cubes to a large mixing bowl and toss to mix them up a bit.
  • Preheat the oven to 350 degrees F.
  • Warm up a large skillet or Dutch oven over medium heat and add the butter. When it's melted, add the celery, carrots and onions, and cook for a few minutes until the onions are almost translucent, about 6 minutes. Add the chicken broth and bring to a boil. Reduce the heat to low and add the rosemary, thyme, sage and turmeric. Gradually ladle the broth mixture into the bread, tossing lightly as you go. Keep gradually adding the broth mixture, tasting as you go and adding more seasoning and herbs if needed. Add salt carefully. You don't want to over salt your stuffing. If the mixture is not quite moist enough, add a bit more chicken broth and stir. Stir in the fresh parsley.
  • Place the dressing in a rectangular baking dish and bake until golden brown on top, 20 to 25 minutes.
  • Preheat the oven to 450 degrees F.
  • Melt 2 tablespoons of the shortening in a cast-iron skillet. In a large mixing bowl, combine the cornmeal, flour, baking powder, salt and baking soda. In a separate bowl, whisk together the buttermilk, milk and egg until fully combined. Slowly incorporate the wet ingredients into the dry, stirring until well combined. Melt the remaining 1/4 cup melted shortening and add to the batter, stirring constantly. Pour into the hot skillet, smoothing the surface with a spatula. Place in the oven and bake until golden brown on top, 20 to 25 minutes.

12 ounces cornbread mix (two 6-ounce packages)
6 ounces buttermilk biscuits (refrigerated can)
1/4 cup butter
1 large onion, chopped (about 2 cups)
5 celery ribs, chopped
5 cups chicken broth
4 large eggs, lightly beaten
2 teaspoons rubbed sage
1 1/2 teaspoons pepper
3/4 teaspoon salt

Steps:

  • Prepare cornbread mix and biscuits according to package directions and let cool.
  • Crumble cornbread and biscuits in a large bowl and set aside.
  • Melt butter in a large skillet over medium-high heat and add onion and celery.
  • Saute until tender.
  • Add sauted vegetables, broth, and remaining ingredients to crumbled cornbread and stir well.
  • Spoon dressing into a lightly greased 13x9" baking dish.
  • Bake, uncovered, at 350 for 55 minutes or until browned.

This is my favorite Cornbread Dressing I use for special holidays. I make my own white bread using my bread machine and my own Skillet Cornbread to use in this recipe. If you prepare the bread ahead of time, you can freeze them until ready to use. I really like this dressing. It is easy to do and has a great flavor. I like to add fresh mushrooms to the mix. 2 cups chopped onions
2 cups chopped celery
1/2 cup butter
4 cups finely crumbled toasted bread (I use homemade)
4 cups finely crumbled cornbread (see recipe I posted for Skillet Cornbread)
1 tablespoon salt
2 teaspoons freshly ground black black pepper
1 tablespoon dried sage
2 teaspoons poultry seasoning
turkey broth (from simmering turkey giblets with 3 1/2 cups water for 45 minutes. You can use unused portion to ma)
4 large eggs, beaten

Steps:

  • Melt butter in a skillet; add the onions and celery and saute until tender.
  • Combine toasted bread and cornbread in a large bowl and mix.
  • Add onions and celery plus their cooking liquid, the salt, pepper, sage, and poultry seasoning and mix throughly.
  • Using a bulb baster, add just enough turkey giblet broth to make a very moist mixture, then stir in the eggs and scrape the dressing into a large greased baking pan or dish.
  • Bake in 400 degree F oven until dressing is nicely browned, about 30-40 minutes.

3 cups onions, chopped
1 1/4 cups margarine
2 tablespoons bacon drippings
18 cups cornbread, precooked and crumbled
7 (14 ounce) cans chicken broth
3 eggs
3 teaspoons poultry seasoning
2 teaspoons sage
3/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Bake 4 8x8 inch baking dishes of cornbread. Allow to cool and crumble.
  • Brown celery and onion in margarine and bacon grease. Spread precooked cornbread in disposable turkey roaster pan sprayed with cooking spray. Stir in all ingredients. Bake at 350 degrees for 1 1/2-2 hours. May spoon additional turkey drippings over dressing if it begins to dry out before meal time.

Straight out of NW Alabama, this is my wife's signature dish at hollidays. Mind you, I stole this from her, so I'm hoping and trusting the amounts are accurate.

4 cups cornbread mix (She uses White Lilly)
1 quart buttermilk
2 eggs
2 large sweet onions, chopped (sweet onions like Vidalia)
1/2 celery heart, chopped
3/8 cup butter
2 tablespoons ground sage (or to taste, we like sage a lot)
1 cup turkey stock (she uses pan drippings)
1 (10 1/2 ounce) can cream of chicken soup
6 ounces evaporated milk
1 1/2 cups chicken broth (or until moist)
3 hard-boiled eggs (or more to your liking)
salt and pepper

Steps:

  • Make two recipes of cornbread according to the mix directions (amounts listed are for 2 recipes).
  • Crumble cornbread into the roasting pan used for a turkey with turkey crust left in the pan (or large, shallow casserole baking dish).
  • Fry the onions and celery in 3/4 stick of butter until tender.
  • Add to cornbread and mix well.
  • Add sage, dripping, cream of chicken soup, evaportated milk, eggs and broth.
  • Taste and adjust seasonings like salt and pepper and sage.
  • Mix well and wet the surface using extra broth and the back of a spoon to smooth.
  • Bake at 350 F until thick and browned on top. Dressing should be moist.
  • Serve with giblet gravy.

After her passing in 2005, It has become more and more important to try to recapture her in small ways. *Update- after careful review I mistyped the amounts of Sage and Poultry Seasoning- it is now correct - and thanks to a review- added a tablespoon of sugar to the cornbread. It turned out great.*

16 ounces Pepperidge Farm Herb Stuffing
2 (6 ounce) boxes Martha White yellow cornbread mix
1 tablespoon sugar
6 eggs, beaten
4 stalks celery, diced
2 medium onions, diced
1 tablespoon poultry seasoning
1/2 tablespoon sage
2 teaspoons pepper
1 cup butter
4 (10 1/2 ounce) cans cream of chicken soup
42 ounces chicken broth

Steps:

  • Make cornbread according to package directions- Adding 1 Tbsp Sugar.
  • Heat oven to 350 degrees.
  • In a LARGE pan mix stuffing mix, crumbled cornbread, and 2 cans of broth.
  • Chop onion and celery and saute in the 2 sticks of butter.
  • Heat soup in a seperate pan
  • Mix heated soup in with cornbread and stuffing mix.
  • Add onions, celery, beaten eggs, poultry seasoning, sage, pepper and mix thouroughly into dressing.
  • You want dressing to be very "juicy". If it gets dry add more broth.
  • Cook until browned on top - about 1.5 hours or so.

This recipe was given to me by a friend in 1960. The recipe was her mother's. I have made it every Thanksgiving since. It always gets rave reviews.

6 cups cornbread (broken)
4 cups biscuits (broken)
2 cups onions (chopped)
2 green onions (chopped, including green)
1 cup celery (chopped)
4 eggs (well beaten)
2 teaspoons salt
1 teaspoon pepper
1 teaspoon poultry seasoning
1 teaspoon sage (or to taste, I like a lot more)
8 cups stock (from giblets, or milk or water)

Steps:

  • Note:.
  • If using cornbread mix such as Jiffy, make sure there is no sugar in the mix. It will ruin your dressing. I make my own cornbread.
  • I buy canned bisquits and bake them.
  • The amount of stock is approximately You may need to add more. The uncooked dressing should be very moist, (almost runny).
  • In a very large bowl soak cornbread and biscuits in stock.
  • Cook in l l/3 cup hot fat, chopped onion, green onion and celery.
  • Add vegetables to cornbread mixture.
  • Add eggs and seasonings to cornbread mixture.
  • Mix well.
  • Bake in a shallow uncovered pan in 325 deg. oven for 1 hour.
