Blueberry Coffee Cake is a super simple and quick recipe that results in a moist and delicious cake that you can serve any time of the day.

3/4 cup butter
1 1/2 cups sugar
4 eggs large
1 teaspoons vanilla extract
3 cups all purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 cup sour cream
1/4 cup brown sugar (packed)
1 tablespoon all purpose flour
1/2 teaspoon ground cinnamon
2 cups blueberries fresh
1 cup confectioners sugar
2-3 tablespoon milk 2%
1/2 cup blueberries (optional)

Steps:

  • Grease and flour a bundt or tube pan; Set aside. Preheat the oven to 350 degrees F.
  • Cream butter and sugar together in a large bowl until light and fluffy. Add in the eggs one at a time, mixing until yolk disappears, then the vanilla.
  • In a separate bowl, whisk together flour, powder, baking soda, and salt. Add to cream mixture alternating with the sour cream until well combined.
  • In a small bowl combine brown sugar, flour, and cinnamon; Set aside.
  • Pour a third of the batter into prepared baking pan, spreading evenly.
  • Sprinkle half of the brown sugar mixture over the batter in in the pan. Place half of the blueberries on top. Repeat layers then top with the remaining batter.
  • Bake until cake tester inserted in the center comes out clean, about 55-65 minutes or until. Allow cake to cool in the pan, set on a wire baking rack for 10 minutes. Remove from pan and let cool completely on wire baking rack.
  • Meanwhile, prepare the glaze.
  • In a medium mixing bowl, whisk the powdered sugar and 2 tablespoons of milk together until smooth. Add more milk as necessary to obtain a pouring consistency. Drizzle glaze over cooled coffee cake. Garnish with fresh blueberries.

2 heaping teaspoons baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
3/4 cup sugar
1 large egg

3/4 cup whole milk
2 cups fresh blueberries
1/2 cup all-purpose flour
1/2 cup sugar
6 tablespoons salted butter
1/2 teaspoon cinnamon

Sugar, for sprinkling
Softened butter, for serving

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking pan with butter.
  • Add the flour, baking powder, cinnamon and salt to a medium bowl and stir to combine. Set aside.
  • Cream together the butter and sugar with an electric mixer. Add the egg and mix until combined. Mix in the vanilla. Add the flour mixture and milk alternately and mix until totally incorporated. Do not over-beat. Stir in the blueberries until evenly distributed. Pour the batter into the prepared pan.
  • For the topping: Combine the flour, sugar, butter, cinnamon and salt in a medium bowl and cut together using 2 knives or a pastry cutter. Sprinkle over the top of the batter.
  • Bake until the cake is golden brown, 40 to 45 minutes. Sprinkle with sugar. Cut into squares and serve with softened butter.

3/4 cup sugar
2 1/2 teaspoons baking powder
1 teaspoon salt
1/4 cup vegetable oil
3/4 cup milk
1 egg
1 1/2 cups blueberries
1/3 cup all-purpose flour
1/2 cup brown sugar, firmly packed
1/2 teaspoon cinnamon
1/4 cup firm butter (1/2 stick)

Steps:

  • In a medium mixing bowl, blend together 1 1/2 cups flour, sugar, baking powder, salt, oil, milk, egg and 1 cup blueberries. Beat thoroughly for 30 seconds and spread in a greased round 9x1-1/2-inch pan or an 8x8x2-inch pan.
  • Combine 1/3 cup flour, brown sugar, cinnamon and butter. Sprinkle over batter and top with the remaining berries. Bake in a 375F oven for 25 to 30 minutes, until done. Don't overbake.

  • Allow to cool.
  • I like to remove cake to cake plate and dust with powdered sugar.
  • UPDATE.
  • I feel awfully silly, but I have figured out why the times vary -- when using frozen blueberries -- the time is closer to an hour. Fresh berries -- 45 minutes.
  • Thank you for everyone's suggestion of using vanilla. I have added 1 tsp to the recipe with good results. Thank you again.

1 large egg
1 1/2 cups fresh blueberries
1/3 cup all-purpose flour
1/2 cup brown sugar (firmly packed)
1/2 teaspoon ground cinnamon
1/4 cup butter

Steps:

  • Preheat oven to 375 degrees.
  • Grease a 9-inch square pan; set aside.
  • In a medium mixing bowl, blend together 1 1/2 cups flour, sugar, baking powder, salt, oil, milk, egg and 1 cup blueberries.
  • Beat thoroughly for 30 seconds and spread into prepared pan.
  • Combine 1/3 cup flour, brown sugar, cinnamon and butter until crumbly.
  • Sprinkle mixture evenly over batter and top with the remaining berries.
  • Bake for 25 to 30 minutes or until tested done when wooden pick inserted in center comes out clean.
  • Do not overbake.
  • Cool slightly.
