SHIITAKE MUSHROOMS AND CHARD PASTA

Here is one of my favorite pasta recipes. I got the idea from a Better Homes and Gardens magazine and changed it to my liking. Hope you will likke it, too.

Number Of Ingredients 12

1 tablespoon(s) virgin olive oil
1 - medium onion, finely chopped
2 - cloves garlic, minced
1 pound(s) shiitake mushrooms, cleaned and sliced
1/2 pound(s) crimini mushrooms or other sliced mushrooms for variety (or use all shiitake)
1 large can whole tomatoes, roughly chopped, with juice
1 - bunch swiss chard, tough stems removed, roughly chopped
1-2 sprig(s) fresh oregano or 1/2 tsp dried
1/4-1/2 teaspoon(s) dried chili flakes
8 - ounces shredded gruyere cheese
2 ounce(s) shredded parmesan cheese for garnish
1 pound(s) pasta of your choice

Steps:

  • In a medium sized skillet, heat olive oil until shimmering. Add onion and cook at medium-low heat until translucent, about 5 or 6 minutes. Add garlic and cook until golden brown, about 1 minute. Add mushrooms and increase heat slightly. Cook until the mushrooms have thrown off their moisture and started to brown.
  • Add tomatoes, chili flakes and oregano and cook until heated through. Add Swiss chard and cook until wilted, just a couple of minutes. Stir in gruyere cheese. Meanwhile, cook whatever pasta shape you desire, until al dente. Drain pasta and top with sauce and sprinkle with Parmesan cheese.

Made this up when I had Swiss chard and did not know what to do with it. Added whatever I had in the fridge. Added some white wine and voila. Yummy. You can also use other veggies or seasoning you have on hand.

3 tablespoons olive oil
1 cup sliced fresh mushrooms
½ onion, finely chopped
3 cloves garlic, minced
1 bunch Swiss chard, chopped
½ roasted red pepper, chopped
1 teaspoon dried oregano
1 teaspoon dried basil
salt and ground black pepper to taste
½ cup white wine

Steps:

  • Heat olive oil in a large skillet over medium heat. Add mushrooms, onion, and garlic; cook and stir until onion is translucent and mushrooms soften, about 5 minutes. Stir in Swiss chard, red pepper, oregano, basil, salt, and black pepper. Cook until Swiss chard is wilted, about 3 minutes. Stir in white wine; cook until Swiss chard is tender, 3 to 4 minutes more.

8 ounces fusilli
1 tablespoon olive oil
4 shallots, peeled and quartered lengthwise
1 bunch swiss chard, trimmed, stems cut into 1/2-inch thick slices, leaves (inner stems removed)
10 ounces shiitake mushrooms (or other variety)
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
2 tablespoons fresh parsley
1/3 cup parmesan cheese, shaved

Steps:

  • Cook fusilli per package directions.
  • Meanwhile, in large nonstick skillet, heat oil over medium heat, add shallots, and cook, tossing or stirring, until tender and golden brown, about 5 minutes.
  • Add chard stems and cook, stirring often, until softened, about 4 to 5 minutes.
  • Add mushrooms and season with salt and pepper. Cook 2 to 3 minutes.
  • Stir in parsley and chard leaves and cook 1 minute longer or until liquid has mostly evaporated and leaves are wilted.
  • Drain pasta, reserving 1/3 cup of cooking water. Return pasta and the reserved water to pot. Add chard and mushroom mix and cheese. Combine well and serve immediately.

HERBED PASTA WITH SHIITAKE MUSHROOMS



Herbed Pasta With Shiitake Mushrooms image

A light pasta dish that is quick and very easy. If you are a vegetarian, the mushrooms are a great substitution for meat in a pasta dish.

1 lb spaghetti noodles
1/4 cup olive oil
2 tablespoons butter
1/2 teaspoon red pepper flakes
2 -3 garlic cloves, diced
1/2 medium onion, chopped
1 1/2 teaspoons chopped basil (I use freeze-dried)
1/2 teaspoon italian seasoning
1/2 cup milk
1/2 cup dry white wine
6 -9 dried shiitake mushrooms
1 cup parmigiano-reggiano cheese

Steps:

  • Soak dried shiitake mushrooms in warm water for 20-30 minute to rehydrate. Squeeze out any excess water.
  • Cook pasta according to package directions and set aside.
  • In large pan heat olive oil over medium-high heat. Add onion, mushrooms and garlic.
  • Reduce heat to medium and add butter, red pepper, Italian Seasoning, garlic, and basil. Cook about 1-2 minute to mix flavors.
  • Add wine. Cook another 2-3 minutes to allow flavors to blend.
  • Add milk and let simmer until liquid is almost evaporated.
  • Mix pasta into "sauce" and add a bit more milk or butter if needed to evenly coat.
  • Sprinkle with Parmigiano-Reggiano and serve.

  • Preheat the oven to 350° and butter a shallow 9-by-13-inch ceramic baking dish. In a large skillet, heat the oil until shimmering. Add the mushrooms and cook over high heat, turning once, until golden and crisp, about 5 minutes. Season with salt and transfer the mushrooms to a paper towel-lined plate.
  • In a small bowl, toss the panko with 1/4 cup of the cheese. In a large bowl, whisk the eggs with the cayenne, 2 teaspoons of salt and 1/2 cup of the cheese. Stir in the Swiss chard and mushrooms. Scrape the mixture into the prepared dish and bake for about 20 minutes, until the eggs are just set around the edges. Sprinkle the panko on top and bake for about 10 minutes longer, until the casserole is set and the topping is lightly browned. Let stand for 10 minutes before serving.

  • Heat a large pot over medium heat and add 4 tablespoons of the butter. Whisk constantly until it begins to bubble and cook for about 5 minutes – just until brown bits appear on the bottom of the skillet. The minute the brown bits appear, turn off the heat and pour the brown butter into a bowl. Set it aside.
  • Add the remaining butter to the skillet over medium-low heat. Stir in the mushrooms and garlic, cooking until the mushrooms soften, about 6 to 8 minutes. Add in the pasta, swiss chard, stock, salt and pepper. Bring the mixture to a boil and then cook for 8 to 10 minutes, stirring, so the pasta cooks. Once the noodles have absorbed all of the water, remove the pot from the heat. Stir in the reserved brown butter. Stir in the parmesan cheese and serve, adding more on top if desired.
