EASY SHERRY MUSHROOMS
I love this recipe because it is so simple and easy to make. Changing the herbs or leaving them out makes this dish completely different each time.

Steps:
- Over medium heat, melt the butter in an iron skillet.
- Add mushrooms and stir so they are coated with the melted butter.
- Sprinkle on the salt and pepper to taste.
- When the mushrooms look only slightly soft, add the sherry and optional marjoram or other herb.
- Stir occasionally until the sherry and liquid given off from the mushrooms has mostly evaporated.
- A little liquid left is OK.
- Serve hot.

- Coat a large frying pan with oil. Set over medium-high heat. When hot, add steaks. For medium-rare,cook until well browned and meat gives slight resistance when pressed, 2 to 3 minutes per side.Remove to plates.
- Reduce heat to medium. Add garlic butter to pan. When melted,add mushrooms. sprinkle with salt and pepper. Stir often until edges turn brown,3 to 4 minutes. Add chicken broth and sherry. Scrape bottom of pan to stir up any brown bits. Boil,stirring occasionally to develop flavour,2minutes. Spoon over steaks. Sprinkle with green onion.

- Pre-heat oven to 400 degrees F.
- In a large heavy skillet cook onions in butter stirring occasionally, until softened.
- Stir in mushrooms, and bell peppers and cook over moderate heat, stirring occasionally, until liquid mushrooms give off is evaporated and mixture begins to brown.
- Add ham and Sherry and cook stirring occasionally, until liquid is evaporated.
- In a bowl, stir together mushroom mixture, parsley and bread crumbs.
- Season with salt and pepper, to taste and cool uncovered.
- On a lightly floured surface roll out each pastry sheet into a 14" x 10" rectangle. Halve rectangle lengthwise with a sharp knife or pizza cutter. Place two of the halves on a cookie sheet.
- Spoon half the mixture on each half sheet of pastry, spreading evenly, but leaving about 1 inch around all edges.
- Brush edges with egg wash.
- Place the other halves on top, pressing down edges and crimp all around with a fork and cut several slits in top.
- Brush with remaining egg wash.
- Place in the middle rack of oven and reduce heat to 375 degrees F, bake until golden, about 30 minutes.
- Empanadas may be made 1 day ahead, cooled completely on a rack, and chilled, wrapped in foil. Reheat uncovered, in a preheated 375 degree F oven about 6 minutes.
- Cut with serrated knife into 3/4" slices.

SHERRIED MUSHROOM SOUP

- In a saucepan melt butter with oil over moderate heat until foam subsides and sauté shallots and mushrooms over moderately high heat, stirring, until liquid mushrooms give off is evaporated and mushrooms begin to brown. Add Sherry and boil until evaporated. Stir in broth and simmer 15 minutes, or until mixture is reduced to about 2 1/2 cups. Stir in chives or scallion greens and season soup with salt and pepper.
SHERRY AND GARLIC MUSHROOMS

- Heat the oil in a large skillet over medium-high heat. Be sure the mushrooms are completely dry. Add the mushrooms and saute undisturbed (do not stir) until the liquid released by the mushrooms evaporates and they turn golden brown, about 5- 8 minutes. Stir and continue to saute until most sides are browned, about 4-5 more minutes.
- Reduce the heat to medium and add the minced garlic to the pan. Cook about 30-45 seconds.
- Add the sherry, stir and saute about a minute.
- Add the lemon zest and juice, red pepper flakes, salt, pepper and stir about 30-45 seconds. Remove the pan from the heat and top with fresh parsley. Taste and season if needed. Serve warm.

- In a 12-inch heavy skillet cook onions in butter over moderately low heat, stirring occasionally, until softened. Stir in mushrooms and bell peppers and cook over moderate heat, stirring occasionally, until liquid mushrooms give off is evaporated and mixture begins to brown. Add ham and Sherry and cook, stirring, until liquid is evaporated.
- In a bowl stir together mushroom mixture, parsley, bread crumbs, and salt and pepper to taste and cool, uncovered.
- Preheat oven to 400°F.
- On a lightly floured surface roll out 1 pastry sheet into a 14- by 10-inch rectangle. Halve rectangle lengthwise with a long sharp knife and spread about half of mushroom filling on 1 half, leaving a 1-inch border all around. Brush edges of mushroom-topped pastry with some egg wash and put remaining pastry half on top of filling. Crimp edges of dough together with fork tines and cut several slits in empanada with a small sharp knife. Carefully transfer empanada with 2 spatulas to a large baking sheet, leaving room for second empanada, and brush with some remaining egg wash. Make another empanada in same manner with remaining pastry sheet, filling, and egg wash.
- Put empanadas in middle of oven and reduce temperature to 375°F. Bake empanadas until golden, about 35 minutes. Empanadas may be made 1 day ahead, cooled completely on a rack, and chilled, wrapped in foil. Reheat empanadas, uncovered, on a baking sheet in a preheated 375°F. oven until hot, about 6 minutes. With a serrated knife cut empanadas into 3/4-inch slices.
CHICKEN WITH SHERRIED MUSHROOMS
Steps:
- Bring broth to a boil in a small saucepan. Cook for 5 minutes or until reduced to 1 cup. Set aside.
- Combine flour, salt, and pepper in plastic Ziploc bag. Add chicken and shake to coat.
- Add olive oil to large skillet and place over medium-high heat until hot. Add chicken and cook 5 minutes on each side until browned and cooked through. Remove chicken from skillet and set aside. Add butter to skillet. Place over med-high heat until melted, then add mushrooms and saute until tender. Combine 1 Tbsp. sherry and cornstarch; stir well and set aside.
- Add remaining sherry and broth to skillet. Bring to a boil and cook until sauce is reduced to 3/4 cup. Add cornstarch mixture; cook, stirring constantly, about 1 minute or until mixture is thickened. Return chicken to skillet; cover and reduce heat. Simmer 10 minutes. Transfer chicken to a serving platter and top with mushroom mixture. Sprinkle with green onion and parsley.

- For the sherried mushrooms:.
- In a large skillet, melt butter over medium-high heat and let it brown, watching carefully so it doesn't burn. As soon as the butter is brown and smells nutty, scrape in shallots, turn heat down to medium, and stir and sauté till they soften. Pour in mushrooms, add ½ teaspoon of salt, and stir shallots and mushrooms together. Cook mushrooms with shallots and browned butter until they are soft and browned, turning occasionally. This should take about 15 minutes. When the mushrooms are browned and most of their liquid has evaporated, pour in the sherry and stir in the thyme, scraping up the brown bits on the bottom of the pan. Continue to sauté the mushrooms until the liquid has reduced and thickened. Taste and add salt and fresh-ground black pepper as desired.
- For the Clafoutis:.
- Heat oven to 375. In the bowl of a mixer fitted with a whisk attachment, blend the eggs with salt until frothy. Add milk and mix well. Add the flour and mix until frothy and thoroughly incorporated, 1-2 minutes, scraping the sides of the bowl as needed. Pour the batter over the mushrooms. Sprinkle the top with the grated Gruyere. Grind a little black pepper over the top. Place the dish in the center of the oven. Bake until the center puffs and turns a golden color, and the clafoutis is set, about 30-40 minutes. (Cover with foil if the top browns too quickly.) Serve warm or at room temperature.
