I adopted this recipe from Recipezzar. It used to be called just Chicken Parmesan, but most other dishes with that name on here are tomato based and I wanted to make clear that this one isn't. I have also changed the amounts of some of the ingredients as I felt they just weren't quite balanced. This can easily be doubled .

2/3 cup parmesan cheese, freshly grated
1/4 teaspoon italian seasoning, crushed
2 chicken breast fillets, skinless
1/4 cup onion, chopped
1 tablespoon margarine
1 tablespoon all-purpose flour
1/2 cup skim milk
5 ounces frozen spinach, thawed, drained and chopped
1 tablespoon pimiento, chopped (optional)
1 garlic clove, crushed
1 teaspoon nutmeg, grated (more to taste)

Steps:

  • In a small mixing bowl combine half of the cheese and Italain seasoning.
  • Roll chicken pieces in cheese mixture to coat lightly.
  • ARRANGE pieces in an small baking dish.
  • In a small saucepan cook onion in hot margarine till tender.
  • Stir in flour; add milk all at once.
  • Cook and stir till bubbly; stir in drained spinach, garlic and pimiento olives if using, season to taste with salt, pepper and nutmeg.
  • Spoon spinach mixture over chicken; sprinkle with remaining parmesan.
  • Bake, uncovered, in a 350F oven for 30 to 40 minutes or till chicken is fully cooked.

⅓ cup grated Parmesan cheese
¼ teaspoon Italian seasoning
6 skinless, boneless chicken breasts
¼ cup chopped green onions
1 tablespoon butter
1 tablespoon all-purpose flour
½ cup skim milk
½ (10 ounce) package frozen chopped spinach, thawed and drained
1 tablespoon chopped pimento peppers

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl combine cheese and seasoning. Roll chicken pieces in cheese mixture to coat lightly. Set remaining cheese mixture aside. Arrange coated chicken pieces in an 8x8x2 inch baking dish.
  • In a small saucepan, saute green onion in butter/margarine until tender. Stir in flour, then add milk all at once. Simmer, stirring, until bubbly. Stir in drained spinach and pimiento and mix together. Spoon spinach mixture over chicken and sprinkle with remaining cheese mixture. Bake uncovered for 30 to 35 minutes or until tender and chicken juices run clear.

Creamy spinach garlic Parmesan chicken is a delicious, fast and easy dinner recipe. Perfect served over pasta or with a simple side salad.

4 chicken breasts
1 onion (finely chopped)
3-4 garlic cloves (crushed (amount depends on how strong the cloves you are using are) )
6 cups (approximately 200g/7 oz) baby spinach (washed and roughly chopped )
1 cup cream
1 tbsp sour cream
1 tsp lemon juice
salt and pepper (to taste )
½ cup Parmesan cheese (grated )

Steps:

  • Place boneless, skinless chicken breasts between two sheet of parchment paper and thin out with a meat mallet or a rolling pin. Season the chicken generously with salt and pepper.
  • Brown chicken in a large pan or skillet for 5-6 minutes per side. Remove from the pan and set aside.
  • Add the onions and garlic to the pan and cook until soft and translucent.
  • Add the spinach and cook until wilted.
  • Pour in the cream, sour cream and lemon juice. Season to taste. Allow the sauce to simmer for 5-7 minutes until thickened then add the Parmesan and chicken back to the sauce.
  • Reduce the heat and allow to simmer for 5 minutes or until the chicken is fully cooked.
  • Serve with pasta or rice.

4 skinless, boneless chicken breasts (about 6 ounces each)
Kosher salt and freshly ground pepper
1 1/4 cups all-purpose flour
2 large eggs
1/4 cup vegetable oil
4 tablespoons unsalted butter
2 1/2 cups whole milk
1/2 cup low-sodium chicken broth
1 10-ounce package frozen chopped spinach, thawed and squeezed dry
1/4 cup grated Parmesan cheese
Grated zest of 1 lemon
1/4 teaspoon freshly grated nutmeg

Steps:

  • Place a baking sheet on the middle oven rack; preheat to 200˚ F. Place each chicken breast between 2 sheets of plastic wrap and pound with a meat mallet or heavy skillet until 1/4 inch thick. Season with salt and pepper.
  • Put 1 cup flour on a plate. Beat the eggs in shallow bowl. Heat a large cast-iron skillet over medium-high heat, then add the vegetable oil. Coat 2 chicken breasts in the flour, then dip in the beaten eggs. Carefully add to the skillet and cook until golden brown and cooked through, about 3 minutes per side (reduce the heat slightly if the chicken is browning too quickly). Remove the chicken to the hot pan in the oven. Repeat with the remaining 2 chicken breasts.
  • Discard the oil and wipe out the skillet. Add the butter and melt over medium-high heat. Whisk in the remaining 1/4 cup flour; cook, whisking, until the mixture is bubbling but not browning, 1 to 2 minutes. Gradually whisk in the milk, then the chicken broth until smooth. 2 garlic cloves, minced
2 teaspoons olive oil
2 tablespoons grated Parmesan cheese, divided

1 lb penne pasta
3 cloves garlic, chopped
2 chicken breasts, cubed

28 oz crushed tomato, 1 can

½ cup heavy cream
5 oz spinach
½ cup parmesan cheese
parmesan cheese, to taste

Steps:

  • Boil water in a large pot over high heat.
  • Add 2 tablespoons of salt to water and add pasta. Cook pasta until almost al dente, or for 1-2 minutes less than the recommended cook time. Drain.
  • Heat 2 tablespoons olive oil in a large pot on medium heat. Add chicken, salt, and pepper. Brown chicken, making sure to cook through. Set chicken aside.
  • Add 2 tablespoon olive oil, garlic, and red chili flakes into the pot and stir.
  • Add crushed tomatoes, stirring for a few minutes.
  • Add cream, stirring until incorporated.
  • Add spinach and stir until the spinach cooks down and incorporates.

1 lb chicken, cubed
1/2 cup chopped onion
3 garlic cloves, minced
1/4 cup flour
1 tablespoon dried minced onion
1 teaspoon salt

1/2 teaspoon garlic powder
1/2 teaspoon dried parsley
1/2 teaspoon dried basil
1/4 teaspoon dried oregano

1 lb bow tie pasta

Steps:

  • In a large stockpot, saute bacon over medium-high heat until crisp. Remove with a slotted spoon to a medium bowl.
  • Reduce heat to medium. Add chicken to the bacon fat and cook until center is no longer pink. Remove with a slotted spoon to the same bowl as the bacon.
  • Saute onion in bacon fat for 1 minute. Add garlic and saute for an additional minute.
  • Sprinkle in the flour, dried minced onion, salt, onion powder, garlic powder, parsley, basil, oregano and pepper. Cook and stir for 1 minute.
  • Stir in chicken broth, water and milk. Increase heat to medium-high. Bring to a boil. Add pasta. Cook for 9-11 minutes or until al dente, stirring every 1-2 minutes to prevent the pasta from sticking to the bottom.
  • Remove from heat and stir in spinach, breaking it up to spread throughout the pasta and sauce. Stir in 1/2 cup Parmesan cheese until it's incorporated. Stir in the bacon and chicken.
  • Sprinkle remaining 1/4 cup Parmesan cheese on top. Serve warm.
