1 pound ground beef
3/4 cup onion
2 garlic cloves, minced
3 tablespoons canola oil, divided
1 cup chopped fresh mushrooms
1 tablespoon tomato paste
1/2 cup beef broth
2 teaspoons prepared horseradish
1 teaspoon ground mustard
1-1/2 teaspoons salt, divided
1/4 teaspoon pepper
1/2 cup diced green pepper
1/2 cup diced sweet red pepper
8 medium potatoes, peeled and cubed
1/3 cup hot whole milk
1 cup shredded cheddar cheese
2 large egg whites

Steps:

  • In a large skillet, brown beef, onion and garlic in 2 tablespoons of oil. Add the mushrooms. Cook and stir for 3 minutes; drain. Place the tomato paste in a bowl. Gradually whisk in broth until smooth. Stir in horseradish, mustard, 1 teaspoon salt and pepper. Add to meat mixture. Pour into a greased 11x7-in. baking pan; set aside. , In the same skillet, saute the peppers in remaining oil until tender, about 3 minutes. Drain and spoon over meat mixture. Cook potatoes in boiling salted water until tender; drain. Mash with milk, cheese and remaining salt. Beat egg whites until stiff peaks form; gently fold into potatoes. Spoon over pepper layer. Bake, uncovered, at 425° for 15 minutes. Reduce heat to 350°; bake 20 minutes longer or until meat layer is bubbly.

This isn't the traditional Shepherd's Pie with lamb, but a quick and easy version my family loves.

5 potatoes, peeled and quartered
1 pound lean ground beef
1 (4 ounce) can sliced mushrooms
1 (15 ounce) can mixed vegetables
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of celery soup
salt and pepper to taste
3 tablespoons butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a 9x13 baking dish with cooking spray.
  • Bring a large pot of salted water to a boil. Cook potatoes in boiling water until tender, about 15 minutes. Drain, reserving some of the cooking liquid. Mash potatoes with a little of the cooking liquid. Set aside.
  • In a large skillet, cook ground beef until brown over medium-high heat. Drain fat from pan. Stir in mushrooms, mixed vegetables, mushroom soup, celery soup, and salt and pepper; heat through. Pour into prepared baking dish, cover with mashed potatoes, and dot with butter.
  • Bake in preheated oven for 30 minutes, or until potatoes are golden and beef and vegetable mixture is hot and bubbly.

1 lb ground lamb
2 eggs
1 large onion, peeled and coarsely chopped
3 large carrots, peeled and shredded
1 (16 ounce) can crushed tomatoes
1/4 teaspoon cayenne pepper
3 tablespoons brown sugar
1 teaspoon garlic granules
salt and pepper
1 lb small shell pasta, cooked and drained

Steps:

  • Mix all the ingredients except for the cooked pasta shells together.
  • Add the pasta and thoroughly combine.
  • Bake covered in a 350°F oven for 1 1/4 hours.
  • Uncover for an additional 10 minutes to get a crunchy top.

1 pound ground beef
1 cup chopped onion
2 cups frozen corn, thawed
2 cups frozen peas, thawed
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
2 teaspoons minced garlic
1 tablespoon cornstarch
1 teaspoon beef bouillon granules
1/2 cup cold water
1/2 cup sour cream
3-1/2 cups mashed potatoes (prepared with milk and butter)
3/4 cup shredded cheddar cheese

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the corn, peas, ketchup, Worcestershire sauce and garlic. Reduce heat to medium-low; cover and cook for 5 minutes., Combine the cornstarch, bouillon and water until well blended; stir into beef mixture. Bring to a boil over medium heat; cook and stir until thickened, 2 minutes. Stir in sour cream and heat through (do not boil)., Spread mashed potatoes over the top; sprinkle with cheese. Cover and cook until potatoes are heated through and cheese is melted. Freeze option: Prepare beef mixture as directed but do not add sour cream. Freeze cooled meat mixture in a freezer container. To use, partially thaw in refrigerator overnight. Heat through in a large skillet, stirring occasionally and adding a little water if necessary. Stir in sour cream and proceed as directed.

These pocket-sized pasties make an old favourite portable

1 onion , chopped
1 tbsp olive oil
250g extra-lean lamb mince
200ml hot lamb or chicken stock
1 tbsp sundried tomato purée
1 tbsp Worcestershire sauce
100g frozen peas
500g pack puff pastry
400g cold mashed potato
1 egg , beaten

Steps:

  • Cook onion in the oil for 5 mins, then brown the lamb for 2-3 mins. Stir in the stock, purée and Worcestershire sauce, bring to the boil, then simmer for 15 mins until the liquid has evaporated. Remove from the heat. Add the peas and season.
  • Heat oven to 220C/200C fan/gas 7. Quarter the pastry, then roll each piece into an 18cm square. Divide the mash between the squares and top with the mince mixture. Dampen the edges of the pastry, pull the 4 corners up so they meet in the centre, then press the edges firmly together to seal. Will freeze for up to 2 months. Defrost before baking.
  • Transfer to a baking sheet, brush with egg and bake for 20 mins until golden.

1/2 teaspoon salt
1/4 teaspoon Italian seasoning
1/2 cup 2% milk

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the marinara sauce, salt and pepper; cook and stir for 8-10 minutes or until thickened. Spoon into four 8-oz. ramekins or custard cups; set aside., In a small bowl, combine the flour, cheese, baking powder, salt and Italian seasoning. Stir in milk and butter just until moistened. Spoon dough over meat mixture; place ramekins on a baking sheet., Bake at 450° for 12-15 minutes or until golden brown. Freeze option: Cover and freeze unbaked pies. To use, remove from freezer 30 minutes before baking (do not thaw). Preheat oven to 400°. Place pies on a baking sheet; cover edges loosely with foil. Bake as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.
