3/4 pound small potatoes, (cut into 1-inch pieces)
2 small zucchini, (cut into half-moons)
1 bell pepper, (cut into 1-inch pieces)
1 yellow or red onion, (cut into 1-inch pieces)
1/2 cup cherry tomatoes, (halved)
1/3 cup extra virgin olive oil
2 tablespoons red wine vinegar
2 tablespoons low sodium soy sauce
3 cloves garlic, (minced)
1 tablespoon Italian seasoning
1/2 tablespoon dijon mustard
salt and fresh ground pepper, (to taste)

Steps:

  • In a large mixing bowl, combine chicken, potatoes, zucchini, peppers and onions. Set aside.
  • In a small mixing bowl, combine Marinade ingredients; whisk until thoroughly incorporated.
  • Remove 1 tablespoon of marinade and set aside.
  • Add remaining marinade to the bowl with the chicken mixture; stir to combine. Cover and refrigerate for 30 minutes, or up to 4 hours
  • Preheat oven to 425˚F. Line a large jelly roll pan with parchment paper or aluminum foil; set aside.
  • Place cherry tomatoes in a separate bowl; toss with reserved marinade, and refrigerate until ready to use.
  • Remove chicken mixture from fridge and transfer to prepared jelly roll pan. Arrange ingredients in a single layer.
  • Bake for 25 minutes.
  • Add cherry tomatoes to the pan.
  • Continue to bake for 5 to 8 more minutes, or until internal temperature of the chicken registers at 165˚F.
  • Remove from oven, let stand for 5 minutes and serve!

1 (1 ounce) package ranch dressing mix
2 large skinless, boneless chicken breasts, halved lengthwise

Steps:

  • Combine mayonnaise and ranch dressing mix in a gallon-sized resealable plastic bag to make the marinade. Place chicken in the bag, squish around to cover, and refrigerate while preparing the other ingredients.
  • Preheat oven to 400 degrees F (200 degrees C). Grease a large rimmed baking sheet the size of your oven with olive oil.
  • Place red potatoes and baby carrots along the outer edges of the baking sheet, leaving room in the middle for the chicken. Season with salt and pepper.
  • Pour breadcrumbs into a bowl or onto a plate. Remove chicken from marinade and drain off excess marinade. Coat chicken in the breadcrumbs and place on the baking sheet with some room in between the pieces.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Turn on the oven's broiler and broil for an additional 3 to 5 minutes.

2 lemons, zested and halved

1 1/4 pounds russet potatoes, scrubbed and cut lengthwise into 1-inch wedges

Steps:

  • Position 2 oven racks on the highest and lowest settings and place a heavy-duty rimmed half-sheet pan on the bottom rack. Preheat the oven to 450 degrees F.
  • Place the chicken thighs in a large bowl and toss with 2 tablespoons of the oregano, the zest of 1 lemon, 2 tablespoons oil, 1/2 teaspoon salt and some black pepper. Place the chicken skin-side up in the center of the heated baking sheet and return to the oven while you prepare the vegetables.
  • In a second bowl, toss the potatoes and carrots with 2 tablespoons of the oil, the lemon halves, the remaining lemon zest the remaining 2 tablespoons oregano,1 teaspoon salt and some pepper. Spread the vegetables and lemons (cut-side up) around the chicken on the sheet pan and roast on the bottom oven rack for 10 minutes. Move the sheet pan to the top rack and roast until the vegetables are tender and the chicken skin is crispy and the meat registers 165 degrees F on an instant-read thermometer, about 20 minutes more. Remove the chicken and vegetables to a serving platter and keep warm. Remove the lemon halves to a cutting board to cool for a minute.
  • Set the sheet pan on the stovetop over medium-high heat and bring the pan juices to a boil. Squeeze in the lemon juice, reduce the heat to a simmer and whisk in the remaining 1 tablespoon oil. Scrape up the crusty bits from the bottom of the sheet pan with a wooden spoon to incorporate into the sauce and season with salt and pepper to taste. Pour the juices over the vegetables, garnish with oregano sprigs and serve.

  • Toss the turnip and carrots with the remaining melted butter in another bowl; season with salt and pepper. Spread out the vegetables and chicken, skin-side up, on the hot baking sheet. Roast until the chicken is cooked through and the vegetables are tender, about 25 minutes.

4 cloves garlic, minced
2 tablespoons grated fresh ginger
1 tablespoon chili powder
1 tablespoon garam masala
2 teaspoons ground cumin
2 teaspoons paprika
1 teaspoon ground turmeric
1 cup plain whole-milk yogurt
2 tablespoons fresh lime juice
1 jalapeño pepper, seeded and finely chopped
Kosher salt
Freshly ground black pepper
2 pounds bone-in, skin-on chicken parts (a mix of breasts, split and cut in half, thighs, and legs)
3/4 pound Yukon Gold potatoes, cut into 1-inch pieces
4 cups 1-inch cauliflower florets
4 cups 1-inch broccoli florets
8 small cremini mushrooms, stems trimmed
1/2 teaspoon fenugreek seeds or cumin seeds
1/2 cup red onion, halved lengthwise, then sliced into thin half-moons
Mango Chutney (homemade or your favorite store-bought chutney)

Steps:

  • In a small skillet over medium heat, heat 2 tablespoons of the canola oil. Add the garlic and ginger and cook, stirring continuously, until light brown and fragrant, about 1 minute. Add the chili powder, garam masala, 1 teaspoon of the cumin, the paprika, and turmeric and cook, stirring continuously, for an additional minute. Set aside to cool.
  • In a large bowl, combine the yogurt, lime juice, jalapeño pepper, 2 teaspoons salt, 1/8 teaspoon black pepper, and the spice mixture and stir to combine.
  • Using a sharp knife, score the skin of each piece of chicken, making two or three shallow cuts about 1 inch apart. Add the chicken and potatoes to the bowl with the spiced yogurt and massage the yogurt into the chicken until all the pieces are well coated. Transfer the chicken, potatoes, and spiced yogurt to a large zip-top freezer bag and set aside for 30 minutes at room temperature or refrigerate for up to 8 hours.
  • Set a rack in the upper-third of the oven and preheat the oven to 425°F.
  • Place the cauliflower, broccoli, and mushrooms in a large bowl. Add the remaining 3 tablespoons canola oil, remaining 1 teaspoon cumin, the fenugreek seeds, 1/2 teaspoon salt, and 1/8 teaspoon black pepper and mix well.
  • Remove the marinated chicken from the bag, letting any excess marinade drip off, and arrange the pieces skin-side up on a rimmed baking sheet. Scatter the potatoes in and around the chicken. Roast for 20 minutes, then remove the pan from the oven and place the vegetables in a single layer in any spaces around the chicken. Return the pan to the oven and roast for an additional 20 minutes. Remove from the oven and switch the oven to broil.
  • Sprinkle the red onion over the chicken and vegetables, return the baking sheet to the oven, and broil until the chicken is lightly charred and crispy, 2 to 3 minutes. Remove from the oven and serve with mango chutney, if desired.

1 red bell pepper

1/2 cup Homemade Teriyaki Sauce, recipe follows, or store-bought teriyaki sauce
Sesame seeds, for serving

1/3 cup low-sodium soy sauce
1/4 cup pineapple juice
1/4 cup packed light brown sugar
2 teaspoons minced garlic
1 teaspoon minced peeled ginger
1 1/2 teaspoons cornstarch

Steps:

  • Preheat the oven to 400 degrees F. Line a large rimmed baking sheet with foil and grease with nonstick cooking spray.
  • Cut the chicken and bell pepper into 1-inch strips. Thinly slice the carrots lengthwise, then cut into 1-inch batons. Cut the broccoli into small florets.
  • Transfer the chicken strips to a medium bowl, add the teriyaki sauce and a pinch each of salt and pepper and toss to combine.
  • Combine the peppers, carrots, broccoli and sugar snap peas in a large bowl. Add the olive oil and a pinch each of salt and pepper and toss well to combine. Arrange the chicken and vegetables on the prepared baking sheet, spreading them into an even layer with as little overlap as possible.
  • Bake until the chicken is cooked through and the vegetables are tender, 20 to 25 minutes.

  • Whisk together the soy sauce, pineapple juice, brown sugar, garlic, ginger and 1/4 cup water in a medium saucepan. Cook over medium heat, whisking constantly, until the sugar has completely dissolved.
  • Whisk together the cornstarch with 1 tablespoon water in a small bowl to make a slurry. Whisk the slurry into the sauce and simmer until it has thickened to the consistency of syrup, about 5 minutes.
  • Remove from the heat, pour into a small heatproof bowl and let cool. Use right away or refrigerate for up to 3 days.

Steps:

  • Heat the oven to 425 degrees. Combine the gochujang, soy sauce, ginger and 3 tablespoons oil in a medium bowl or resealable bag.
