TURKEY MEATBALLS
Baked healthy Turkey Meatballs are a crowd pleasing appetizer and main dish favorite. Swap out fatty ground beef and try this healthy ground turkey recipe made without breadcrumbs.

Steps:
- Preheat oven to 375 degrees F and line 2 large baking sheets with unbleached parchment paper and spray with cooking spray. Or I love using silicone baking mats, no oil necessary. In a large bowl, add ground turkey, zucchini, eggs, garlic, onion flakes, oregano, salt and pepper; mix well with your hands.
- Using small cookie scoop form 47 meatballs (it helps to dip hands in a bowl with cold water occasionally) and lay on baking sheets.
- Bake for 15 minutes, turn and toss with spatula (mostly to get rid off of that ground turkey residue) and bake for 5 more minutes. Serve hot.
- Serve hot as an appetizer or main dish.

- Heat the oil in a large non-stick frying pan with a lid, then tip in the onion, carrots, celery, garlic and fennel, and stir well. Cover the pan and cook over a medium heat for 8 mins, stirring every now and then. Pour in the passata and stock, cover and leave to simmer for 20 mins.
- Meanwhile, tip the mince into a large bowl. Add the oats, fennel seeds and leaves, the garlic and plenty of black pepper, and mix in with your hands. Lightly shape into 25 meatballs about the size of a walnut. Spray or rub a non-stick pan with a little oil and gently cook the meatballs until they take on a little colour. Give the sauce a stir, then add the meatballs and parsley. Cover and cook for 10 mins until they are cooked through and the veg in the sauce is tender. Serve with broccoli and baby potatoes in their skins, or pasta and salad.

SIMPLE LOW-FAT TURKEY MEATBALLS
An adaptation from my boyfriend's Greek grandmother's recipe. So simple, even I (a non-cooker) can make them and they still taste great!

- Beat egg in large bowl.
- Add all remaining ingredients.
- Mush together well using your hands.
- Form into 1/2 inch balls.
- Heat small amount of olive oil (about 1 tsp to keep this recipe low-fat) in skillet.
- Put half the balls into the skillet and cook until browned evenly on outside.
- Remove and add remaining balls.
ITALIAN TURKEY MEATBALLS
We love these juicy, Italian ground turkey meatballs in homemade tomato sauce. Serve them over your favorite pasta, pizza or sandwich!

- In a medium size pot, heat olive oil over medium heat. Add garlic and saute until golden, being careful not to burn. Add crushed tomatoes, onion, salt, pepper, oregano, basil and bay leaf. Stir and reduce heat to low. Cover and let simmer on low 5-10 minutes.
- Meanwhile, in a large bowl, combine ground turkey, breadcrumbs, egg, parsley, garlic and cheese. Using wet hands, mix all the ingredients well until everything is combined. Form small meatballs, about the size of a ping ping ball (1/8th cup each).
- If you wish, you can brown the meatballs in a skillet, or brown them in the broiler on a sheet pan until the tops are golden, 7 to 8 minutes. OR you can gently plop them right into the sauce.
- Add the meatballs to the sauce and cook about 20 minutes. Discard the bay leaf and onion and serve over pasta or whole wheat Italian bread.

- Set oven to 350 degrees.
- Grease a 13 x 9-inch baking dish.
- In a bowl mix together turkey, egg, milk, garlic, cracker crumbs, mozza cheese, onion, ginger powder, 1-2 tablespoons Dijon mustard (if using) seasoning salt and black pepper.
- Shape into about 30 meatballs (1-inch each).
- Place onto prepared baking dish.
- Bake uncovered for 20-25 minutes, or until juices run clear.
- In a saucepan combine pineapple juice, garlic, green pepper, honey, onion powder and cornstarch; mix to combine and bring to a boil, whisking/stirring constantly.
- Cook and stir for 2 minutes; reduce heat. Add/whisk in 3 tablespoons mustard until smooth.
- Remove the cooked turkey meatballs from the oven and brush with about 1/2 cup sauce (or more) and return the meatballs to the oven, and cook for another 10 minutes.
- Serve the remaining sauce on the side.

Steps:
- Pre heat oven to 180c and lightly spray an oven tray with olive oil.
- In a large mixing bowl add all the ingredients together, season with salt and pepper and mix until bound all together.
- Roll the turkey mix into small balls and place on the oiled tray you should get 24 meatballs all up.
- Bake for 20 to 25 minutes until starting to colour.
- Add meatballs to your favourite pasta or on rice. They are nice with a tomato based sauce or a creamy garlic sauce like alfredo.
- TIP - You can use any type of bread crumbs like gluten free, panko or just plan. Also you could use a plain sundried tomato pesto instead of the olive and mixed pepper.
