1 package (14 ounces) thick-sliced bacon strips, chopped
1 large red onion, chopped
2 packages (16 ounces each) frozen cut green beans
1 can (28 ounces) petite diced tomatoes, undrained
1/4 cup packed brown sugar
1 tablespoon seasoned pepper
1/2 teaspoon seasoned salt
1 can (16 ounces) red beans, rinsed and drained

Steps:

  • In a large skillet, cook bacon over medium heat until partially cooked but not crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons. Add onion to drippings; cook and stir over medium-high heat until tender., In a 4- or 5-qt. slow cooker, combine green beans, tomatoes, brown sugar, pepper, salt, bacon and onion. Cook, covered, on low 4 hours. Stir in red beans. Cook until heated through, about 30 minutes longer.

2 slices thick-cut bacon (diced)
1/2 yellow onion (cut into thin slices)
1 (12 ounce) package fresh green beans (trimmed and cut in half)
1 (28 ounce) can whole fire-roasted tomatoes (drained)
3 1/2 cups unsalted chicken broth
1 1/4 teaspoon Kosher salt
3/4 teaspoon garlic powder
1/2 teaspoon black pepper
1/4 teaspoon soy sauce
Pinch red pepper flakes

Steps:

  • Add the bacon to a large saucepan or Dutch oven over medium-high heat. Sauté for about 3 minutes, then add the onion and continue to sauté. Stir often, for another 3-4 minutes or until the onion is translucent.
  • Add the prepared green beans, along with the fire-roasted tomatoes. Use the back of a wooden spoon and crush/break apart the tomatoes.
  • Stir in remaining ingredients and allow to come to a boil. Cover and reduce the heat to maintain a slow simmer. Simmer for 50 minutes, lifting the lid to stir occasionally. Serve and enjoy.

1 large onion, chopped
1 lb. fresh green beans, trimmed, cut into 1-1/2-inch pieces
1/2 cup chicken broth
1/4 tsp. pepper
4 medium plum tomatoes, chopped

Steps:

  • Cook bacon in large skillet on medium heat until crisp, stirring occasionally. Transfer bacon with slotted spoon to paper towels to drain, reserving drippings in skillet.
  • Add onions to drippings in skillet; cook and stir 6 min. or until lightly browned. Add beans, broth and pepper; mix well. Bring to boil. Reduce heat to medium-low; cover. Simmer 40 min. or until beans are tender.
  • Stir in tomatoes; increase heat to medium-high. Cook 3 min. or until tomatoes are heated through. Transfer to serving dish. Sprinkle with bacon. Serve warm.

1 lb green beans, cut into 2 inch pieces
4 slices bacon, chopped (uncooked, reserve 1 Tbsp. of fat after cooking)
1/2 cup chopped onion
1 medium tomatoes, seeded and chopped (roma is great)
1 garlic clove, minced
1/2 teaspoon dried oregano (or 1 teaspoon fresh oregano, chopped)
1/4 teaspoon salt
2 tablespoons lemon juice (or omit juice and pepper and use 1/4-1/2 tsp. lemon- pepper) or 2 tablespoons lime juice (or omit juice and pepper and use 1/4-1/2 tsp. lemon- pepper)

Steps:

  • In a 2 quart saucepan, add green beans in enough water just to cover them, and bring to a boil, reduce heat and simmer, uncovered about 15 minutes or until crisp tender.
  • Drain and immediately rinse with cool water to stop cooking. Drain and set aside.
  • In a large skillet, cook bacon over medium-high heat until crisp. Stirring frequently.
  • Reserve 1 tablespoons of bacon fat and drain off the rest and place bacon on plate covered with paper towels.
  • In the same skillet add onion and 1 tablespoons bacon fat and cook over medium heat, stirring occasionally, until tender.
  • Stir in tomato, garlic, oregano, salt and pepper into onions and simmer about 5 minutes.
  • Stir in green beans and heat through.
  • Add bacon and stir to blend.
  • Transfer mixture to serving dish and drizzle with lemon or lime juice.

1 mounded tablespoon tomato paste
Three 14.5-ounce cans whole tomatoes

Steps:

  • Add the bacon and onion to a large skillet over medium heat. Cook, stirring, until the bacon is beginning to crisp and the onions are golden, 5 to 7 minutes.
  • Increase the heat to medium high and add the green beans and tomato paste. Stir and allow to cook for a minute or two. Add the tomatoes, crushing them with your hands as you add them. Stir to combine. Season with salt, pepper and cayenne. Bring the mixture to a simmer and simmer until thickened and the beans are soft but still green, 5 to 7 minutes.

1/4 cup olive oil
1 teaspoon salt

Steps:

  • Preheat the oven to 425 degrees F.
  • Put the beans on 1 or 2 baking sheets. Sprinkle over the bacon and onions, and add the olive oil, salt and pepper. Toss around to mix and coat everything in oil.
  • Bake until the bacon is sizzling and the beans are starting to brown, 18 to 20 minutes.

4 slices thick cut bacon (about 4 ounces), cut into 1-inch segments
1/2 large onion, diced (about 3/4 cup)
1 clove garlic, minced
1 pound fresh, firm green beans (they should break when you bend them, not bend like a rubber band), stem ends trimmed
1 14.5-ounce can whole tomatoes
1 large sprig fresh thyme
kosher salt
Freshly ground black pepper
1/8 to 1/4 teaspoon cayenne

Steps:

  • Cook the bacon until fat begins to render: Place the bacon pieces on the bottom of a large, thick-bottomed pot. Heat on medium heat for several minutes until the bacon fat begins to render.
  • Add the onions, then garlic: Add the chopped onions to the bacon. Cook a few minutes until the onions are translucent. Add the garlic (if using) and cook a minute more. Drain off any excess fat.
  • Add the green beans, tomatoes, and spices: Add the green beans to the pot. Add the whole, peeled, canned tomatoes and their juices. Add a sprig of thyme to the pot (if using). Sprinkle with salt, pepper, and cayenne.
  • Cover and simmer: Cover the pot and lower the heat to low. Simmer for 45 minutes to 1 hour, until the beans are cooked through and tender, stirring occasionally. Slow Cooker Instructions If you want to use a slow cooker for step 4, you can easily do so. Just put the cooked bacon and onions from steps 1 and 2, and the beans, tomatoes and spices into a slow cooker and cook on high for 2 to 3 hours, depending on your slow cooker, until the beans are completely tender and the tomatoes have broken down. Serve!

2 1/2 pounds green beans, trimmed
Kosher salt
1/2 pound bacon, roughly chopped
1 small yellow onion, finely chopped
3 cloves garlic, minced
1 teaspoon red pepper flakes
1/2 cup chopped toasted pecans
Juice of 1/2 lemon
Freshly ground pepper

Steps:

  • Toss the green beans into a large pot of boiling salted water and cook until bright green in color and crisp-tender, about 5 minutes. Drain the beans and shock in a large bowl of ice water to stop the cooking. Drain the beans again and pat dry.
  • Cook the bacon in a large, heavy saute pan until crisp, about 5 minutes. Remove the bacon to a paper towel-lined plate to drain. Spoon off the excess bacon grease, leaving 2 tablespoons in the pan. Add the onion to the pan and saute until soft and very tender, 4 to 5 minutes. Sprinkle in the garlic and red pepper flakes and saute until just fragrant, about 1 more minute. Add the reserved green beans and the pecans and cook until heated through, 5 to 6 minutes more. A different twist to the usual green bean casserole. Given to me years ago by my ex-mother-in-law, this is a tasty, fresh, sweet and tangy new way to serve green beans and it's sure to become a family favorite! Prepare the night before and marinate overnight for the best results. Enjoy!

12 slices bacon, cut in half
2 pounds fresh green beans, trimmed and snapped
1 ½ medium onions, chopped
6 tablespoons apple cider vinegar
6 tablespoons white sugar
½ cup blanched slivered almonds

Steps:

  • In a large deep skillet, cook bacon over medium-high heat until evenly browned. Remove bacon to paper towels, and reserve drippings in the skillet.
  • Place fresh green beans in a large saucepan, and add enough water to cover the bottom by 1 inch. Cover, and bring to a boil over medium-high heat. Cook for 8 to 10 minutes, until bright green and tender. Drain.
  • Place the green beans into a 2 quart casserole dish. Spread the onions in a layer over the green beans. Place bacon strips in a layer over the onions. Sprinkle almonds over the top. Heat the reserved drippings in the skillet over medium heat. Stir in vinegar and sugar, heating just until sugar is dissolved; drizzle over everything in the dish. Cover, and chill for at least one hour, but overnight is best.
  • Preheat the oven to 350 degrees F (175 degrees C). Bake uncovered, for 45 minutes, until the onions are tender, and the almonds are toasted. Check after 30 minutes, and cover if necessary.

3 (15 ounce) cans French style green beans, well drained
4 slices bacon
2 (14 ounce) cans stewed tomatoes
1 onion, chopped
1/8 teaspoon salt
1 dash fresh ground pepper

Steps:

  • Cut bacon into small pieces. Sauté bacon in skillet until crisp; remove bacon and place on paper towels. Leave 1 T. bacon fat in sauté pan.
  • Chop onion and sauté over low heat in reserved 1 T. bacon fat. Salt the onion (brings out the moisture) and cook about 5-8 minutes until onion is soft and translucent.

  • Fry bacon and set aside, reserving 1 tablespoon of grease.
  • Place green beans, stewed tomatoes, onion, sugar, pepper and salt in a medium saucepan. Add reserved bacon grease.
