Steps:
- Preheat oven to 350 degrees; line two baking sheets with parchment paper. In a medium bowl, mix butter, sugar, flour, vanilla extract, and salt until smooth; mix in rolled oats.
- Drop firmly packed teaspoons of dough, 2 inches apart, onto baking sheets. Bake until golden,rotating sheets halfway through, 12 to 15 minutes. Cool on sheet 1 minute; with a very thin metal spatula, transfer to paper towels to cool completely.

- In a large bowl, cream shortening and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the oats, flour, baking soda, salt nutmeg and cinnamon and mix well; gradually add to creamed mixture. , Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Flatten with a fork. Bake at 350° for 10-12 minutes or until lightly browned. Remove to wire racks to cool.

Made some changes from the original. added splenda instead of sugar. I also added optional orange butter frosting! This is from the Amish! Crispie, crunchy and nutty!

- 1. Preheat oven to 375 F. Grease 2 baking sheets
- 2. In large bowl, cream butter and add sugar or splenda gradually, then the molasses and beat until mixture is light and fluffy. Beat in eggs, one at a time. Shut off the mixer and add the baking powder and soda, salt, cinnamon, and vanilla to the batter. Turn the beater back on and blend.
- 3. Add the flour and blend. Last add the oats and nuts and blend. Drop by spoonfuls onto baking sheet.
- 4. Bake for 5-9 min. or until cookies are medium brown and a bit crinkly looking. Allow the cookies to cool on cookie sheet 3-5 min. Move to wire rack until fully cool.
- 5. These cookies Freeze very well. I chose to add Orange Butter Frosting. 1 1/2 c. powered sugar 1/3-1/4 c. softened butter or margarine 1-2 tbls. orange juice 1-1 1/2 tsps. orange zest (depending how orangey you like it!)

- In a large bowl, dissolve yeast in water; let stand for 5 minutes. Add the milk, 1/2 cup sugar, oil, salt, eggs, extract and 2 cups flour; beat well. Stir in enough remaining flour to make a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Spread with 2 tablespoons butter and sprinkle with 1/3 cup of the remaining sugar. Fold dough in half lengthwise; roll out to 1/4-in. thickness. Spread with 2 tablespoons butter and sprinkle with 1/3 cup sugar. , Fold in half widthwise; roll to 1/4-in. thickness. Spread with remaining butter and sprinkle with 1/3 cup sugar. Fold in half lengthwise; roll out to an 18x10-in. rectangle. Combine the cinnamon and remaining sugar; sprinkle half over the dough to within 1/4 in. of all edges. , Roll up jelly-roll style, starting with a short side; pinch seam to seal. Cut into 1/2-in. slices and place on greased baking sheets (four to six slices per sheet). Cover with waxed paper and flatten with palm of hand. Sprinkle with remaining cinnamon-sugar. Let stand for 30 minutes. , Bake at 400° for 12-15 minutes or until golden brown. Immediately remove from pans to wire racks to cool.

CINNAMON CRISP COOKIES
Light, thin, crisp cookies, with oatmeal, pecan & cinnamon. Not at all like your average oatmeal cookie. This is Mom's recipe. They are fragile & don't keep more than a week, so I halved the recipe, making some of the measurements a little odd/picky. I like to press them with a glass, you want to get them thin, they do not spread/thin-out very much in baking. Mike's favorite cookie.
