Mustard Herb Roasted Lamb Breast Recipe - (3.7/5) image

Provided by orchidgal

Number Of Ingredients 12

Zest of 1 lemon
5 garlic cloves, minced
1 1/2 Tbs. Herbes de Provence
1 1/2 tsp. kosher salt, plus more, to taste
1/2 tsp. freshly ground pepper, plus more, to taste
3 Tbs. Dijon mustard
3 Tbs. extra-virgin olive oil
1 shallot, peeled and quartered
4 lb. lamb breast
1/4 cup white wine
1/2 cup turkey stock
2 Tbs. unsalted butter, at room temperature

Steps:

  • Mix together the lemon zest, garlic, Herbes de Provence, salt, black pepper, Dijon mustard, and two tablespoons olive oil. Quarter the shallot and toss in a bit of the mustard sauce and some extra olive oil. Cut the meat into portion sizes. You will need to cut between the rib bones. Place the meat on a rack in a baking dish order to keep the meat up off the bottom of the pan. Add the quartered shallot to the pan. Bake in a 325 degree oven for 2 -1/2 to 3 hours, or until fork-tender. Place the meat on a platter, covered with foil and a towel and let it rest for 20 minutes while working on the sauce. Heat the turkey stock, white wine and the drippings (not fat) from the lamb over medium-high heat for a few minutes before adding 2 tablespoons butter. Pour over the meat and serve.

MUSTARD-CRUSTED BREAST OF LAMB

Mustard-crusted breast of lamb image

Breast of lamb is a forgotten cut, which means it's great value, as well as deliciously tender when slow-cooked

Provided by Barney Desmazery

Categories     Dinner, Main course

Time 3h20m

Number Of Ingredients 12

1 tbsp vegetable oil
2 carrots , chopped
2 onions , chopped
1 garlic bulb, halved
small bunch thyme
2 bay leaves
2 breasts of lamb , skin removed
1 bottle cheap white wine
4 tbsp English mustard
100g white breadcrumbs
1 tbsp olive oil
boiled new potatoes and watercress salad, to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4. Heat the oil in a roasting tin and brown the carrot, onions and garlic on the hob for about 5 mins. Add the thyme and bay leaves, then lay the lamb on top. Pour over the whole bottle of wine and about 350ml water, season well and cover tightly with a sheet of foil. Cook the lamb, undisturbed, for 2½ hrs, then remove from the oven. Leave the lamb to cool slightly before gently pulling out the bones. Pour the juices and veg into a container and chill. Can be prepared up to 2 days in advance and chilled.
  • Increase oven to 200C/180C fan/gas 6. Lay the lamb, skin-side up, in a shallow roasting tin and generously brush with mustard. Pack over the breadcrumbs and drizzle with the olive oil. Bake for 30 mins until the crumbs are toasted and crisp.
  • Meanwhile, lift the solid fat off the cold sauce and reheat the sauce on the hob. Lift the lamb onto a board and cut into pieces. Serve with the veg in their sauce, boiled potatoes and a watercress salad.

CROWN ROAST OF LAMB

Crown Roast of Lamb image

Provided by Alton Brown

Categories     main-dish

Time 1h15m

Yield 6 to 8 servings, 2 chops per person

Number Of Ingredients 10

2 racks lamb, 6 to 8 ribs each, approximately 1 1/2 to 2-pounds each
1 tablespoon olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
6 cloves garlic, minced
4 teaspoons fresh thyme, chopped
1 1/2 teaspoons ground coriander
1 to 1 1/2 tablespoons sherry vinegar
1/2 to 1 teaspoon Dijon mustard
1/2 to 1 teaspoon chopped fresh rosemary leaves

Steps:

  • Preheat the oven to 375 degrees F.;
  • To french the racks of lamb:
  • Make a cut on the fat side of the ribs, perpendicular to them, about 2 1/2-inches down from the rib ends. Cut through the fat down to the rib bones. Turn the rack on end, with the bones facing up and push a knife through the flesh between each rib, using the initial cut as a guide for the knife. Cut down the side of each rib to remove the excess fat in between each rib. Using strong kitchen twine, wrap the twine around each rib at the base, nearest the meat and pull to remove all of the remaining fat and sinew from the rib bone. Bend each rack into a semicircle (meat side in and fat side out) and using kitchen twine tie them together at the base and center, in order to hold the racks together. The rib ends should be pushed outward to create the look of a crown. Rub the lamb with the olive oil. Combine the salt, pepper, garlic, thyme and coriander and press all over the lamb. Place the roast in a Bundt pan with the center of the pan coming up through the middle of the roast. Place on the middle rack of the oven and cook for 30 to 35 minutes, until the meat reaches an internal temperature of 130 degrees F. This is approximately 8 to 12 minutes per pound. Remove from the oven, transfer the roast to a rack, cover with aluminum foil and let the meat rest for 20 minutes. While the meat is resting add the sherry vinegar, mustard and rosemary to the juices that accumulated in the Bundt pan while cooking. Stir to combine. Taste and adjust seasoning, as needed. Cut the string away from the roast and place cooked stuffing, rice or barley in the center if desired. Serve the warm sauce with the roast.;

Herb-Roasted Lamb image

Celebrate with Ina Garten's easy Herb-Roasted Lamb recipe from Barefoot Contessa on Food Network. Fresh rosemary gives it flavor, while potatoes make it a meal.

Provided by Ina Garten

Categories     main-dish

Time 2h20m

Yield 10 servings

Number Of Ingredients 8

12 large unpeeled garlic cloves, divided
1 tablespoon chopped fresh rosemary leaves
Kosher salt
Freshly ground black pepper
2 tablespoons unsalted butter, melted
1 (6-pound) boneless leg of lamb, trimmed and tied
4 to 5 pounds small unpeeled potatoes (16 to 20 potatoes)
2 tablespoons good olive oil

Steps:

  • Preheat the oven to 450 degrees F. Place the oven rack in the lower third of the oven so the lamb will sit in the middle of the oven.
  • Peel 6 of the cloves of garlic and place them in the bowl of a food processor fitted with the steel blade. Add the rosemary, 1 tablespoon salt, 1 teaspoon pepper, and butter. Process until the garlic and rosemary are finely minced. Thoroughly coat the top and sides of the lamb with the rosemary mixture. Allow to sit at room temperature for 30 minutes to 1 hour.
  • Toss the potatoes and remaining unpeeled garlic in a bowl with the olive oil and sprinkle with salt. Place in the bottom of a large roasting pan. Place the lamb on top of the potatoes. Roast for 20 minutes. Turn the heat down to 350 degrees F and roast for another 1 to 1 1/4 hours, until a meat thermometer registers 130 to 135 degrees F for medium-rare. Place the lamb on a cutting board, cover with aluminum foil, and allow to rest for 15 minutes. Slice and serve with the potatoes.

ROSEMARY-MUSTARD ROAST LEG OF LAMB

Rosemary-Mustard Roast Leg of Lamb image

Before coming to Zaar I seldom cooked lamb. Now I fix it often. This recipe was in one of those supermarket booklets. I made a couple of changes and we loved the results. The cooking time includes the time needed to allow the roast to marinade in the refrigerator.

Provided by PaulaG

Categories     Lamb/Sheep

Time 8h20m

Yield 10 serving(s)

Number Of Ingredients 6

3 tablespoons whole grain Dijon mustard
2 garlic cloves, sliced
1 1/2 teaspoons dried rosemary, crushed
1/2 teaspoon fresh ground black pepper
1 (4 lb) leg of lamb, well trimmed, boned
mint jelly

Steps:

  • Rinse the lamb under running water, blot dry.
  • With the tip of a sharp knife, make several pockets at random intervals in the meat.
  • Put a sliver of garlic in each, roll the meat into a roll and tie with cooking twine.
  • Mix the mustard, rosemary and black pepper together.
  • Rub over the outside of the rolled meat, wrap meat in foil and place in refrigerator for 4 to 6 hours.
  • Preheat oven to 400 degrees, place the roast on meat rack in shallow roasting pan and insert meat thermometer into thickest part of roast.
  • Add approximately 1 cup of warm water to bottom of roasting pan, the roast should rest on rack above the water.
  • Place roast in preheated oven and cook for 15 minutes.
  • Lower the temperature to 325 degrees and continue roasting for 20 minutes per pound for medium or until meat thermometer registers 145 degrees. If you like your lamb well done, you will need to adjust the cooking time to suit your taste.
  • Remove the roast from the oven and cover with foil allowing to rest for 10 to 15 minutes before carving.
  • While meat is resting, warm about 1/2 cup of mint jelly.
  • Slice into 10 equal portions and serve with warmed jelly.

MUSTARD AND HERB CRUSTED LAMB RACK

Mustard and Herb Crusted Lamb Rack image

Make and share this Mustard and Herb Crusted Lamb Rack recipe from Food.com.

Provided by The Flying Chef

Categories     Lamb/Sheep

Time 1h

Yield 4 serving(s)

Number Of Ingredients 15

4 racks of lamb (4 cutlets each)
4 teaspoons Dijon mustard
2 tablespoons parsley, chopped fine
1 tablespoon mint, chopped fine
1 tablespoon sage, chopped fine
1 tablespoon thyme
1 1/2 teaspoons rosemary, chopped fine
1 1/2 teaspoons tarragon, chopped fine
1/4 cup breadcrumbs
1/3 cup panko breadcrumbs, flakes (Japanese breadcrumbs)
6 -7 good sized parsnips
20 g butter
1/4 cup cream
3 teaspoons mild Dijon mustard
milk (for cooking)

Steps:

  • For the racks.
  • Trim any excess fat off of the Lamb and set to one side.
  • Combine all the chopped herbs in a bowl with both of the bread crumbs, Take each lamb rack and spread about 1 teaspoon of mustard on each. This may be a little more or less depending on how big the individual racks are. You want enough to completely coat. Then press the herb mixture onto mustard, again coat completely.
  • Pre-heat oven to 200c. Place lamb in baking dish on a wire rack drizzle a little olive oil over racks and cook for 25-30mins. Remove lamb from oven and allow to rest for 5 minutes.
  • The lamb will be pink inside if you prefer your lamb a little more well done just cook for longer.I like my lamb meat pink, so if the crust is not golden or crisp enough, I just turn on the grill to brown the crust off rather than cook for longer and end up with over cooked meat.
  • For the Parsnip mash.
  • Peel and chop parsnips into small chunks. I tend to take a little of the core off as this is a little more bitter than the rest of the veg but it is not necessary. Put chopped parsnip in pan and cover with milk cook simmering until tender then drain.
  • Blend or process parsnip adding butter, mustard and cream until smooth. I have listed 1/4 cup of cream this can vary depending on size of parsnip used, so add more or less as needed. Also depending on what brand of mustard you use will depened on the quantaty you use. I buy a really good brand from france and it has a good flavour without being overpoweriing. Some dijons can be quite strong so if the brand you buy is strong I would recommend using less as this will overpower the yummy natural flavour of the parsnip.
  • To serve place mound of mash in the middle of the plate place rack on top and drizzle red wine gravy around the plate.
