MINI BUFFALO CHICKEN BISQUICK® PIZZAS
It only takes 30 minutes to make our Mini Buffalo Chicken Bisquick Pizzas. Top the buffalo chicken with crumbled blue cheese and Monterey Jack cheese and bake until melted.

Steps:
- Heat oven to 350°F. Spray cookie sheet with cooking spray.
- In medium bowl, stir together Bisquick® mix, hot water and oil until a dough forms. Turn dough out onto work surface (dough may be crumbly). Knead dough until it comes together.
- Cut dough into 4 equal portions. Press each portion into 6-inch round; place on cookie sheet.
- Bake 10 minutes. Remove crusts from oven; cool slightly.
- In small bowl, stir together chicken, buffalo sauce and melted butter. Top each baked crust with Monterey Jack cheese and chicken mixture; sprinkle with blue cheese.
- Return to oven; bake 5 to 7 minutes longer or until cheese is melted. Before serving, garnish pizzas with green onions.

- Preheat the oven to 350 degrees F.
- Press out the pizza dough to a 1/2-inch thickness and punch out rounds using a 3-inch biscuit cutter. Transfer to two baking sheets and brush the crusts with 2 tablespoons of the olive oil. Sprinkle with 1 cup of the mozzarella and 1 cup of the cheddar. Top with the bell pepper, red onion, garlic, chicken and bacon. Sprinkle the remaining 1 cup mozzarella and 1 cup cheddar over the pizzas and drizzle with the remaining 2 tablespoons olive oil. Bake until the crusts are lightly browned, about 25 minutes.
MINI BUFFALO CHICKEN EGG ROLLS
Long ago, in my more oblivious days, I ordered 'boneless Buffalo wings,' only to be disappointed they weren't wings. It's a bit ironic that all these years later, I'm using chicken breast to create a Buffalo wing alternative, but at least I'm not trying to trick anybody. Less messy than bone-in Buffalo wings and more eventful than the 'boneless' kind, these Buffalo chicken egg rolls are a party snack breakthrough. Serve alongside more hot sauce and celery.

- Dice chicken into small cubes. Transfer to a mixing bowl. Add celery, blue cheese, cream cheese, and hot sauce. Season with salt, black pepper, and cayenne pepper. Mix with a spoon until filling is well combined.
- Beat egg and water together. Brush egg wash over the edges of 1 wonton wrapper. Place a heaping tablespoon of filling near one edge. Spread out with your fingers, leaving a 1/2-inch border. Roll edge up over filling. Crimp in both edges and roll over once more. Fold in about 1/4 inch of dough on either side to seal the ends. Apply more egg wash on top and continue rolling. Place on a plastic-lined baking pan. Repeat with remaining wonton wrappers and filling.
- Fill a skillet with enough oil to reach halfway up the egg rolls. Heat to 350 degrees F (175 degrees C) in a skillet over medium heat. Add a batch of egg rolls; fry until browned and crispy, about 2 minutes per side. Drain on a paper towel-lined plate. Fry remaining egg rolls.

- Preheat oven to 425 degrees F (220 degrees C).
- In a medium bowl combine the cubed chicken, melted butter and hot sauce. Mix well. Spread whole bottle of salad dressing over crust, then top with chicken mixture and sprinkle with shredded cheese.

- Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray.
- In small bowl, mix melted butter, hot sauce, seasoned salt and pepper to make Buffalo sauce.
- In medium bowl, mix shredded chicken, Cheddar cheese and ranch dressing. Pour about half to three-fourths of the Buffalo sauce (reserving remaining for serving) into chicken mixture. Mix until combined.
- In medium bowl, stir together Batter ingredients with whisk or fork until blended. Spoon 1 tablespoon batter into each muffin cup. Top with about 1/4 cup chicken mixture. Spoon 1 tablespoon batter over chicken mixture in each muffin cup.
- Bake about 30 minutes or until toothpick inserted in center comes out clean and tops are golden brown. Cool 5 minutes. With knife, loosen sides of pies from pan and remove. Place top sides up on cooling rack. Cool 5 minutes longer, then transfer pies to serving tray.
- Top each with blue cheese, chopped green onion, chopped cilantro and a drizzle of reserved Buffalo sauce. Serve warm.

- Preheat oven to 400°F.
- Mix together Bisquick mix, egg whites, water, and half of the garlic salt. Spread the batter into a well-sprayed 8"x8" pan or casserole dish.
- Put chicken, hot sauce, green onions, and rest of garlic salt in a bowl. Mix to combine well.
- Spoon chicken & sauce mixture over the batter in pan, then sprinkle with blue cheese.

Steps:
- Heat oven to 425°F.
- Lightly coat cookie sheet with olive oil.
- Unroll dough onto clean, dry surface.
- Using a biscuit cutter, cut 8-10 mini pizza doughs. (Number will depend on size of biscuit cutter.).
- Place circles on oiled cookie sheet.
- Melt butter in large skillet over medium-high heat. Add chicken, onion and hot pepper sauce. Cook 4 to 6 minutes or until chicken is no longer pink in center, stirring occasionally.
- Remove from heat. Stir in tomatoes.
- With slotted spoon, spoon mixture over dough circles to within 1/4 inch of edges.
- Sprinkle with cheese.
- Bake at 425°F for 12 to 15 minutes or until crust is deep golden brown.
