BUN KABAB (PAKISTANI)
Bun Kabab (Pakistani street style) is famous all around the world. It's a homemade Aloo Anday bun kabab recipe that will give you the same taste as you eat on the street food of Karachi. Watch the video recipe to get quick directions.

- Preparation of Potato Stuffing:
- In a pan, add oil and heat it up.
- Add cumin seed in medium heated oil and also add salt, red chili powder, and turmeric powder and mix well.
- Now add chopped onion and green chilies and saute for few seconds on medium heat.
- Add boiled potatoes. Mash it before adding in the pan.
- At the same time, add boiled and mashed chickpeas in the pan.
- Mix all the ingredients to blend all the ingredients.
- Now garnish with fresh coriander and,
- Squeeze lemon juice to make the stuffing tastier.
- Preparation of Green Chutney: (Watch Video)
- In a blending jar, add fresh coriander, mint, green chilies, garlic, cumin seeds, salt, red chili powder, chaat masala, sugar, black salt, lemon juice, and water.
- Blend all the ingredients to make a smooth paste.
- Serve with chaat or t time snacks.
- Assembling:
- Cut the bun into 2 parts. As described in the video. (01:21)
- In a skillet, add oil and toast all the bun from both sides.
- Now place a rich amount of green chutney on one side of the bun.
- In the same way, add potato stuffing over the chutney.
- Place fresh onion rings over potato.
- Now cover with another bun.
- In a bowl, beat the egg with salt and pour it over bun kabab and slide it with a spoon.
- Toast bun kabab properly from all sides to cook the egg and place the remaining egg in between potato stuffing.
- Now bun kabab is ready to serve.

Steps:
- Heat a stockpot over medium heat; add ground beef. Stir in garlic paste, ginger paste, coriander, cumin, turmeric, garam masala, 1/2 teaspoon ground red chile, and salt to taste. Add water and dal; simmer until meat is fully cooked and all water has evaporated, 30 to 35 minutes.
- Blend beef and dal mixture together using an immersion blender in the stockpot. Add 1/2 cup cilantro; blend to combine. Roll spoonfuls of beef and dal mixture into into walnut-sized balls; shape into smooth flat patties.
- Whisk eggs, 1 tablespoon cilantro, 1/2 teaspoon ground red chile, and salt to taste together in a bowl. Place bread crumbs on a plate. Dip each patty into egg mixture, then roll in bread crumbs.
- Heat oil in a skillet over medium heat. Fry patties in a single layer until golden brown and crisp, 2 to 4 minutes per side.

STREET-STYLE BUN KABAB
A shallow-fried potato and lentil patty is placed between a sweet bun. The patty is then smothered with a mint and tamarind chutney and topped with a piece of omelette.

Steps:
- Soak the lentils for 3-4 hours prior to cooking.
- Add all the 'lentil mixture' ingredients into a pot except potatoes and cook on medium-low till the lentil is 80% soft. Then add the potatoes and simmer till both lentils and potatoes are fully cooked. Dry any remaining water. Mash the mixture with the back of a spoon or grind it.
- In a bowl add all the patty ingredients except egg and oil. Add the lentil & potato mixture to it. Mix well.
- Form into small patties. Whisk an egg till frothy and dip the patties into it. Shallow-fry till golden-brown on both sides.
- Take out out on a paper towel. The recipe will make 8-10 lentil patties.
- Mix your green chutney and tamarind pulp together and keep aside. See note.
- Whisk the eggs and add around 1/2 tsp of salt and 1/2 tsp of red chili powder. In a pan add 1 tbsp of oil and cook the egg like you cook an omelette. Take out and half each omelette so you have 4 pieces.
- Toast your sweet buns.
- For assembly: On the bottom bun add your lentil patty, pour some chutney, put some red onion slices & coriander leaves, place the omelette and close it with the top bun.
- Serve with some extra chutney and enjoy!
SHAMI KABAB RECIPE

Steps:
- Roast whole spices on medium heat for 1-2 minutes until fragrant. Then grind roasted spice finely in a coffee grinder. Shami Kebab masala or spice mix is ready.
- In a pot take all ingredients of cooking meat. Cook for 45 minutes until meat is tender and yellow split pea is soft and mushy.
- Burn all the excess water with constant stirring. This step is important.
- Let the kebab mixture cool. Then in a chopper make a smooth mixture of yellow split pea and meat.
- In a large dish take kebab mixture, mint fresh coriander, boiled egg, 1 beaten egg, chopped onion, chat masala and, salt. Mix well.
- Grease your hands with oil and roll out kebab from the mixture.
- Beat eggs with salt and red chilli powder.
- Dip each kebab in egg and then in bread crumbs. (If using bread crumbs.)
- Shallow fry each kebab in oil until golden brown and serve hot.
