Filipino-style coconut chicken curry is hearty, tasty, and sure to be a family favorite Easy to make with only a handful of ingredients, cooks in one pan, and is ready in an hour. Perfect for busy weeknights!

Number Of Ingredients 14

1/4 cup canola oil
2 medium potatoes, peeled and quartered
2 large carrots, peeled and cubed
1/2 green bell pepper, cored, seeded and cut into cubes
1/2 red bell pepper, cored, seeded and cut into cubes
1 onion, peeled and cubed
3 cloves garlic, peeled and minced
1 thumb-size ginger, peeled and julienned
1 (3 pounds) bone-in chicken, cut into serving pieces
1 tablespoon fish sauce
1 cup coconut milk
1 cup water
2 tablespoons curry powder
salt and pepper to taste

Steps:

  • In a wide pan over medium heat, heat oil. Add potatoes and cook for about 2 to 3 minutes or until lightly browned and tender. Remove from pan and drain on paper towels.
  • Add carrots and cook for about 1 to 2 minutes. Remove from pan and drain on paper towels.
  • Remove excess oil from pan except for about 1 tablespoon. Add bell peppers and cook for about 30 to 40 seconds. Remove from pan and set aside.
  • Add onions, garlic, and ginger and cook until softened.
  • Add chicken and cook, stirring occasionally until lightly browned.
  • Add fish sauce and continue to cook for about 1 minute.
  • Add coconut milk and water. Bring to a simmer, skimming any scum that may float on top.
  • Lower heat, cover, and simmer for about 20 to 30 minutes or until chicken is cooked.
  • Add potatoes and carrots and cook for about 3 to 5 minutes or until tender.
  • Add curry powder and stir to combine. Continue to cook for about 2 to 3 minutes or until sauce starts to thicken.
  • Season with salt and pepper to taste.
  • Add bell peppers and cook for about 1 minute or until tender yet crisp. Serve hot.

Chicken Afritada with pineapples is the perfect weeknight dinner! It's easy to make and so tasty. Perfect with steamed rice!

1/4 cup canola oil
2 potatoes, peeled and quartered
1 large carrot, peeled and cut into 1-inch chunks
1/2 red bell pepper, cored and sliced into 1/2-inch thick strips
1/2 green bell pepper, cored and sliced into 1/2-inch thick strips
1 small onion, peeled and sliced thinly
3 cloves garlic, peeled and minced
4 pounds chicken, cut into serving pieces
1 tablespoon fish sauce
8 ounces tomato sauce
1 cup pineapple juice (from canned pineapples)
salt and pepper to taste
1/2 cup frozen green peas, thawed
1 can (8 ounces) pineapple chunks, drained and juice reserved

Steps:

  • In a wide pan over medium heat, heat oil.
  • Add potatoes and carrots and cook, turning once or twice, until lightly browned. Remove from pan drain on paper towels.
  • Remove excess oil except for about 1 tablespoon. Add bell peppers and cook for about 30 to 40 seconds. Remove from pan and drain on paper towels.
  • Add onions and garlic and cook until softened.
  • Add chicken and cook, turning as needed, until lightly browned.
  • Add fish sauce and cook for about 1 to 2 minutes, stirring as needed.
  • Add tomato sauce and reserved juice from canned pineapples (about 1 cup). Bring to a boil.
  • Lower heat, cover, and simmer for about 20 to 30 minutes or until chicken is cooked through.
  • Season with salt and pepper to taste.
  • Add potatoes, and carrots, and continue to cook until vegetables are tender and sauce is thickened.
  • Add green peas, pineapple chunks, and bell peppers and cook for another 1 to 2 minutes or until heated through.

1 1/2 lbs chicken (1 1/2-inch cubes)
2 medium potatoes (sliced 1-inch cube)
2 medium carrots (sliced 1-inch cube)
1 teaspoon garlic (minced)
1 small onion (sliced)
1/4 kg beans
1 teaspoon salt
3 medium tomatoes (sliced)
125 g green peas
135 g tomato ketchup

Steps:

  • In a wok,heat a 2 tbsp of cooking oil.saute the garlic until a bit brown,then follow the onion.
  • wait about 10 seconds and pour in chickens,stir until golden brown.follow with potatoes and carrots;stir for about 20 seconds and then put in beans and tomatoes.
  • pour some water(enough for you to make its sauce) let it boil,and lastly pour in tomato ketchup.when the sauce become thick,turn off the heat.serve.
