CRUNCHY FRIED SHRIMP
The panko bread crumbs give these fried shrimp just the right amount of crunch.

- Beat eggs in a medium bowl until frothy. Mix flour, salt and pepper in another medium bowl. Dredge shrimp in flour, shake off excess. Dip shrimp into eggs, then press shrimp into Panko; turn shrimp over and press into Panko again to coat both sides.
- Pour enough oil into heavy large pot to reach depth of 2 inches; heat to 350 degrees F. Working in batches, add shrimp to hot oil; deep-fry until cooked through, about 1 minute. Using tongs transfer shrimp to paper towels to drain. Arrange shrimp on platter. If desired, serve with Kikkoman Tonkatsu Sauce for dipping.

EASY GARLIC FRIED SHRIMP
Steps:
- Stir together soy sauce, water, and sugar in a small bowl.
- Heat oil in a large skillet over medium heat and cook garlic until lightly browned. Add shrimp in one layer and pour soy sauce mixture on top. Cook until shrimp are pink, 2 to 3 minutes per side.

EASY CORNMEAL FRIED SHRIMP
Steps:
- Gather the ingredients.
- Peel the shrimp, leaving the tails on, and put them in a colander. Rinse the shrimp under cold running water, then pat dry with paper towels.
- Put about 3 inches of vegetable oil in a deep, heavy saucepan or deep fryer. Heat the oil to 360 F.
- To keep the fried shrimp warm as you fry subsequent batches, heat the oven to 200 F. Place a rack in a baking sheet and set aside. Have paper towels ready for draining the shrimp.
- In a medium bowl, whisk the milk with the egg until well blended.
- Put the shrimp in the milk and egg mixture and let stand for 3 to 4 minutes.
- Combine the flour, cornmeal, and baking powder in another bowl; blend well. Stir in salt and a dash of freshly ground black pepper.
- Dip the shrimp into the flour and cornmeal mixture to coat thoroughly. Shake off excess.
- Place coated shrimp in the hot oil and cook in small batches until golden brown, about 2 to 3 minutes.
- Drain on paper towels and then move to the rack on the baking sheet. Place the pan in the oven to keep them warm while you fry the remaining shrimp.
- Sprinkle the fried shrimp with salt and freshly ground black pepper, to taste.
- Serve and enjoy.

- Peel, devein and wash shrimp.
- In a medium bowl beat eggs with a fork until well blended.
- Put shrimp in eggs and mix so all shrimp is coated with eggs.
- Put saltine crackers in plastic bag and crush with rolling pin.
- Don't roll them too fine.
- Heat oil in pan.
- Add shrimp to the cracker crumbs, a few at a time and coat well.
- Drop into hot oil and fry until golden brown.
- Remove and drain on paper towels.
- Do not over cook as this toughens the shrimp.
- The amount of crackers and eggs you use depends on the amount of shrimp you want to fry.
- The more shrimp, the more crackers and eggs.
- Preparation time also depends on the amount of shrimp you are frying.
FRIED SHRIMP

- Combine the cornstarch and flour in one bowl, then beat the eggs and 1/2 cup water in a second bowl. In a third bowl, combine the panko and seasoned breadcrumbs. Bread the shrimp by dipping them first in the flour mix, then the egg wash, then the breadcrumbs.
- Heat about 1/2 inch of oil in a nonstick skillet over medium heat to 350 degrees F.
- Fry the shrimp in batches until golden and crispy, approximately 2 minutes per side. Drain on a paper towel-lined plate and season with salt and pepper. Serve with Cocktail Sauce.
- Stir together the ketchup and horseradish in a bowl. Chill until ready to serve.
EASY FRIED SHRIMP AND TARTAR SAUCE

- Pour the oil into a heavy-bottomed pot fitted with a deep-frying thermometer. Heat over medium-high heat to 375 degrees F. Line a baking sheet with paper towels and top with a cooling rack.
- In a medium mixing bowl, whisk together the rice flour and beer until a smooth batter is formed. Season with 1/2 teaspoon salt and pepper.
- Lightly salt the shrimp. Holding the tails, dip the shrimp into the batter to evenly coat on both sides.
- One by one, gently drop the battered shrimp into the hot oil. Fry, flipping once if necessary, until golden brown on both sides, 1 to 2 minutes. While frying the shrimp, be sure to monitor the temperature of the oil and maintain it at 375 degrees F. Transfer the fried shrimp to the cooling rack and sprinkle generously with salt.
- Serve the fried shrimp with Tartar Sauce for dipping.
- Mix the mayonnaise, dill, cornichons, vinegar, capers, mustard and some salt and pepper in a small bowl. Refrigerate until serving.
