CRANBERRY SAUCE WITH GIN & ROSEMARY
Make this extra special version of cranberry sauce by adding gin and rosemary. It's the perfect sauce for your Christmas dinner table

Steps:
- Tip the cranberries, sugar and rosemary into a pan with about 100ml water. Cook over a low heat for about 15 mins, stirring occasionally, until all the cranberries have burst and the sauce has thickened to a syrupy consistency. Fresh cranberries thicken the sauce more readily than frozen, so it may take a little longer, but be careful not to let the sauce become a jam.
- Scoop out the rosemary and stir through the gin. Cook for 1 min more, then leave to cool. Will keep, covered, in the fridge for three days.

CRANBERRY AND ROASTED-SHALLOT SAUCE

Steps:
- Preheat oven to 400 degrees F.
- Toss shallots with oil and minced fresh thyme on small rimmed baking sheet. Sprinkle with salt and pepper. Bake until golden, about 25 minutes. Drizzle one tablespoon vinegar over shallots, toss to coat. Continue roasting until shallots caramelize, stirring occasionally, about 10 minutes. Remove from oven.
- Bring red wine, port, brown sugar, remaining four tablespoons vinegar and granulated sugar to boil in heavy large saucepan over medium-high heat, stirring until sugar dissolves. Add cranberries; cook until berries pop, stirring occasionally, about eight minutes. Mix in parsley and shallots. Transfer to bowl. Cover and chill overnight. Serve cold or at room temperature.
GIN AND CRANBERRY SAUCED
Steps:
- Grab some leftover cranberry sauce and--avoiding the whole berries--add 2 tablespoons to a shaker with the gin, lime juice and bitters. Add ice, shake very vigorously at least 30 to 45 seconds and strain through a mesh strainer into a chilled coupe glass. Smack a sprig of rosemary between palms to release aroma/holiday aggression and float delicately atop the cocktail. Toast to well-purposed leftovers.
SLOE GIN CRANBERRY SAUCE

Steps:
- Put all the ingredients in a saucepan. Bring up to a simmer and cook for 5 mins, then take off the heat and leave to cool. Can be chilled for up to four days or frozen for two months. Serve at room temperature.

RED DEVIL CRANBERRIES
Steps:
- In a large saucepan, add the oil and saute the shallot and serrano pepper over medium-high heat for 3 to 4 minutes.
- Add in the blood orange juice, agave syrup, cranberries, chipotle, adobo, cinnamon, and salt. Reduce the heat and simmer until mixture is thick, 20 to 25 minutes, stirring occasionally.
- Set aside to thicken, thanks to the pectin in the cranberries.
- Guy's Tip: If available, try to purchase 1 fresh blood orange and add this to the cranberries. Segment, add the orange flesh to the pot, and squeeze in any remaining juices from the blood orange membrane.
- Cook's Note: To segment an orange, remove the top and bottom from the orange over a small bowl (to catch the juices). Peel the orange with a small sharp knife, carefully removing all of the pith. Carefully slice between the segments, down each side, and allow to fall into the bowl as you proceed.
CRANBERRY SHALLOT CHUTNEY
Great as a condiment for turkey, pork loin or duck. Great as a change from cranberry sauce at Thanksgiving. Cooking time includes 10 minute water bath. Great for gifts.

Steps:
- Place all the ingredients except the nuts in a large saucepan.
- Bring to a gentle boil and cook uncovered, stirring occasionally, until thickened, about 20 minutes.
- Stir in the nuts.
- Ladle into hot sterilized jars. Seal with new canning lids and metal rings.
- Process for 10 minutes using boiling water bath method.
- Remove jars from water and wait for the "ping" to make sure they are sealed.
- Can also be stored in airtight container in refrigerator instead, and used within 2 weeks.

MARTINI SAUCE
Steps:
- Place the shallots, gin, vermouth, juniper berries, and green peppercorns in a small saucepan and bring to a boil. Lower the heat and simmer until reduced to about 3 tablespoons liquid. Add the cream and reduce to 1/4 cup.
- Strain and return the liquid to the saucepan (discard the solids). Whisk in the butter. Add the olives and season to taste with lemon juice, salt, and a little pepper. Cover and keep warm while you prepare the salmon.
SHALLOT-GIN CRANBERRY SAUCE
Steps:
- 1. The DAY BEFORE, generously salt the shallots and reserve them in the fridge. 2. Reduce the cranberry juice by half, then add the sugar and fresh cranberries. Cook on low until the cranberries are tender. Drain the cranberries and reserve the liquid. In a blender, puree about half the cranberries with a few tablespoons of the reduced juice to get a smooth puree, and reserve the puree along with the soft cranberries, in the fridge. 3. The following day, drain the shallots and combine them with the cranberry puree, the soft whole cranberries, orange zest, and gin and tarragon, if using.
