SEVEN LAYER CASSEROLE
Tasty and filling, this is a wonderful 'got everything in the house' recipe!! This recipe is very versatile. I have substituted many different ingredients like yams, corn and even cheese soup. It all comes out yummy!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a lightly greased 9x13 inch baking dish layer the rice, potatoes, onion, carrots, peas, tomato soup with water, and sausage. Salt and pepper to taste.
- Bake covered at 350 degrees F (175 degrees C) for 45 minutes, or until fork tender. Remove cover for last 5 minutes of baking.

Steps:
- brown ground beef and drain grease,.
- spread on bottom of casserole dish.
- layer the 3 sliced potatoes on top of ground.
- beef.
- layer the carrots,then the bell peppers,.
- next the sliced onions,then the tomatoes.
- put the 2 cups of cooked rice over the top.
- cover with foil, that has been sprayed w/vegetable spray.
- bake at 350ºfor 1 hour -- i love this.

7 LAYER SUPPER CASSEROLE
More comfort food from Grandma. This one is super easy. Just layer the items in a casserole dish or pan, pop in oven and its ready in an hour. You can make ahead and freeze these or stor in frig for up to 24 hours before baking.

- Place all in a large casserole dish, in layers, in order given. Form raw beef into a patty to fit the bottom of casserole dish. Sprinkle with salt and pepper to taste.
- Slice potatoes thinly on top of meat. Add salt and pepper to potato layer, if desired. Next add thinly sliced onions. Pour frozen peas on top of onions. Next add sliced carrots. Slice bell pepper on top of carrots.
- Last layer makes the sauce. Mix canned soup with water. Pour over casserole. Cover casserole and bake for 1 hour at 350 degrees.

- Heat oven to 375°F. Spray rectangular baking dish 13x9x2-inches, with cooking spray. Cook and drain pasta as directed on package.
- While pasta is cooking, cook sausage in 10-inch skillet over medium heat 5 to 7 minutes, stirring occasionally, until no longer pink; drain. Mix tomatoes, garlic and basil.
- Layer half each of the pasta, sausage, mushrooms, bell peppers, Parmesan cheese, tomato mixture and mozzarella cheese; repeat layers.
- Bake uncovered 35 to 40 minutes or until hot and cheese is golden brown.

- Preheat oven to 350 degrees F (175 degrees C).
- Layer potatoes, carrots and onions in a large buttered casserole dish. Sprinkle the uncooked rice over the vegetables. Then add the peas (with liquid) and arrange the pork sausage on top of that. Dilute tomato soup with a can of water and pour over the sausage. Season with salt and pepper.
- Bake covered in a preheated oven for 1 hour, then uncovered for an additional hour.
