This is an easy yummy recipe I got out of a Better Homes and Gardens Kid's Cookbook when I was little. The combo of chocolate and cherries is a winner! A great recipe for kids to help with. *Time doesn't include chilling time*

26 chocolate wafers
1/4 cup butter or 1/4 cup margarine, melted
8 ounces sour cream
1 1/2 ounces instant chocolate pudding mix (the 4 servings size)
1 1/4 cups milk
21 ounces cherry pie filling

Steps:

  • Crush up the chocolate wafers a few at a time in a big zip lock bag. **(all areas may not have chocolate wafers, it is a cookie like Oreos but without the cream, not a sandwich cookie)**.
  • Put the crushed wafers cookies into an 8x8x2 inch pan, reserving 2 tablespoons of the crumbs for later.
  • Pour the melted butter over the cookie crumbs in the pan and stir together with a fork.
  • With your hands spread the mixture evenly over the inside bottom of the pan, and press firmly to form a crust.
  • Refrigerate the crust for 30 minutes or until firm.
  • Put the sour cream, milk, and the dry pudding mix into a big bowl, and with an electric mixer beat on low for about a minute, until smooth (then be sure to scrape down the sides of the bowl and mix again for about 30 seconds).
  • Spread the pudding mixture evenly over the wafer crust.
  • Carefully spoon the cherry pie filling evenly over the pudding mixture, and then sprinkle the reserved 2 tablespoons cookie crumbs on top.
  • Cover with clear plastic wrap and refrigerate for 3 hours or more until cold.
  • Cut up and enjoy!

I am a big fan of never wasting things, so of course when I have old bread around I don't wanna waste it. So I'm always playing around with different bread pudding recipes. You can't go wrong with chocolate and cherries.

1 cup heavy cream
1 cup milk
48 jarred wild cherries, such as Amarena Fabbri, plus 1/2 cup liquid from the jar
1/2 cup maple syrup
Pinch fine salt
5 large eggs
1 cup dark chocolate (63 percent)
1 baguette, medium diced
1 cup cold heavy cream
2 tablespoons brandy
2 tablespoons granulated sugar

Steps:

  • For the pudding: Preheat the oven to 350 degrees F.
  • In a medium pot add the cream, milk, liquid from the cherries, maple syrup and salt and bring to a boil.
  • In a separate bowl crack and whisk the eggs. In a larger bowl add the dark chocolate.
  • Pour the warm liquid into the dark chocolate and whisk until the chocolate has melted. Slowly whisk in the eggs. Mix in the diced baguette and let it sit for 30 minutes.
  • Place a cherry into each of eight 4-ounce ramekins, then fill the ramekins with the bread pudding mixture.
  • Place ramekins on a baking sheet and bake for 30 minutes.
  • For the brandy whipped cream: Whip the cream, brandy and granulated sugar until it holds stiff peaks. Serve the puddings topped with the cream.

  • Finely chop 1/2 pound dark chocolate. Combine three-quarters of the chocolate and 1 teaspoon coconut oil in a microwave-safe bowl and microwave in 30-second intervals, stirring, until the chocolate is melted; stir in the remaining chocolate until smooth. Dip 1 pound fresh cherries in the chocolate by the stems and set on parchment paper. Let harden at room temperature.

Pinch salt
4 large egg yolks
1/4 cup sugar
1 teaspoon pure vanilla extract
1 dozen old-fashioned plain donuts, cut into 1-inch pieces
1 cup sundried cherries
8 ounces white chocolate, coarsely chopped
1 cup sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
6 large eggs
3 cups heavy cream
1 cup whole milk
2 tablespoons pure vanilla extract
1 stick (8 tablespoons) unsalted butter, cubed

Steps:

  • For the vanilla sauce: Bring the milk and salt to a simmer over medium heat in a 2-quart heavy saucepan. Whisk together the yolks and sugar in a bowl until combined, and then add to the hot milk in a slow stream, whisking. Transfer the custard back to the saucepan and cook over moderately-low heat, stirring constantly with a wooden spoon, until the custard coats back of a spoon, about 5 minutes. Pour through a fine-mesh sieve into a bowl and stir in the vanilla. Cover the surface of the custard with a round of wax paper and chill until cold, at least 1 hour.
  • For the bread pudding: Preheat the oven to 325 degrees F. In large mixing bowl, toss together the donut slices, dried cherries and white chocolate. Set aside. In second large mixing bowl, stir together the sugar, cinnamon and nutmeg. Measure out 1/4 cup of spiced sugar into a small bowl and set aside.
  • In a third large mixing bowl, whisk together the eggs, cream, milk and vanilla. Whisk the eggs into the large bowl of spiced sugar, and then pour over the bread-chocolate mixture and stir to combine. Pour the batter into a 9-by-13-by-2-inch baking pan and sprinkle with the reserved 1/4 cup spiced sugar. Scatter the butter cubes over top and bake until golden brown and just set in middle, 50 to 60 minutes. Serve with the vanilla sauce.

5 tablespoons packed dark brown sugar
1 cup heavy cream
1 cup whole milk

1/4 teaspoon fine sea salt
5 tablespoons granulated sugar
6 slices soft white bread, cut into 1/2-inch cubes
1/2 cup (about 3 ounces) milk chocolate chips
1/2 cup dried cherries
Nonstick cooking spray
1 tablespoon Turbinado sugar

Steps:

  • Put the dark chocolate chips in a large heatproof bowl. In another large bowl, whisk together the eggs and brown sugar until well combined.
  • In a medium saucepan, bring the cream, milk, brandy, orange zest, vanilla seeds, salt, and granulated sugar to a boil; stir until the sugar is dissolved. Pour the hot liquid over the dark chocolate chips and whisk until melted and smooth. While whisking constantly, pour the dark chocolate mixture into the eggs, mixing until combined. Add the bread and toss gently to coat. Transfer the bread mixture to the refrigerator and cool to room temperature. Stir in the chocolate chips and dried cherries. Cover and refrigerate overnight.
  • Position a rack in the center of the oven and preheat to 350 degrees F. Put eight 4-ounce ramekins on a baking sheet and lightly coat them with cooking spray.
  • Stir the bread pudding mixture to evenly distribute the chocolate chips and cherries. Divide the mixture among the prepared ramekins. Sprinkle a little Turbinado sugar over the top of each pudding and bake until puffed and set, about 30 minutes. Serve warm or at room temperature.

This recipe is from Southern Living's ultimate chocolate recipe booklet. Every now and then, when I'm in the middle of a choc-o-tack, I make something out of this book. Once, I made this bread pudding (more of a bread)and it was sooo good but alas, gone so quickly. It's very moist and I like it with a little whipped cream and a maraschino cherry on top! The Southern Living booklet said that this dessert got their highest rating due to the juicy cherries and triple chocolate flavor. MmmMMMMMmmmm.......

1 (6 ounce) jar maraschino cherries
3 large eggs, lightly beaten
3 cups chocolate milk (can make your own with preferred amount of chocolate)
3/4 cup sugar
3 tablespoons butter or 3 tablespoons margarine, melted
1 tablespoon cocoa powder
6 cups cubed French bread (the size of dice)
1 cup semisweet chocolate morsel (6 oz)
sweetened whipped cream
maraschino cherry

Steps:

  • Drain the jar of cherries but reserve 1 TB of the cherry juice. Chop the cherries coarsely. The first time I made this I used a food processor and got them too fine. More chunky is definately better.
  • In a large bowl, combine 1 TB of cherry juice, eggs and next 4 ingredients and stir will.
  • Preheat oven to 350 degrees.
  • Add the bread cubes and let stand for 15 minutes on the counter, stirring occasionally. After 15 minutes, stir in the chocolate chips and cherries.
  • Spoon this mixture into a greased 9 inch square pan (I used a bread pan with good results) and bake, uncovered for 50-60 minutes or until set.
  • Garnish, if you want to, with whipped cream and maraschino cherries.
  • Cook time includes 15 minutes soaking time for french bread cubes.

A twist on the classic Christmas pudding, our cherry version is served with silky dark chocolate, a rich brandy sauce and a dollop of double cream

200g frozen dark sweet cherries defrosted, plus extra cherries, left whole, to decorate the pudding
1 Conference pear
100g raisins
100g sultanas
100ml brandy
100g bar dark chocolate
100g unsalted butter , plus 2 tbsp for greasing
2 large eggs
50g plain flour
100g dark soft brown sugar
1 tsp mixed spice
1 tbsp cocoa powder
50g fresh breadcrumbs
100g bar dark chocolate
120ml double cream , plus extra to serve
2 tbsp golden syrup
3 tbsp brandy (optional)

Steps:

  • Drain the cherries in a sieve over a bowl. Cut them in half. Peel the pear, then grate it coarsely.
  • In a large bowl, combine the cherries, pear, the raisins, sultanas and brandy. Stir well and cover with clingfilm.
  • Heat in the microwave on high for 3 mins, then leave to cool for 5 mins to let the fruit plump up. Break the chocolate into squares while you wait.
  • Tip the chocolate and butter into the hot fruit. Stir, then leave to melt. Let it cool, uncovered, for about 15 mins.
  • Meanwhile, rub 1 tbsp butter around the inside of a 1-litre pudding basin.
  • Lay two sheets of foil over each other and butter the one on top. Holding both sheets together, fold a 3cm pleat across the middle of the foil and set aside.
  • Beat the eggs together in a small bowl. Sift the flour, sugar, mixed spice and cocoa powder on top of the chocolatey fruit, then add the breadcrumbs, eggs and ¼ tsp salt.
  • Stir everything together with a wooden spoon - it will be quite a wet mixture. Tip it into the buttered basin.
  • Cover the pudding with the buttered foil (buttery-side down), and scrunch it over the edge of the basin. Tie string tightly under the lip of the basin, and make a string handle to help you lower the basin in and out of the saucepan later.
  • Trim the foil so that a frill of about 5cm is left sticking out, then tuck the frill up and under itself neatly. The aim is to keep the pudding watertight beneath.
  • Put a heatproof saucer into the very large saucepan, then put the basin on top. Pour in just-boiled water to come halfway up the basin.
  • Cover the pan and steam the pudding for 2½ hrs. Test the pudding is cooked by inserting a skewer through the foil - if there is any wet mixture, steam for 15 mins more then check again.The pan should be simmering rather than boiling hard. Top up the water levels as it cooks, if you need to.
  • To store, let the pudding cool and leave in a cool dark place to mature. Don't unwrap the foil. You can make this pudding up to two months before eating.
  • To reheat, steam in a pan for 30 mins, or microwave on medium for 5 mins. Remove the foil to microwave, covering with clingfilm instead.
  • For the sauce, break the chocolate into squares. Put all the ingredients in a small pan and heat gently, stirring, until smooth. Serve the pudding topped with any remaining cherries, the sauce and a dollop of double cream.

about 1/2 pound brioche or challah
5 ounces fine-quality white chocolate
2 cups heavy cream
1 cup milk
3 large whole eggs
3 large egg yolks
1/4 cup sugar
1 teaspoon vanilla
For poached cherries
1/2 cup dry white wine
1/2 cup water
1/2 cup sugar
1 cup dried tart cherries
Accompaniment: whipped cream

Steps:

  • Make pudding:
  • Butter an 8-inch square glass baking dish. Cut enough bread into 3/4-inch cubes to measure 6 cups. Chop chocolate.
  • In a small heavy saucepan bring 1 cup cream just to a boil and add chocolate. Remove pan from heat and let mixture stand, covered, undisturbed. In another small heavy saucepan bring milk and remaining cup cream to a gentle simmer. In a bowl with an electric mixer beat together whole eggs, yolks, sugar, and a pinch salt on medium speed 5 minutes. With mixer running, add milk mixture in a slow stream, beating until combined well. Whisk chocolate mixture until smooth and add with vanilla to egg mixture. Beat mixture until combined well.
  • Arrange bread cubes in baking dish. Pour cream mixture over bread and with a spoon push bread down into mixture to coat evenly. Chill pudding, covered, 1 1/2 hours.
  • Preheat oven to 350°F.
  • Put baking dish in a large baking pan and add enough hot water to pan to reach halfway up sides of dish. Bake pudding in middle of oven 45 to 50 minutes, or until set and springy to the touch. Transfer pudding to a rack and cool 30 minutes before serving.
  • Poach cherries while pudding is baking:
  • In a saucepan bring wine, water, and sugar to a boil, stirring until sugar is dissolved. Add cherries and remove pan from heat. Let mixture stand, covered, 1 hour. Drain cherries in a sieve and discard liquid.
  • Serve pudding with cherries and whipped cream.

White Chocolate Rice Pudding, Cherries and Almonds image

This is a Bobby Flay recipe, and as usual, have altered it a bit to suit personal preferences. Instead of cherry sauce we make it raspberry, or possibly apricot.

4 1/2 cups whole milk
2/3 cup long-grain rice (such as Carolina rice) or 2/3 cup arborio rice (my preference)
2/3 cup sugar
1/4 teaspoon vanilla beans (pod, seeds only) or 1 tablespoon good vanilla extract
1/4 teaspoon salt
2 large egg yolks (room temperature)
3 tablespoons whipping cream
4 ounces good-quality white chocolate, chopped (recommended Lindt or Valrhona)
1 tablespoon grated orange zest (optional)
1/4 teaspoon fresh ground cinnamon
preserves
cinnamon
kirsch
whipped cream (to garnish, the real stuff) (optional)
1/4 cup slivered almonds, toasted, for garnish

Steps:

  • RICE PUDDING:.
  • Combine milk, arborio rice, sugar, vanilla & salt, in a heavy, large saucepan.
  • Cook over medium-low heat until mixture thickens and rice is tender, stirring occasionally, about 1 hour.
  • Reduce heat to low.
  • Whisk egg yolks and cream together in a small bowl.
  • Gradually whisk 1/2 cup rice mixtures into egg mixture(to temper); return mixture to the saucepan and cook for 2 minutes, stirring constantly; DO NOT LET BOIL.
  • Remove from the heat.
  • Add white chocolate and stir until melted.
  • Stir in the orange zest(if using) and cinnamon.
  • Transfer pudding to a large bowl, cover, and chill until cold. (Cover with plastic wrap touching the pudding, so skin doesn't form).
  • WARM CHERRY SAUCE:.
  • Bring preserves and cinnamon to a simmer in a medium saucepan over low heat, add the kirsch(or other liqeuer, if using other fruit preserves).
  • Carefully ignite with a long match or just warm through(I think the latter is safer, at home).
  • ASSEMBLING THE PUDDING:.
  • Serve pudding in bowls or large goblets with Warm Cherry Sauce, whipped cream, and toasted almonds on top, or layer in parfait glasses.
  • Either way it will look lovely and taste even better.
  • Enjoy!
