For this recipe, the traditional 7-layer dip has been revisited so that each layer is good enough to eat on its own, but isn't so much effort that the whole thing can't be finished in 20 minutes. The order of the layers offers some delightful moments, like where the cheese melts into the warm refried beans or where the cool sour cream meets the fiery salsa. Cilantro and scallions serve as a refreshing counterpoint, and Fritos lend added crunch. No need to dig out your trifle bowl: A platter with a lip is preferred here for easier scooping.

3/4 cup sour cream
1 jalapeño, finely chopped (about 2 tablespoons)
Kosher salt and black pepper
2 medium ripe avocados
2 tablespoons freshly squeezed lime juice (from 1 lime)
1 (16-ounce) can refried beans
1 teaspoon ground cumin
1 cup freshly grated Cheddar (about 4 ounces)
1 cup sliced black olives (about 4 ounces)
3/4 cup good-quality, store-bought red salsa, fresh or jarred and any heat level (drained if watery)
1/2 cup Fritos or corn nuts, crumbled
1/4 cup thinly sliced scallions (about 2 scallions)
1/4 cup tightly packed cilantro leaves
Tortilla chips, for serving

Steps:

  • In a small bowl, stir together the sour cream and half the jalapeño (about 1 tablespoon). Season with salt and pepper. In another small bowl, coarsely mash the avocado, lime juice and remaining 1 tablespoon jalapeño, then season with salt and pepper.
  • In a small saucepan over medium-low heat or in a microwave, warm the refried beans with the cumin. Season with salt and pepper.
  • Spread the beans on a platter with a rim or lip. Top evenly with the cheese, followed by the olives, avocado mixture and salsa. Top with dollops of jalapeño-sour cream and sprinkle with crumbled Fritos, scallions and cilantro. Serve with tortilla chips.

Steps:

  • In a small bowl, mix together the refried beans and taco seasoning.

1 (15-ounce) can black beans
2 teaspoons ground cumin, 2/3 palm full
1 (16 to 18 ounce) jar chipotle salsa

1 lime, zested and juiced
2 ripe avocados
2 cloves garlic, finely chopped
1 lemon, juiced
1 jalapeno, seeded and finely chopped

2 plum tomatoes, diced

Tortilla chips, buy 2 sacks in 2 different colors/varieties

Steps:

  • Heat refried beans in small nonstick pan over medium heat and season with hot sauce. Transfer the beans to a small, deep casserole dish. Scrape pan clean with rubber spatula and return to heat.
  • Add a little extra-virgin olive oil to the pan and raise heat to high. When the oil smokes, add the scallions and sear them, 2 to 3 minutes. Add green salsa to scallions and heat through. Add cilantro, remove salsa from heat, and layer on top of the beans.
  • Return the same pan to the stove, lower heat to medium and add black beans, heat through and season with cumin, layer on top of the green salsa.
  • Top the black beans with a layer of chipotle salsa. Mix sour cream the lime zest and juice and spread on top of the chipotle salsa.
  • Combine the meat of 2 ripe avocados with garlic, lemon juice, jalapeno and salt to form a chunky guacamole. Top the salsa with guacamole. Garnish the dip with the final layer of diced tomatoes and sliced olives.

1 lb. ground beef, cooked
2 packs taco seasoning, divided
1 (16 ounce) can refried beans
8 ounces sour cream
4 ounces cream cheese, softened
2 cups shredded Mexican cheese
1 and 1/2 cups lettuce, washed and shredded
1 large tomato, diced
1 medium white or yellow onion, diced
1 (6 ounce) can black olives
Optional: green onions, jalapeños, guacamole, salsa (drained)

Steps:

  • Using a 9″ skillet pan, pan fry ground beef on medium heat. Season beef with one pack of taco seasoning (approximately 3 tablespoons) and 3 tablespoons of water. Mix together. Spread seasoned beef evenly into bottom of 9×13 glass dish. In a small glass bowl, microwave refried beans for 30 seconds and stir. Lay refried beans on top of the layer of seasoned beef. Mix cream cheese, sour cream and second pack of taco seasoning (approximately 2 tablespoons). More if desired. Spread cheese mixture evenly on top of refried beans.   • Layer #4: Spread a layer of salsa onto the guacamole layer.

1 10-ounce can Rotel Diced Tomatoes with Green Chilies, drained
8 ounces sour cream
8 ounces cream cheese, softened
2-3 tablespoons taco seasoning
4 large avocadoes
1 lime, juiced
1/2 teaspoon salt
1 16-ounce jar chunky salsa (any brand), drained
1 1/2 - 2 cups shredded cheese, any combination of cheese you like
2 large tomatoes, chopped
1 small can sliced olives
2-4 stalks green onion, (depending on size)
cilantro, rough chopped
1 bag tortilla chips

Steps:

  • Drain the Rotel tomatoes and chilies. Mix with the refried beans and spread into an even layer on the bottom of your serving dish.
  • Mix together the sour cream, the softened cream cheese, and the taco seasoning. Combine well and spread on top of the refried beans.
  • Mash up the avocado and add the juice of one lime and salt. Combine well and add on top of the sour cream layer. **The easiest way to do this is to use a spoon to add 12 or so spoonfuls of avocado on top of the sour cream layer and gently even it out with a fork. Don't try to spread it because you disturb the other layers.
  • Drain the salsa in a colander so it's not so watery. Then using a spoon, gently add the salsa on top of the avocado layer. Carefully distribute the salsa evenly.
  • Sprinkle the shredded cheese on top of the salsa.
  • Chop up the tomatoes. Then add the chopped tomatoes and sliced olives evenly over the cheese.
  • Chop the green onions and the cilantro, and sprinkle over the top of the dip.
  • Cover with plastic wrap and refrigerate until ready to serve.
  • Serve with a bag of your favorite tortilla chips.

Juice of 1 lime
3/4 teaspoon Kosher salt
3/4 cup sour cream
1/3 cup mayonnaise
1 tablespoon vinegar or rice wine vinegar
2 teaspoons store-bought taco seasoning (or homemade)
2 (9 ounce) cans bean dip (i.e. Fritos Bean Dip)
1 1/4 cup freshly grated Cheddar cheese
1 (2 ounce) can sliced black olives, drained and patted dry
2 Roma tomatoes, seeded and diced small
2 green onions, sliced

Steps:

  • Have ready a 4-cup capacity, rimmed serving dish. You could also use a pie dish or a small casserole dish.
  • To make the guacamole, in a medium-sized mixing bowl, mash together the flesh of avocados, lime juice, and Kosher salt using a fork or potato masher t until smooth.

  • Begin by throwing the refried beans into a small pan over medium-low heat. Add several dashes of Tabasco sauce and a small can of (undrained) diced green chilies. Stir well. Next, sprinkle a little bit of ground Cumin. Spread the beans on the bottom of a glass bowl or high-sided dish. Over this sprinkle the sharp cheddar. Next, plop your sour cream. 4 ounces green chiles, diced
1/4 teaspoon cumin
1/8 teaspoon coriander powder
1/2 teaspoon red chili powder
1/4 teaspoon garlic powder
1-3 dashes hot sauce
5 plum tomatoes, diced
1 jalapeños jalapeño, seeds removed and minced
1/4 red onion, minced
1 tablespoon fresh lime juice
1/4 bunch fresh cilantro, chopped
salt, to taste
2 avocados, peeled and pits removed
4 tablespoons fresh lime juice
1/2 cup reduced fat shredded cheddar cheese
1/2 cup shredded reduced fat monterey jack cheese
1/3 cup fat free sour cream
1/4 cup black olives
2-3 tablespoons fresh cilantro, chopped
1 cup pico de gallo

Steps:

  • In a skillet set over medium heat, add refried beans, diced green chilies, cumin, coriander, chili powder, garlic powder and hot sauce. Stir together and allow flavors to meld and warm through, about 5-7 minutes. Remove from heat and set aside. In a medium size bowl, mix together all of the pico de gallo ingredients (tomatoes, jalapeno, red onion, lime, salt and cilantro) and set aside. In a second medium size bowl, mash avocados with a fork, potato masher or pastry blender. Add 1 cup of the pico de gallo mixture and the juice of two limes and mix well to combine. Spread the refried bean mixture evenly over a medium sized platter with slightly rimmed edges. Then layer the ingredients in the following order on top of the beans, making sure to spread each layer evenly over the top of the previous: sour cream cheddar cheese guacamole jack cheese black olives 1 cup of pico de gallo chopped cilantro 5. Serve dip with tortilla chips and enjoy!

1 medium green pepper, chopped
2 large tomatoes, chopped

Steps:

  • Mix softened cream cheese and sour cream together. Spread into bottom of dish at least 3 inches deep. Pour salsa over this and spread evenly. 2 cups guacamole
2 cups sour cream
2 cups salsa
2 cups shredded cheddar cheese
1 cup sliced green onions
1/2 cup sliced olives

Steps:

  • In a large bowl, stir together refried beans, salt, garlic powder, cumin and cayenne. Mix it well so that the seasonings are well distributed.
  • In a 9x13 pan or 3 quart casserole dish, spread the bean mixture in the bottom of the pan from edge to edge, corner to corner, covering the entirety of the bottom.
  • Top the bean layer with the guacamole.
  • Top the guacamole layer with sour cream and make sure to completely cover the guacamole layer because that will keep the avocado from oxidizing and turning brown.
  • Top the sour cream layer with your favorite salsa.
  • Sprinkle cheese on top of the salsa layer, then add green onions and olives.
