SESAME TURKEY STIR-FRY
I really like the rich taste of sesame oil in this Thai-inspired dish. If you don't have it, canola oil does the trick, too. To get a similar nuttiness, toss in a handful sliced almonds before serving. -Kelli Whiting, Fortville, Indiana

Steps:
- In a small bowl, mix the first six ingredients until blended. In a large skillet, heat oil over medium-high heat. Add red pepper and onion; stir-fry until crisp-tender. Add garlic; cook 1 minute longer., Stir cornstarch mixture and add to pan. Bring to a boil; cook and stir 2 minutes or until sauce is thickened. Add turkey; heat through. Stir in green onion. Serve with rice. If desired, top with serrano pepper and sesame seeds.

Steps:
- 1. Heat canola oil in large skillet over medium-high heat. Add bell pepper and carrot and cook, stirring often, until softened, about 3 minutes. Add garlic and ginger and cook, stirring constantly, until fragrant, about 30 seconds. Add turkey and cook, stirring often, until no longer pink, about 5 minutes. Add scallions and cook, stirring often, until scallions are softened, about 1 minute. 2. Stir in peas, soy sauce, sesame oil, salt, and pepper flakes and cook just until heated through, about 2 minutes. Remove from heat and stir in cilantro. Divide rice evenly among 4 bowls and top with turkey mixture. Sprinkle with sesame seeds.

Steps:
- Prepare brown rice according to its package directions.
- While the rice is cooking, in a medium skillet or wok, brown the ground beef over medium heat until no longer pink. Remove the beef from the skillet, drain & set aside.
- Heat oil in skillet over medium-high heat. Add garlic & green onion; stir-fry for 2 minutes. Add the broccoli slaw & cabbage; stir-fry for 2 minutes. Add rice & soy sauce; stir-fry for 2 more minutes.
- Return the cooked ground beef to the skillet w/the rice & vegetable mixture & season w/red pepper flakes, to taste. Stir until ingredients are well-combined & heated through, about 2 minutes.
- Divide into 2 portions, serve & enjoy!

- Combine the broth, wine, soy sauce, vinegar, ginger, garlic, cornstarch, sesame oil, sugar, and crushed red pepper in a small bowl; set aside.
- Heat a nonstick wok or large deep skillet over medium-high heat until a drop of water sizzles. Swirl in 1 teaspoon of the canola oil, then add the turkey. Stir-fry until just cooked through, 5–6 minutes; transfer to a plate.
- Cut the eggplants in quarters, lengthwise. Swirl the remaining 1 teaspoon canola oil into the wok, then add the eggplant. Cook over medium heat, stirring occasionally, until the eggplant is almost tender, about 8 minutes. Add the bok choy. Cook, stirring occasionally, until tender, about 4 minutes. Return the turkey to the wok, then add the mushrooms and broth mixture. Cook, stirring constantly, until the mixture bubbles and thickens, about 2 minutes. Serve with the rice. Yields 1 1/4 cups stir-fry and 1/2 cup rice per serving.
