Steps:

  • Preheat oven to 400 degrees. Scrub potatoes. Prick in several places with a fork; place on a baking sheet (or directly on oven rack). Bake until tender when pierced with a paring knife, 45 to 60 minutes.

Bell pepper (1 red, yellow and green)
2 red chili peppers
1 Tbsp Walnut oil
1 onion
2 ripe Avocados
2 Tbsps White vinegar
250 grams Greek Yogurt (0.1% fat)

1 bunch Chives
mint leaves or Chives (for garnish)

Steps:

  • Preheat the oven to 225°C (approximately 425°F). Rinse the potatoes and pat dry. iIndividually wrap potatoes in foil and cook on a baking sheet in the oven for 60-70 minutes.
  • Meanwhile, halve, core and rinse bell peppers. Cut bell pepper halves into small cubes. Cut chile peppers lengthwise, remove the seeds, rinse and dice finely. Mix with vegetable oil.
  • Peel the onion and chop. Halve avocados, remove pits, and puree the pulp with the finely diced onion, vinegar and yogurt. Season with salt and pepper. Rinse chives, shake dry and cut into thin rings.
  • Mix chives and vegetables with avocado sauce. Unwrap potatoes from foil, cut crosswise and squeeze until they open up slightly. Sprinkle with salt. Serve baked potatoes with avocado sauce and mint or chives.

2 tablespoons toasted sesame oil
3/4 teaspoon ground ginger
3/4 teaspoon ground turmeric

3 cups frozen cooked brown rice (about 24 ounces)
1/4 head red cabbage, thinly sliced (about 2 cups)
2 small carrots, trimmed and peeled into paper-thin ribbons
2 large limes, halved, 1 half cut into wedges for serving
3/4 cup nonfat plain Greek yogurt
1 tablespoon fish sauce
2 teaspoons chili paste, such as sambal oelek
1 1/2 teaspoons honey
Two 5-ounce cans albacore tuna packed in water, drained
1 cup frozen shelled edamame, thawed
2 scallions, thinly sliced
Toasted sesame seeds, for serving

Steps:

  • Preheat the oven to 450 degrees F and line a rimmed baking sheet with aluminum foil.
  • Toss the sweet potatoes, 1 tablespoon of the sesame oil, 1/2 teaspoon of the ginger, 1/2 teaspoon of the turmeric, 1/4 teaspoon salt and several grinds of pepper on the prepared baking sheet until evenly coated. Roast until tender and lightly browned, tossing halfway through, about 30 minutes.
  • Meanwhile, heat the frozen brown rice according to package directions; keep warm. Toss the sliced cabbage, carrot ribbons, the juice from 1 lime half, a pinch of salt and a couple grinds of pepper in a medium bowl until well dressed and combined.
  • Squeeze the juice from the remaining 2 lime halves into a small bowl. Stir in the yogurt, fish sauce, chili paste, honey, the remaining 1 tablespoon sesame oil, 1/4 teaspoon ginger and 1/4 teaspoon turmeric, a pinch of salt and several grinds of black pepper until smooth. Taste and adjust the seasoning with salt and pepper.
  • Divide the warm rice among 4 shallow bowls (about 3/4 cup per bowl). Top with the roasted sweet potatoes, cabbage-carrot slaw, tuna (about 1/4 cup per bowl), edamame and sliced scallions. Drizzle with the spicy yogurt dressing, sprinkle with toasted sesame seeds and serve with the reserved lime wedges for squeezing.

1/2 cup nonfat Greek-style yogurt or 2/3 cup regular, plain nonfat yogurt
1 tablespoon olive oil
1 tablespoon finely chopped parsley leaves

Steps:

  • Preheat the oven to 450 degrees F.
  • Poke each potato with a fork a few times. Place on a baking sheet lined with foil and bake for 45 to 50 minutes, until they are easily pierced with a knife. Wrap them loosely in the foil for 5 minutes or until ready to serve.
  • If using regular yogurt, place it in a strainer lined with paper towel and set the strainer over a bowl. Let the yogurt drain and thicken for 20 minutes.

1 lb potato, cubed
1 1/2 cups plain yogurt (or curd)
2 green chilies
1 medium onion, chopped
1 teaspoon chili powder
1/2 teaspoon turmeric powder
2 teaspoons salt
1 teaspoon ginger, minced
2 tablespoons vegetable oil (or ghee)
1 1/2 cups water
coriander, chopped (to garnish)

Steps:

  • Place a skillet on medium heat and heat the oil/ghee in it.
  • When heated, add the minced ginger, and then the chopped onion.
  • Saute for a minute.
  • Add the potato cubes and fry for a while.
  • Reduce the flame to low, cover the skillet, and cook until the potatoes are tender.
  • Once potatoes are done, uncover the skillet and add the whole green chillies, turmeric powder, chilli powder and salt.
  • Fry for 2-3 minutes.
  • Add the yogurt/curds to the potato mix, and then add the water.
  • Mix well and bring it to a boil.
  • Remove from the flame and garnish with the corriander.
  • Serve hot.

  • POT/Stuffing: preheat to 400F and back pot until tender (75 min). Cool/chill. Cut horiz. Scoop out middle. Mash pulp and mix in cheese, butter, cilantro, onion, chile, ses. seeds. season with S&P generously and divide among shells. Chill. YOG/SPICE PASTE: combine first 5 ingred in food processor and blend. Add yogurt, oil, lemon j and process to smooth puree. Season with S&P in small bowl. All above can be made 6 hours ahead. Grill: add pan with water in middle of coals. Med heat. Foil on grill and brush with oil. Put half yog past in bowl and reserve. This is my favorite of all the dishes my brother has ever served at the very seasonal Franny's, the restaurant in Brooklyn where he is the chef. It disappears from his menu the instant the plants that grow from seeds begin to sprout, making it, like the plants themselves, available for only a few months each year.

2 Japanese sweet potatoes (or regular ones if you can't find the Japanese kind)
1/4 cup olive oil, plus more for drizzling
Kosher salt
1 cup full-fat Greek yogurt
3 tablespoons lemon juice
2 tablespoons toasted sesame seeds
1/4 cup red onion, medium dice
1/4 teaspoon finely minced garlic
1 1/2 tablespoons Thai fish sauce
1 tablespoon pickled chiles, finely chopped, or 1 teaspoon dried chile flakes

Steps:

  • Preheat oven to 450. Coat sweet potatoes with a very light drizzle of olive oil and a sprinkle of salt. Roast the potatoes, wrapped in foil, until totally tender. Switch oven to broil, remove potatoes from foil and blister under broiler until lightly charred. Cool to room temperature, and then cut in half or in 1/2-inch rounds. Set aside.
  • Mix together yogurt, 1 tablespoon lemon juice and half the olive oil until smooth. Divide between 4 plates.
  • Mix remaining lemon, olive oil and other ingredients into a salsa, and adjust seasoning with kosher salt.
  • Warm sweet potatoes in oven, then plate each half (or an even number of rounds). Top with salsa and sprinkle with Maldon salt. A little additional oil is good, too.

Over the centuries, Indian grill masters have evolved a higly sophisticated style of vegetarian barbecue - dishes bursting with flavor (not to mention dairy and grain proteins). Their grilling is so complex and satisfying, you'll never miss the meat! Tandoori "aloo" potato - turns up at grill parlors throughout northern India. The best Raichlen has ever tasted came from the landmark restaurant Moti Mahal in Delhi, the potatoes were packed with cheese, slathered with spice paste, and crusted with sesame seeds. What's not to like? If unable to find the yogurt for some reason, place regular yogurt in cheesecloth-lined strainer set over a large bowl. Cover and chill overnight to drain & voilá! 500g baking potatoes , quartered
250g natural set yogurt
1 large green or red chilli , finely chopped
small piece ginger , grated
1 garlic clove , crushed
1 tbsp olive oil
1 ½ tbsp gram or plain flour
1 tsp each ground coriander and ground cumin

Steps:

  • Cover the potatoes with lots of cold water in a medium saucepan, bring to the boil then simmer for 4 mins. Drain and leave until cool.
  • Grease a baking tray. Mix together all the marinade ingredients with a pinch of salt, ensuring they're well combined. Dip potatoes in the marinade, making sure they're well coated, then place on the baking tray. Leave to marinate in the fridge for 30 mins.
  • Heat oven to 200C/180C fan/gas 6. Place baking tray in the oven and cook potatoes for 20 mins, until browned and crisp.

2 pounds russet or Yukon Gold potatoes (about 3)
6 tablespoons vegetable oil
2 teaspoons whole cumin seeds
2 teaspoons black mustard seeds
2 tablespoons sesame seeds
Kosher salt
1/8 to 1/4 teaspoon cayenne pepper
1 tablespoon fresh lemon juice

Steps:

  • Place potatoes in a large pot; cover with water by 2 inches and bring to a boil. Reduce toa low boil and cook until just tender when pierced with a knife, 15 to 20 minutes. Drain and let cool completely, 2 to 4 hours. Peel and cut into 3/4-inch cubes.
  • Heat oil in a large, heavy skillet (preferably cast iron or nonstick) over medium until shimmering. Add cumin, mustard, and sesame seeds; as soon as they begin to pop -- a matter of seconds -- add potatoes. Cook, stirring occasionally, 5 minutes.
