This quick BBQ Beef and Cabbage comes together in one skillet and uses inexpensive cabbage to bulk out the meal instead of relying on pasta or rice.

1 Tbsp olive oil ($0.16)
1/2 lb. lean ground beef ($2.65)
1 small onion ($0.32)
1 tsp smoked paprika ($0.10)
1/4 tsp garlic powder ($0.02)
3/4 tsp salt, divided ($0.04)
4-6 cups shredded cabbage (about one pound) ($0.60)
8 oz. tomato sauce ($0.47)
2 Tbsp apple cider vinegar ($0.06)
2 Tbsp brown sugar ($0.08)
1 Tbsp Worcestershire sauce ($0.06)
1 tsp Dijon mustard ($0.03)
2 oz. shredded cheddar ($0.50)
1 green onion, sliced ($0.10)

Steps:

  • Add the olive oil and ground beef to a large skillet and cook over medium heat. Begin to break up the beef as it browns.
  • While the beef is browning, finely dice the onion. Add the onion, paprika, garlic powder, and salt to the skillet with the ground beef and continue to cook over medium heat until the onions are soft.
  • While the onions and beef are cooking, finely shred the cabbage. Once the onions are soft, add 1/4 cup water to the skillet and stir to dissolve any browned bits off the bottom of the skillet. Add the shredded cabbage and stir to combine. Place a lid on the skillet and let simmer for about 5 minutes, stirring occasionally, until the cabbage has wilted.
  • Add the tomato sauce, vinegar, brown sugar, Worcestershire sauce, and Dijon to the skillet. Stir to combine and let simmer a few more minutes without the lid, or until the liquid in the skillet has reduced slightly. Taste the sauce and add more salt if needed (I added 1/4 tsp).
  • Finally, top the beef and cabbage with the shredded cheddar, place the lid back on the skillet for 1-2 minutes, or until the cheese has melted. Top with sliced green onions then serve.

½ cup soy sauce
¼ cup butter
freshly ground pepper to taste

Steps:

  • Preheat an outdoor grill for medium heat.
  • Evenly divide the cabbage among 4 squares of aluminum foil. Sprinkle 2 tablespoons of soy sauce over each pile of cabbage, and place a tablespoon of butter on top. Season with pepper to taste, and fold the sides of the foil over the cabbage, sealing to form a packet.
  • Place packets onto preheated grill, and cook until the cabbage is tender, 15 to 20 minutes.

1 onion, halved and thinly sliced
1 tablespoon Italian seasoning

1 gallon water
2 tablespoons pickling spices
1 (5 to 6 pound) brisket
3 cups BBQ sauce
1 head red cabbage
1 head green cabbage
2 tablespoons duck fat
1/2 cup balsamic vinegar, reduced to 1/4 cup
Kosher salt and pepper
10 large white rose potatoes
4 ounces butter
1 cup cream
1/4 cup chopped fresh parsley
Kosher salt and pepper

Steps:

  • For the Brisket: In a large stockpot bring water to a boil. Add pickling spices and brisket. Cook brisket for 45 minutes at a simmer. While brisket is cooking, start the grill using charcoal and mesquite. Add the mesquite after charcoal turns reddish gray. Remove the brisket from the water and let sit for about 10 minutes. *** NOTE: Do not discard the water.
  • Place cooked corned beef on the grill. Close lid on the grill and cook the corned beef very slowly turning the corned beef to allow for all sides to be cooked evenly. (Depending on how dense the beef is, this will take about 1 1/2 to 2 hours). Keeping the temperature of the grill around 240 degrees. Add BBQ sauce at the end of cooking process. The BBQ sauce is optional, any will do.
  • For the cabbage: Trim and wash cabbage. Cut out the hearts. Slice the cabbage very thin. Remember to slice the head of cabbage into quarters. (It is much easier to hold and cut). Bring the water that the brisket was cooked in to a boil. Blanch the cabbage for about 5 minutes. Strain and cool. Saute the cabbage in the duck fat and balsamic vinegar. Season with salt and pepper.
  • For the potatoes: Bring water to a boil in a large stockpot. Peel the potatoes and cut them in half. Place the potato halves into a strainer. Place the strainer into the pot. Cover and cook until they are fork tender, about 20 minutes.
  • In a small saucepan melt the butter. After the butter melts add the cream and reduce by one third. Add the parsley, salt, and pepper, to taste. Serve over potatoes.
  • Remove corned beef from the BBQ and let stand for a few minutes. Slice cross grain. Try to slice thin.
  • Serve with any dark beer.

This in one of my favorite dishes to make. It's fun, flavorful, and is on the table in less than 30 minutes. This is an easy way to get DH to eat cabbage! I serve the whole dish under a bed of brown rice. I also make mine much hotter by adding serrano peppers! I did not include marinating time. I hope you enjoy!

1 1/2 lbs sirloin steaks, cut into bite-sized squares
1 tablespoon sesame seeds
1 tablespoon sesame oil
1/2 cup soy sauce
3 green onions, finely chopped
1 tablespoon fresh ginger, minced
1/2 teaspoon crushed red pepper flakes
1 lb napa cabbage, cut crosswise into 1/2-inch strips
1 tablespoon sesame oil
1 tablespoon rice vinegar
3 green onions, finely chopped
1 tablespoon fresh ginger, minced
3 garlic cloves, minced
1/4 cup chicken broth
1/2 teaspoon salt
1/2 teaspoon pepper
1 carrot, shredded

Steps:

  • Combine all marinade ingredients in a large, shallow dish or ziplock bag. Add meat and toss to combine. Refridgerate for at least 1 hour or up to six.
  • For the cabbage, saute the green onions, ginger and garlic in the oil in a large skillet for about 1 minute. Add the cabbage, carrots, chicken broth, vinegar, salt and pepper. Cook, stirring often for about 5 minutes.
  • For the meat, place meat and marinade in a large skillet and brown on all sides. This should only take 5 minutes and the marinade should be slightly reduced to a nice consistancy.
  • **I serve in a bowl with the rice on bottom, cabbage on top of rice, and meat on top of cabbage.

1 lb beef, cut bite-size
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground coriander
1/2 head cabbage, cored and cut into thin strips
1 cup carrot, shredded
1 teaspoon sesame oil
1/2 cup reduced sodium soy sauce
1 tablespoon cornstarch

Steps:

  • Heat canola oil in large frying pan or wok over medium heat.
  • Add beef, salt, pepper, and coriander; cook until beef is no longer pink. Remove from pan and allow fat and oil to drain retaining some fat and oil in the pan.
  • Add cabbage, carrots, and sesame oil to same pan. Stir-fry for approximately 2 minutes, when cabbage begins to soften.
  • Meanwhile, combine soy sauce and corn starch in measuring cup.
  • Pour soy sauce mixture into pan once cabbage is adequately cooked; Stir until thickened and remove from heat.
  • Depending on your serving style, either mix the beef back into the cabbage mixture before plating, or place the beef on top of cabbage mixture once it is plated.

This is a quick and tasty meal, great for those spur of the moment meals. Hoisin sauce lends a sweet, smoky flavor to foods, and can be compared to Asian foods the way ketchup is to American foods. Although the recipe calls for lean ground beef, I prefer the 80-20% blend, as it adds more flavor and can always be drained if that is your prefence. Feel free to change the sauce in this recipe for a new and different one. A little cumin and a touch of chili powder and you have a great southwest flavor. Some cheese and salsa turns the corner to another great flavor! This can be doubled, and tripled.I hope you will enjoy this recipe!

  • Stack tortillas and wrap in foil. Heat in a 350°F oven for 10 minutes to soften.
