BISCOTTI REGINA (SESAME SEED COOKIES)
Steps:
- Preheat oven to 350 degrees F.
- Combine the flour, baking powder and salt in a small bowl and set aside.
- Put the butter and sugar into the bowl of a mixer and cream until fluffy. Add the eggs, one at a time with the mixer running and beat until smooth. Add the vanilla and beat. Next, add the flour mixture and beat until well incorporated.
- To form the cookies, divide the dough in half and roll into logs 1-inch in diameter. Cut the logs into 3-inch lengths. Dip each piece of dough into the cream and then roll in the sesame seeds. Place the cookies on a baking sheet and place in the oven until golden brown, about 15 to 20 minutes.
- Let cool and serve. These will keep in an airtight container for up to 2 weeks.

- preheat oven to 325F (300 F if electric oven)
- Mix the seeds and salt together in a medium bowl. Stir in vanilla and warm honey, until uniformly combined.
- Place a piece of parchment in an 8 x 8 baking pan ( all the way up the sides too) . Spray lightly with oil.
- Pour seed mix into lightly greased, parchment-lined pan and using a wet metal spatula, spread it out, into corners and edges and press down firmly until you have a compacted, smooth surface at a uniform depth.
- Place on the middle rack in the oven for 40-55 minutes. Check at 25 minutes adjusting heat down to 300F, if edges seem too brown. For a chewy consistency, take out at 40-45 minutes, for a crispier crunchy consistency, let it cook the full 50 -55 minutes. Keep in mind, all ovens are different, so heat may vary. The key is....You want to take them out when they are perfectly golden, before they get too dark. So keep a close eye on them after 40 minutes. If you take them out too early (before they are golden) they may be too chewy and sticky. Pay attention to the color.
- For example, I've cooked these in two different ovens. In the gas oven, 50-55 minutes delivered perfectly golden bars. In the electric oven, 40 minutes were enough for perfectly golden. 55 minutes would have totally burnt them.
- Remove from oven, and cool completely. You could place in the fridge to cool faster. When it's completely cooled, take the parchment out of the pan, turn it over and remove parchment. Flip back over and cut into desired shapes or bars. Store at room temp.

SESAME SEED SNACK COOKIES
Not too sweet, covered in delicious sesame seeds, these are a favourite snack for my family. They keep about three days in a tin. I have tried using less oil, also draining some onto a paper towel after cooking, but without good results. The oil seems to be the magic ingredient for the special slightly chewy texture. The recipe is adapted from the same in "Chinese Cooking" by Mary Wilson.

Steps:
- Preheat oven to 350.
- Toast sesame seeds in a frying pan at medium heat. Stir them occasionally and watch them like a hawk! They will stay light and then suddenly brown in a few seconds - remove them from heat to a small bowl once they are golden brown.
- Combine flour, baking powder, spice powder, salt, brown sugar, corn oil, egg, vanilla in a mixing bowl. Mix well.
- Knead dough with hands until slightly rubbery.
- Roll into balls about one inch in diameter.
- Dip each ball into toasted sesame seeds to cover with seeds.
- Place on a cookie sheet. Flatten with a fork.
- Bake at 350 for 8-10 minutes.

SESAME SEED COOKIES
Though these are reminiscent of the traditional Greek or Italian cookies of the same name, the recipes originates in the US south and traces its roots to Africa. Nutty toasted sesame seeds are included in the dough as well as serving as the crispy coating. They are now commonly served at Kwanzaa celebrations. I have not tried this yet but am posting for ZWT 3.

Steps:
- In a large heavy skillet over medium heat, toast sesame seeds until golden brown, shaking skillet and stirring frequently to keep them moving. Remove from heat and set aside.
- Measure flour and remaining ingredients into a large mixing bowl.
- With hand-held mixer at low speed, beat until well blended, occasionally scraping bowl. With spoon, stir in 1/2 cup sesame seeds.
- Using about 2 teaspoons of dough for each cookie, shape into ovals about 2 inches in length; roll in remaining toasted sesame seeds. Place ovals about 1 inch apart on ungreased baking sheets. Bake in preheated 350° oven for about 20 minutes, or until lightly browned. Remove cookies to wire racks to cool. Store in tightly covered container for up to 1 week.
- Makes about 36 sesame seed cookies.

- Cream the butter. Add the flour, and salt. Mix until butter is completely blended into the flour mixture.
- Blend in the egg, parmesan cheese and sesame oil. Mix until it looks like cookie dough.
- Press out on parchment paper in a 10 X 15 inch sheet pan until 1/4 inch thick and press in the sesame seeds. (Try to have a rectangle and equal thickness.).
- Use a pizza cutter, and cut into 1/2 X 1/2 inch pieces and spread out on the parchment paper so they are not touching.
- Bake at 400 degrees for 15-20 minute until golden.

Steps:
- Cream butter with brown and white sugars. Add eggs and beat well. Add baking soda, hot water and vanilla extract. Mix well.
- Stir in flour and sesame seeds to make a stiff dough. Cover and chill until dough is firm.
- Roll heaping teaspoonfuls into balls; place on greased baking sheet, about 2" apart. Flatten slightly. Bake at 325 degrees for 10-12 minutes.
