1 tablespoon sesame oil
2 teaspoons chopped garlic

8 bone-in, skin-on chicken thighs
1/2 teaspoon sesame seeds
2 green onions, thinly sliced
1/4 cup honey
1/4 cup soy sauce
2 tablespoons ketchup
2 cloves garlic, minced

Then broil for 2-3 minutes, or until caramelized and slightly charred. Serve immediately, garnished with sesame seeds and green onions, if desired.

MEAL PREP ROASTED CHICKEN THIGHS

Meal Prep Roasted Chicken Thighs image

The idea of cooking ahead of time to have dinner or lunch ready to go all week is grand and all if you don't mind eating the same thing over and over again. There's another way: Make these juicy thighs, stow them in the fridge, and then use them to serve up a Spanish Rice Bowl, Apricot Chicken Salad and more.

Provided by Food Network Kitchen

Time 30m

Yield 4 servings

Number Of Ingredients 7

2 pounds boneless, skinless chicken thighs
1 tablespoon olive oil
1 tablespoon red wine vinegar
1 large clove garlic, finely grated
1 teaspoon Italian seasoning
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F. Toss the chicken with the olive oil, vinegar, garlic, Italian seasoning, crushed red pepper, 1 1/4 teaspoons salt and a few grinds of black pepper until evenly coated.
  • Place the chicken on a rimmed baking sheet and roast until golden and an instant-read thermometer inserted into the thickest part registers 165 degrees F, about 25 minutes. Serve the chicken in whole pieces or sliced crosswise into strips.
  • The chicken will keep up to 4 days. Let cool completely before refrigerating.
  • Spicy Honey-Mustard Chicken: Dip chicken in store-bought spicy honey-mustard and serve with crispy potatoes and sautéed spinach.
  • Curry Chicken: Serve with curried lentils, roasted carrots and yogurt sauce.
  • Spanish Rice Bowls: Serve with smoked paprika rice, peas and sautéed onions.
  • Apricot Chicken: Spread apricot jam over hot chicken and serve with a kale and apple salad.

SESAME-ROASTED CHICKEN WITH BEAN PUREE

Sesame-Roasted Chicken with Bean Puree image

Provided by Michael Symon : Food Network

Categories     main-dish

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 17

1/4 cup sesame or other oil
1/4 cup acid (I'm using the juice of 1 lime and 1 orange)
3 tablespoons smooth peanut butter
3 tablespoons sweetener (I'm using honey)
1 tablespoon soy sauce
2 tablespoon sesame seeds
Couple of shakes hot sauce or chile flakes, optional
1 whole chicken (3 1/2 to 4 1/2 pounds), cut into 8 pieces (or any parts you have)
8 ounces broccoli and friends, such as cauliflower, Brussels sprouts, cabbage, broccoli rabe or fennel (I'm using broccoli rabe)
1 tablespoon olive or other oil
Salt and pepper
1/4 cup olive or other oil
2 cloves garlic, minced
Salt
1/2 cup chicken stock, vegetable stock, water or other liquid (I'm using chicken stock)
One 15-ounce can beans, rinsed (I'm using white beans)
Fresh cilantro, for topping, optional

Steps:

  • For the sesame-roasted chicken: Preheat the oven to 450 degrees F.
  • Whisk together the sesame oil, lime and orange juice, peanut butter, honey, soy sauce, 1 tablespoon of the sesame seeds and the hot sauce if using in a large bowl. Reserve half of the sauce in a small bowl, then toss the chicken with the remaining sauce. Transfer the chicken to a baking sheet and roast about 35 minutes.
  • Meanwhile, toss the broccoli rabe in a medium bowl with the olive oil, remaining tablespoon sesame seeds and some salt and pepper. After the chicken has roasted for 35 minutes, add the broccoli rabe to the baking sheet with the chicken. Continue to roast until the chicken is cooked through and the thickest part of a thigh registers 160 degrees F, about 10 minutes more.
  • For the bean puree: While the chicken is cooking, heat the olive oil in a small saucepan. Add the garlic and a pinch of salt and cook for 1 minute over low heat. Add the stock and beans, turn the heat to high and bring to simmer; simmer for 5 minutes. Remove from the heat and mash or puree until smooth.
  • To serve, spread the bean puree on a plate, top with the chicken and broccoli rabe and drizzle with the reserved sauce. Garnish with cilantro if you have it.

  • Pat 6 chicken thighs dry with paper towels and season all over with salt. Rub only skin side of thighs with 1 Tbsp. oil.
  • Transfer thighs skin side down to skillet and cook until enough fat is rendered to cover bottom of skillet, about 5 minutes. Once skin starts to brown, increase heat to medium. Rotate skillet to encourage even browning. Carefully lift up thighs to allow hot fat to run underneath. If thighs are stubborn and don’t want to release, let them go a bit longer.
