EASY OATMEAL BARS (4 INGREDIENTS!)
Here's an oatmeal bars recipe that's beyond easy! These healthy breakfast bars are irresistibly tasty and great for busy mornings and snacks.

Steps:
- Mix together all the ingredients in a bowl until it forms a sticky dough. If the mixture is dry and not sticky, add a bit more honey and/or peanut butter; different peanut butter brands perform differently here.
- Add a sheet of parchment paper to a 9 x 9 pan. Place the ingredients in the pan and press it into an even layer. Use a small glass to roll over the top to get it smooth.
- Freeze the bars for 15 minutes. Remove the pan from the freezer and use the parchment to lift it out of the pan. Cut into 16 squares or 32 rectangles. Store refrigerated for up to 2 weeks. You can eat right away, or refrigerate for about 1 hour for a more solid texture.

Steps:
- Stir butter, sugar & honey over a low heat and stir until sugar dissolves, bring to the boil and simmer gently for 5 minutes.
- Combine remaining ingredients in a bowl, gradually stir in cooled honey mixture and mix thoroughly.
- Press mixture down very firmly into a foil-lined 28cm x 18cm baking tray and bake at 180.C for 20 mins or until golden brown.
- Cool in tin, then cut into bars and store in an airtight container.

Steps:
- Heat oven to 160C/fan 140C/gas 3. Gently heat the sugar, golden syrup and butter in a pan until the sugar and butter have both melted. Stir the oats, raisins, walnuts, seeds and cranberries into the pan until coated in the butter.
- Spoon half the oaty mix into a traybake tin (23 x 23cm or thereabouts). Scatter the apricots over the top, then top with the remaining oat mix. Pack the mix down well and smooth with the back of a metal spoon. Bake for 35 mins or until dark golden. Leave to cool completely before cutting into 16 bars with a sharp knife.

Steps:
- Preheat oven to 325 degrees.
- In a food processor, pulse the first 6 ingredients until finely chopped (it's ok if there are few coarsely chopped pieces).
- Add the honey and sunflower and pulse until starting to combine.
- Pour the mixture into a 9 x 9 inch pan, greased then line with parchment and press down into the pan until completely even.
- Bake for 25 minutes.
- Let the bars completely cool before cutting with a serrated knife into bars.
- Serve.
SESAME COCONUT BARS
These heavenly bars are inspired by a much heavier sweet that I used to make at the dawn of my cooking: Sesame Dream Bars, from "Diet for a Small Planet" by Frances Moore Lappé. Coarsely grind the sesame seeds by pulsing them a few times in a food processor. Do not overprocess or you'll get butter; some whole seeds are fine.

- Make the cookie base. Butter a 9-by-13-inch pan and line with parchment. Butter the parchment.
- Cream the butter with the salt and sugar. Add the sifted flour and blend together. Using your hands, press out the dough over the bottom of the parchment-lined pan in an even layer. Using a fork, make holes all over the surface of the dough (this is called docking). Cover with plastic wrap and refrigerate for 30 minutes. Meanwhile, preheat the oven to 350 degrees Fahrenheit.
- Bake the cookie base for 20 minutes, until it is just beginning to brown. Remove from the heat and cool for at least 5 minutes before topping.
- Sift together the flour and baking powder. Beat the eggs with an electric mixer or whisk until light and thick. Add the honey and vanilla and beat until well blended. Add the flour and baking powder and beat to blend. Add the coconut and sesame seeds and stir together. Spread in an even layer over the cookie base, scraping out every last bit with a rubber spatula. Place in the oven and bake 20 minutes, until the surface is just beginning to color. Remove from the heat and allow to cool before cutting into squares.

- Purée apricots in a food processor with 150ml boiling water and the oats, then scrape the mixture into a bowl. Toast coconut, sunflower seeds and sesame seeds in a non-stick pan over a low heat, then stir into the apricots with the cranberries, hemp powder and chia seeds to make a thick paste.
- Roll into a long log on a sheet of cling film. Wrap tightly, chill, then slice thinly to serve. Will keep in the fridge for 2 weeks.
