ASIAN LONDON BROIL
This Asian London Broil recipe is a delicious make ahead meal made in minutes the night before serving. Marinate the meat with fresh ingredients 12-24 hours before cooking, then grill for 15 minutes. Serve with rice, veggies, and a salad and dinner is complete.

- Place freezer zip lock baggy inside a container (to easily add all the contents of the marinade). Add soy sauce, minced onion, brown sugar, sesame oil, toasted* sesame seeds, ginger, garlic, and red pepper. Mix well, then add in the London Broil. Seal the bag and knead all the ingredients together.
- Marinade for 12-24 hours.
- Once your ready to cook. Preheat grill to a medium-high heat. Clean prior to grilling steak.
- Carefully remove steak from bag, and reserve marinade.
- Grill for 10-16 minutes so that the steak is medium-rare to medium (depending on how you like your steak).
- While steak is cooking add remaining marinade in a sauce pot. Cook on medium heat until the marinade has reduced to half. Remove from heat once it's done reducing.
- Let the steak sit for at least 5 minutes. Once ready, slice the steak against the grain in very thin slices. After the steak is cut drizzle the reduced marinade on top. Serve and enjoy.

- Pour the honey into a 2-cup glass measure. Microwave the honey, uncovered, at high, 30 seconds to make it pour easily.
- Remove the measure from the microwave and add the oil, Worcestershire sauce, soy sauce, lime juice, garlic and onion powder. Whisk to blend well.
- Place the meat in a gallon-size zipper-top plastic bag. Whisk the marinade once more and pour it over the meat. Seal the bag and turn the bag several times to cover the meat with marinade. Refrigerate 8 to 24 hours, turning the bag at least once, if possible.
- Turn on a gas grill to medium high.
- Remove the meat from the marinade and discard the marinade. Grill the meat, covering the grill to the desired doneness, 7 to 10 minutes per side for medium-rare, depending on the thickness. Do not overcook.
- Remove from the grill and slice across the grain. Serve at once, or let stand until ready to serve. Refrigerate leftovers, covered, up to 3 days.

- Whisk together oil, Worcestershire, soy sauce, brown sugar, sesame seeds, ginger, garlic powder and dry mustard. Pour over London Broil in a 9 x 13 pan and marinate for least 24 hours and up to 48 hours. If marinade does not completely cover the meat, turn the meat several times during the marinade period. Bring the meat to room temperature before grilling otherwise you will have to cook it too long and the meat will be tough. Let the meat cook for 15 minutes on one side, 10 minutes on the other. If you are not sure use a meat thermometer and cook until medium. It will continue to cook after you remove it from the grill so don't leave it on too long. While the meat is resting, place a few pats of butter on top. They will melt and give the meat a richer flavor. Slice the meat as thinly as you can against the grain. If you totally screw up and cook the meat too long and it's tough, melt some butter and hit it with a bit of soy sauce and drizzle it over the meat, no one will ever know.
SESAME MARINATED LONDON BROIL
This is a perfect summer dinner for out on the grill. Can be made ahead and even frozen in the marinade to cook later.

- Mince the garlic to a paste with salt and in a blender blend with the salt, red wine, balsamic vinegar, soy sauce and honey.
- In a heavy-duty sealable plastic bag, combine London broil with marinade. Seal bag, pressing out excess air, and put in a shallow baking dish. Marinate steak, chilled, turning occasionally, at least 4 hours and up to 24.
- Bring steak to room temperature before grilling. Remove steak from marinade, letting excess drip off, and grill on an oiled rack set 5 to 6 inches over glowing coals, 7 to 9 minutes on each side for medium-rare. Transfer steak to a cutting board and let stand 10 minutes.

- Heat sesame oil in a skillet over medium-high heat. Cook and stir sesame seeds in hot oil until golden brown, about 1 minute. Transfer seeds and oil immediately to a large glass or ceramic baking dish.
- Stir onions, soy sauce, lemon juice, sugar, garlic, and peppercorns into sesame mixture until marinade is evenly combined. Place steak into marinade, turning to coat all sides. Cover baking dish with plastic wrap and refrigerate, turning steak often, for at least 4 hours or up to overnight.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Cook the steak on the preheated grill until meat starts to firm and turns reddish-pink and juicy in the center, about 10 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C) for medium rare. Transfer steak to a plate, cover with aluminum foil, and let rest for about 10 minutes. TEQUILA MARINATED LONDON BROIL
Steps:
- In a blender, combine all ingredients except London broil. Process until smooth. Place London broil in a non-reactive container and pour marinade over top, turning it to coat. Refrigerate for at least 4 to 6 hours before cooking.
- Preheat grill to high.
- Place London broil on white hot grill, and cook for 4 to 5 minutes on each side, flipping the steak 4 times (cooking time will vary with thickness of the steak).
- Let steak rest for at least 10 minutes before thinly slicing against the grain of the meat and on a bias for wide but thin slices. Garnish with fresh cilantro.
MARINATED LONDON BROIL
Steps:
- Mix shallots, soy sauce, olive oil, thyme, hot sauce and lemon juice together in a non-reactive broiling pan. Score the steak, place it in the pan and turn in the marinade. Marinate for at least 2 hours at room temperature or up to 24 hours refrigerated. If refrigerated, turn the steak in the marinade occasionally. Drain off marinade and put into a saucepan. Place steak under broiler at 1 inch from the heat for 3 to 4 minutes on each side for rare, for 4 to 5 minutes on each side for medium. Leave the broiler door slightly ajar, so the heat stays on and air circulates. Meanwhile bring marinade to the boil. Remove from heat. Carve the meat in thin diagonal slices across the grain. Arrange the slices on a warm platter. Pour the carving juices and the marinade over the meat. Decorate with cress.

- Place first five ingredients in a gallon-size zip-lock bag.
- Diagonally score the London broil.
- Place the meat in the bag of marinade.
- Refrigerate at least 8 hours, turning the bag occasionally.
- Grill over medium-hot coals.

- Meat will continue to cook once removed from the grill, and should still be pink when sliced.

BROILED SESAME SALMON
My mom clipped this recipe out of the Chronicle years ago and it's been a family favorite ever since! It's SO easy and quick to make and is SO delicious that even people who think they don't like salmon will LOVE it. Just remember not to over-cook the salmon. It should be dark pink and slightly translucent in the center. I've found if I take it out of the oven when it still looks only half done, it's perfect by the time I serve it.

- To make marinade, in a small bowl, combine soy sauce, vinegar, syrup, lemon juice, and ginger; whisk to blend.
- Place salmon pieces in a nonreactive (not aluminum) container.
- Pour marinade over them and turn to coat. Refrigerate 1 hour.
- Preheat broiler. Spray a nonstick broiler pan with olive oil.
- Place salmon, skin side up, on pan and transfer marinade to a small saucepan.
- Broil salmon 4 inches from heat for 4 minutes. Meanwhile, bring marinade to a boil; simmer 2 minutes.
