COFFEE BBQ SAUCE
Coffee is the secret ingredient to this homemade barbecue sauce, which can be used as a marinade or finishing sauce for grilled or baked pork, beef, or chicken.

Steps:
- Gather the ingredients.
- Put espresso or coffee, ketchup, vinegar, brown sugar, onion, garlic, chile peppers, dry mustard, Worcestershire sauce , cumin, and chili powder in a small pot, stir them together and bring to a simmer over medium-high heat.
- Lower the heat so the mixture is just simmering and let simmer for 20 minutes.
- Remove the pot from the heat, let the mixture cool.
- Puree in a blender.

BLACK COFFEE BARBECUE SAUCE
It's great to know folks like this sauce so much! I wish I could take credit for it but it was adopted after the original member left. Thank you, all, just the same. I have made the recipe with regular brewed coffee but highly recommend the espresso. In a pinch use strong instant if you have nothing else. The acid of the coffee balances the sweetness of the other ingredients.

SMOKY CHILLI SAUCE
Make this smoky chilli sauce to go with homemade doner kebabs, burgers or hotdogs. Packed with garlic and spicy heat, it promises to add punch to your dishes

Steps:
- Remove the stems from the chillies, then tip onto a sheet of foil with the garlic cloves, a drizzle of olive oil, caster sugar and some salt. Lift the sides of the foil up and scrunch to close.
- Grill on the barbecue (or roast at 160C/140C fan/gas 3) for 30 mins until the garlic is soft. Tip into a large pestle and mortar or food processor with 1 tbsp olive oil, and crush or blitz to a chunky sauce. Will keep in the fridge for up to two days.

CHILE-COFFEE BBQ SAUCE

- Split, stem, and seed the chiles. Toast the chiles in a dry skillet over medium-high heat, turning and flattening with a spatula, until fragrant, about 3 minutes. Put the chiles in a heatproof bowl, cover with very hot water, and set aside until soft, about 30 minutes. Drain, reserve soaking liquid, chop chiles roughly, and set aside.
- While the chiles soak, char the onion and garlic in the same dry skillet over medium heat until the onion blackens slightly and garlic softens in the skin, about 8 minutes. Cool, squeeze the garlic out of the skin, and put in a blender with chiles and onion. Puree to a paste, adding soaking liquid as needed (about 3/4 cup) to help the mixture break down.
- Heat the oil in the skillet over medium-high heat. Add the chile mixture and cook, stirring, until thick and fragrant, about 4 minutes. Add the tomato puree, coffee, sugar, 1 tablespoon salt, oregano, cloves, and cumin. Adjust the heat to maintain a gentle simmer and cook, stirring occasionally, until slightly thickened, about 15 minutes.
- Stir in vinegar and season with salt to taste.

- Heat a large nonstick skillet over medium-high heat.
- Coat pan with cooking spray.
- Add onions and garlic to pan; saute 5 minutes. Add chiles; cook 2 minutes. Add broth and bring to a boil.
- Cover, reduce heat and simmer 20 minutes or until chiles are tender. Cool slightly.
- Place half of the chile mixture in a blender.
- Remove center piece of blender lid (to allow steam to escape); secure blender lid on blender. Place a clean towel over opening in blender lid (to avoid spills). Blend until smooth.
- Pour into a medium bowl and repeat procedure with remaining chile mixture.
- Heat 1 1/2 tsp oil in a Dutch oven over medium-high heat. Add beef and cook 7 minutes or until browned. Remove from pan.
- Heat remaining 1 1/2 tsp oil in pan. Add pork and cook 7 minutes or until browned.
- Add chile mixture and beef to pan.
- Stir in tomato puree and remaining ingredients except beans; bring to a boil.
- Partially cover, reduce heat and simmer 1 hour or until tender, stirring occasionally.
- Stir in beans; cook 15 minutes.
- Garnish with sour cream and chopped green onions, if desired.

- Combine espresso and chiles in a medium saucepan over medium heat. Bring to a simmer, and cook until reduced by a little more than half and chiles are soft, 5 to 7 minutes.
- Add barbecue sauce, and simmer for 5 minutes. Let cool, and refrigerate. (Discard chiles if desired. Leaving chiles in the sauce will add flavor and heat. Remove chiles when desired flavor is achieved. You can also puree them, seeds optional, with the sauce in a blender for the spiciest effect.)
