CHICKEN AND ZUCCHINI STIR-FRY
Shake up your basic chicken stir-fry with the addition of thyme, basil, zucchini and tomatoes.

Steps:
- Whisk together the lemon juice and 2 tablespoons of the oil in a large bowl; season with salt and black pepper. Add the chicken, toss well and set aside at room temperature for 15 minutes.
- Drain the chicken and pat dry. Heat a wok or large skillet over high heat. Add the remaining 2 tablespoons oil and then the chicken and thyme. Cook, stirring until just cooked through, about 4 minutes. Use a slotted spoon to transfer the mixture to a large bowl. Add the bell pepper to the pan and quickly cook, stirring, until softened, 1 to 2 minutes. Transfer the bell pepper to the bowl with the chicken. Add the zucchini to the pan and cook, stirring, until crisp-tender, about 2 minutes. Transfer to the bowl with the chicken. Add the tomatoes, garlic, scallions and red pepper flakes to the pan and cook, stirring, until lightly browned, about 2 minutes more. Return the chicken and vegetables to the pan; season with salt and black pepper. Cook, stirring, until well combined and warmed through, about 2 minutes.
- Remove from the heat and stir in the basil. Serve over rice.
CHICKEN ZUCCHINI STIR FRY
Steps:
- In a large bowl add the soy sauce, chicken broth, cornstarch, mirin, sugar, and sesame oil and whisk until everything is completely dissolved.
- In a large skillet add one teaspoon canola oil on medium high heat and cook half the chicken until just cooked through, about 2-3 minutes on each side. Set aside on a plate.
- Repeat with the second half of the chicken and an additional teaspoon of oil. Remove the chicken to the plate.
- Add in the remaining 1 teaspoon oil, garlic and ginger and cook for 30-45 seconds until very fragrant but not browned.
- Stir the garlic and ginger well and add in the sauce, whisking well. Cook the sauce 1 minute, then add in the zucchini and cook for 2 minutes more, until thickened and the zucchini is tender crisp. Remove from heat, add in the chicken and stir well to coat. Garnish with sesame seeds and scallions if desired.

- Heat large skillet on medium heat. Add oil, then garlic. Cook garlic until translucent and fragrant, then add chicken.
- Cook chicken for about 2 minutes, then add sesame seed oil, soy sauce, rice vinegar and oyster sauce. Cook mixture for about another 5 minutes or until chicken is cooked. Add zucchini and cook until tender, about 1-2 minutes.
- Before serving, sprinkle with sesame seeds, ground black pepper and chopped cilantro.

- Combine soy sauce, orange juice, sesame oil, stevia powder, garlic powder, and ginger for teriyaki dressing in a small saucepan. Bring to a boil over medium-high heat, stirring constantly; continue cooking until the mixture thickens slightly. Remove and set aside.
- Heat a large skillet over medium-high heat. Add vegetable oil and heat until shimmering, 1 to 2 minutes. Add chicken and garlic; stir-fry for 2 to 3 minutes. Add broccoli and continue to stir-fry, 4 to 6 minutes. Add bamboo shoots and bell peppers; cook for an additional 4 to 6 minutes.
- Carefully pour the teriyaki dressing into the skillet (watch for splattering); cook until chicken is no longer pink in the center and juices run clear, and the vegetables are tender, about 5 minutes more.
- Remove from heat and stir in green onion and sesame seeds, reserving some of each for garnish. Serve immediately over cooked white and wild rice with the reserved green onions and sesame seeds.

- Mix vinegar, soy sauce, tomato ketchup, orange juice and honey together. Add the cornflour and stir until well combined.
- Heat the oil in a non-stick frying pan and stir fry the chicken strips for 3-4 minutes. (If you don't use a non stick pan the chicken will stick to the pan).
- Add the vegetables and stir fry for 4-5 minutes.
- Add the cornflour mixture and bring to a boil.(Another tip-Don't use an overly large pan like I did or you will find the cornflour mix spreads too thin and there won't be enough liquid cook the vegetables.).
- Meanwhile prepare the noodles according to the packet instructions, drain and add to the pan along with the sesame seeds. Mix well.

- Beat egg white lightly in bowl. Add 1 tsp cornstarch, salt, sesame oil and dash pepper. Mix and add chicken. Marinate 30 minutes.
- Combine 1 teaspoons cornstarch with chicken stock, sugar and dash pepper, mix and set aside.
- Heat 2 Tbs. oil in wok. Add zucchini and stir-fry until tender-crisp, 3-5 minutes. Remove from wok and cover to keep warm. Add 1/4 cup oil to wok and heat. Add chicken and stir-fry until chicken is about done, 4-5 minutes. Return zucchini to wok. Stir chicken stock and add to wok, stir-frying until sauce thickens.
- Serve immediately with rice.

EASY SESAME CHICKEN STIR-FRY
There is no sauce to this recipe, and you may omit the sesame oil if desired, the chicken is still great with just the added soy sauce, but I suggest to increase if you are not using the sesame oil --- unless you have a huge wok you will need to make this in two batches so the chicken will cook evenly --- this is quick and very easy to make, to save time you may slice the breasts up 24 hours in advance --- my family like lots of heat so I most always add in 1 teaspoon crushed chili flakes, do not make this omitting the cornstarch it will not be the same --- all ingredients may be adjusted to taste, serve with cooked rice or noodles :)

- Place the chicken cubes in a large bowl.
- Sprinkle cornstarch over the chicken; using clean hand toss together to coat the chicken with the cornstarch until well coated.
- Heat 2 tablespoons in a wok over high heat.
- Add in HALF of the chicken, then sprinkle with about 1/2 teaspoon seasoned salt and black pepper; stir-fry for about 5 minutes or until JUST cooked (do not overcook the chicken, it will cook in very little time, I use 2 smaller heat-proof spatulas for stir-frying).

Steps:
- Toss the chicken with cornstarch.
- Heat the canola and sesame oil together in the pan.
- Add chicken and cook on medium-high until brown on both sides, about 2-3 minutes on each sides.
- Remove chicken from the pan, and turn the heat up to high.
- Add in the mushrooms and zucchini, cook until they start to brown.
- Add the garlic and ginger and cook/stir for 30 seconds.
- Cook for another 2-3 minutes as vegetable soften a little.
- Add the chicken back in and stir to coat.
- Add in the soy sauce, sugar, and wine vinegar and stir to coat.
- Serve with rice.
