SENSATION SALAD
Fresh lemon, garlic, and oil vinaigrette dressing tossed with chilled greens and Romano cheese create a salad that's sensational.

Steps:
- Squeeze fresh lemon juice.Mince fresh garlic.Combine all ingredients into blender and blend until smooth. Pour in a jar with tight fitting lid and refrigerate. (Dressing will keep in refrigerator for 2 weeks.)
- Chop Romaine into small bite-size pieces and place in medium-large bowl. Chop parsley and add to bowl. Grate cheese and set aside.
- When ready to serve, shake dressing well to incorporate; pour 1/2 cup dressing over salad in bowl and toss well to coat. Refrigerate at least 15 minutes before serving for a crisp/chilled crunch.
- Plate tossed salad on individual plates then top with Romano or Parmesan cheese.

Steps:
- Place the chicken breasts and Italian dressing into a resealable plastic bag. Mix together to coat the chicken with the dressing, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
- Preheat an outdoor grill for medium-high heat, and lightly oil grate.
- Remove the chicken from the marinade, and shake off excess. Discard the remaining marinade. Grill the chicken breasts until no longer pink in the center, or to an internal temperature of 165 degrees F (74 degrees C), about 3 minutes per side. Set aside to cool while preparing the ingredients for salad, then dice.
- Toss the diced apple with the lemon juice in a large mixing bowl until well coated; drain and discard any excess lemon juice. Place the lettuce into the mixing bowl, then sprinkle with the diced chicken, avocado, feta cheese, strawberries, and cranberries. Gently toss the salad with the balsamic vinaigrette, and serve immediately.

- Mix the ingredients for the Dressing together in a jar or a small bowl and set aside.
- Trim the hard, white centers from the lettuce. Wash and dry the lettuce, then tear or chop it into bite size pieces and place on a large platter or in a large salad bowl.
- Sprinkle chopped parsley and Romano cheese on top of the lettuce.
- Sprinkle on the blue cheese (if using).
- Shake or whisk the dressing to mix well and ladle as much as you like on the lettuce.
- Toss the lettuce, cheese and dressing until all the lettuce leaves are well coated.

Sensation Salad originated decades ago at a now-closed restaurant in Baton Rouge, Louisiana, and many home cooks have since adopted it as a family recipe. Bright lemon and a kick of garlic, Worcestershire sauce, and Dijon mustard define the dressing, and a heavy-handed grating of salty, hard cheese like Parmesan or Pecorino Romano tops it off. My grandmother, Mama Te, often made her version of Sensation Salad for barbeques, serving it with chicken, rice pilaf, and garlic bread. This easy, everyday salad also pairs well with red meat, seafood, and Italian dishes. Top each serving more grated Parmesan if desired.
