APPLE HONEY MUSTARD CHICKEN

- Heat grill. In small saucepan, combine all glaze ingredients; mix well. Bring to a boil over medium heat. Boil 1 minute, stirring constantly.
- When ready to grill, lightly brush glaze on one side of each chicken breast half. Place chicken, glaze side down, on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Lightly brush glaze over chicken; cook 5 to 8 minutes.
- Turn chicken; cook an additional 5 to 8 minutes or until fork-tender and juices run clear. Bring any remaining glaze to a boil; serve with chicken.

- Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius). Coat a large Pyrex baking dish or nine- by 13-inch pan with nonstick cooking spray.
- In a bowl, combine the ingredients for the honey mustard; set aside.
- Place sliced onions and half the sliced apples into the pan. Top with chicken pieces. Sprinkle chicken liberally with salt and pepper.
- Use a spoon to coat all the chicken pieces with the honey mustard. Sprinkle the breadcrumbs over the honey mustard till the chicken is fully coated.
- Place remaining apple slices in the little nooks and crannies all around the chicken.
- Spray the breadcrumbs with nonstick cooking spray.
- Cover the baking dish tightly with foil. Bake for one hour and 20 minutes. Remove foil; continue baking until the top is crispy and the chicken is cooked to your taste. Serve hot and enjoy!

- Mix apple jelly, honey, mustard, cinnamon, and salt together in a bowl. Brush chicken breasts with glaze.

- Chop any large potatoes in half.
- Place potatoes in the bottom of a slow cooker. Add chicken thighs on top of potatoes, and spread apples and onion over top.
- Mix chicken broth, honey, applesauce, garlic, salt, cinnamon, cumin, and pepper together in a bowl; pour over chicken mixture.
- Cook until chicken is no longer pink at the bone and the juices run clear, 4 to 6 hours on Low, or about 3 hours on High. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil.
- Remove chicken thighs from the slow cooker and place, skin-side up, on the prepared baking sheet.
- Broil in the preheated oven until skin is crisp, 3 to 5 minutes. Serve with potatoes, apples, onions, and sauce.

- Whisk cider, cornstarch, mustard, honey, salt and pepper (to taste) in a bowl. Set aside.
- Spread bread crumbs on a piece of wax paper, lightly coat chicken with crumbs.
- In a large non-stick skillet, heat the oil and add the chicken breasts. Cook over medium heat until golden brown on one side, about 3 minutes. Turn chicken, add apples, and cook until browned on the other side.
- Add chicken broth, cover and simmer until chicken is tender, about 15 minutes.
- With slotted spoon, remove chicken and apples to serving plates.
- Whisk cider mixture again and add to skillet. Cook and stir over high heat until lightly thickened and bubbly, 1 to 2 minutes.
- Spoon over chicken and apples, sprinkle with parsley.
- Serve with rice. Serves 4.

- Core and cut the apples into 1/2″ slices. Remove both ends off the onion, and cut it in half from the top to the bottom. Peel away the tough outer layer, and lay both halves flat side down. Then cut across the rounded tops to create 1/4″ thick half moon slices.
- Preheat a large 15-18″ oven proof skillet over medium high heat until the pan is hot but not smoking. Add the oil to the pan and swirl to evenly coat the bottom. Then add the chicken thighs, skin side down, and lower the heat to medium. Cook until the skin is golden brown, then turn them over and brown the other side, 8 minutes total.
- Remove the chicken thighs from the pan, and turn off the heat. Add the sliced apples and onions to the pan, and place the chicken thighs evenly around skin side up, nestling them down into the apples and onions. Pour the chicken stock into the pan.
