SENSATIONAL SPINACH
This spinach is sensational! The sour cream really helps keep the dish from being dry. The soup mix adds a savory punch of onion flavor. This is a great side dish for any time of the year, but is impressive enough for the holidays. I am almost positive I'll never eat plain steamed spinach again.

Steps:
- 1. Cook spinach in boiling salted water, or microwave, and drain.
- 2. Blend together the remaining ingredients and combine with spinach.
- 3. Put mixture into greased casserole.
- 4. Bake at 350* for 30 minutes.
SENSATIONAL SPINACH PIE
This is a really yummy recipe - it has my favorites - spinach and cheese! It is a very filling meal. I cannot remember where I got the original recipe from, but have been making it for years. It is hard for me to just eat one piece! I use Owen's brand Italian sausage which is packaged like breakfast sausage; if you use regular Itialian sausage, remove casings, crumble and cook. I also have been unable to find Herbed Soft Cream cheese, so have been substituting the Garlic&/onion.

Steps:
- Preheat oven to 400 degrees.
- Cook sausage and drain.
- Mix cooked sausage, cheeses, thawed spinach, 2 eggs, and hot pepper sauce until well blended.
- Place pie crust in 10 inch deep dish pie plate.
- Place filling inside one pie crust.
- Place other pie crust on top of filling.
- Seal crusts and flute ends.
- Beat remaining egg and brush on top of pie crust.
- Bake 35-40 minutes, or until pastry is lightly browned.

SENSATIONAL SPINACH STUFFED SHELLS
A recipe modified from the back of the Barilla shells box. My favorite change is using Ricotta instead of ground beef. Yumm.

Steps:
- Cook shells according to package directions.
- Meanwhile, in a large skillet over meium-high heat, cook oil, spinach, onion, and garlic; add about 1/2 cup of the pasta water (or more if needed) so the ingredients will blend easily. Cook until the onion is soft, about 5 minutes. Add seasonings. Turn off heat and let mixture start to cool. Stir in Parmesan, Ricotta, and eggs.
- Pour 1 cup of pasta sauce in 13x9-inch dish.
- Fill shells with spinach mixture. I used a 1 1/2" cookie scoop. Pour remaining sauce over or around shells; sprinkle with mozzarella cheese. Cover with foil and bake at 350 for 30 minutes or until heated through. Or cover with plastic instead of foil and microwave 8 minutes or so on HI.

SIMPLE BUT SENSATIONAL SPINACH AND FETA QUICHE
We are usually not big fans of quiche, but we loved this one after tasting it at a friend's house. The flavors really blend well together. Note: This quiche is heavy on the spinach, that is how we like it, if you do not care as much for spinach and want more of an eggy filling, you may use less spinach. If you add an additional egg, the filling will overflow. I make this recipe a few times a month and find it fills a regular pie shell perfectly as written below.

- Preheat oven to 350 degrees F.
- Line instant pie shell with a SINGLE layer of the Muenster cheese slices.
- Carefully press all of the water out of the spinach and place it in a large mixing bowl. If you prefer, you can use just half the amount of spinach called for in the recipe, we like a lot of spinach so we use the whole box.
- Whisk or blend the cream cheese until it is smooth and has no lumps, add eggs, Parmesan cheese (Note: if you use pre-grated parmesan you may get a gummy texture to the interior of your quiche because of the commercial non-clumping agents put into pre-grated cheese), salt, pepper and garlic powder to taste; stir well.
- Pour into pie shell and top with crumbled feta. Bake in preheated oven for 35 minutes or until feta is lightly golden. NOTE: If you are using a frozen shell, bake the quiche on a lower rack in the oven an add 10-15 minutes to the cooking time. Watch crust edges closely, and if they become too brown, cover edges with foil to finish baking. For quicker cooking, you may choose to blind bake the crust first.
- Allow quiche to set up for 10 minutes before serving.

SENSATIONAL SPINACH-BACON BAKE
Puffs up while baking to a light topping; with delicious layers of spinach, bacon, and sour cream. A weeknight dinner. From America's Favorite Casseroles with modifications. Note: Time to prepare does not include thawing the spinach.

- Preheat oven to 350 degrees F.
- Spray 2 quart baking dish with cooking spray.
- Cook bacon over medium heat until crisp; drain on paper towels; and crumble.
- Saute onions in bacon drippings to soften; drain well.
- Set aside.
- Combine sour cream, egg yolks, flour and pepper in large bowl; set aside.
- Beat egg whites in medium bowl with mixer at high speed until stiff peaks form.
- Stir 1/4 of whites into sour cream mixture; then fold in remaining whites.
- Arrange half of spinach in prepared dish. Top with half of sour cream mixture.
- Sprinkle 1/4 cup of cheese over sour cream mixture.
- Sprinkle with bacon and onions. Repeat layers, ending with remaining 1/4 cup cheese.
- Combine bread crumbs and butter; sprinkle evenly over cheese.
- Bake, uncovered for 30-35 minutes or until egg mixture is set and top is golden.
- Let stand 5 minutes before slicing into wedges to serve.
- Optional: Garnish with chopped chives and/or chopped Roma tomatoes.
