Chocolate Peanut Clusters are candies made with melted chocolate chips and loaded with roasted peanuts for a sweet treat any time!

8 ounces (227 g) semi-sweet chocolate chips
1½ cups (219 g) roasted, salted peanuts

Steps:

  • Line a large baking sheet with parchment paper. Set aside.
  • Add chocolate to a large microwave-safe bowl and microwave on high in 20-second intervals, stirring after each interval, until melted and smooth.
  • Set the melted chocolate aside to cool slightly (about 3 minutes).
  • Fold the roasted peanuts into the melted chocolate. Mix until fully coated.
  • Drop 1 spoonful of the mixture onto the lined sheet. Repeat with the remaining mixture.
  • Refrigerate at least 20 minutes, or until set.
  • Refrigerate the chocolate peanut clusters in an airtight container for up to 1 month.

1 1/4 cups semisweet chocolate chips
1 1/4 cups peanut butter chips
4 teaspoons vegetable shortening
4 cups cereal squares (such as Chex)
1/2 cup salted roasted peanuts, roughly chopped
White nonpareils, for decorating

Steps:

  • Line a baking sheet with parchment paper. Combine the chocolate chips, peanut butter chips and shortening in a large heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water). Stir until melted and smooth, 2 to 4 minutes. Remove the bowl from the pan and add the cereal and peanuts. Stir with a rubber spatula until evenly coated.
  • Spoon the cereal mixture into clusters (about 2 tablespoons each) onto the prepared baking sheet; sprinkle with nonpareils. Refrigerate until firm, about 30 minutes.

1 tablespoon shortening (NOT butter, margarine, spread or oil)
1 cup unsalted dry roasted peanuts

Steps:

  • Place both chips and shortening in small microwave-safe bowl. Microwave at High 1 to 1 1/2 minutes or until chips are melted and mixture is smooth when stirred.
  • Stir in peanuts.
  • Drop by teaspoons into 1-inch diameter candy or petit four papers. Refrigerate until firm, about 30 minutes. Store tightly covered in refrigerator.

1 package (12 ounces) semisweet chocolate chips
1 package (11-1/2 ounces) milk chocolate chips
5 cups salted dry roasted peanuts

Steps:

  • In a heavy saucepan over low heat, cook and stir candy coating and chips until melted and smooth. Cool for 10 minutes; stir in peanuts., Drop by rounded tablespoonfuls onto waxed paper-lined baking sheets. Refrigerate until firm, about 45 minutes.

12 ounces chocolate chips
12 ounces butterscotch chips
16 ounces Spanish peanuts

Steps:

  • Prepare two baking sheets by lining them with wax paper.
  • Melt the bags of chips in a saucepan over medium heat, adding the Spanish peanuts once the mixture has melted.
  • Stir the peanuts and coat completely.
  • Drop by teaspoonfuls onto the wax paper.
  • Refrigerate until solid, at least two hours.

This candy is a must for gifts, parties, or special occasions, especially if your time is limited. NOTE: The butterscotch chips will NOT melt. When they are soft, they look shiney. Do not overcook, as the chocolate will burn. You may use more peanuts if desired. I usually throw in more to make sure the last pieces have some nuts in them.

1 (6 ounce) package NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels (1 cup) or 1 (6 ounce) package milk chocolate chips (1 cup)
1 (12 ounce) package butterscotch chips
1 (6 ounce) can salted peanuts (1 - 1 1/2 cups)

Steps:

  • Microwave chocolate and butterscotch chips in a 2 quart glass dish for 5-6 minutes on 60% power, or until melted.
  • Watch carefully!
  • (They don't actually melt, but look very shiny).
  • Add peanuts and mix well.
  • Drop by tablespoons on waxed paper.
  • Cool in refrigerator.
  • Store in covered container in refrigerator.
  • I have used different chocolate chips other than Toll House, and they do not work well.

These are not ordinary peanut clusters. They are dry roasted peanuts coated with a rich, smooth mixture of chocolate and peanut butter and then lightly sprinkled with fine sea salt. I used Fleur de Sel as the finishing salt, but any finely ground sea salt would do. My husband and I had received the Fleur de Sel as a gift and were just waiting for the perfect opportunity to use it. This was certainly it!

2 cups chocolate chips, semi-sweet
2 tablespoons peanut butter
2 cups peanuts, dry-roasted, lightly salted
1 teaspoon sea salt, finely ground (I used Fleur de Sel, but any finely ground sea salt would do.)

Steps:

  • Line a medium cookie sheet with waxed paper or parchment paper. Set aside.
  • Into a medium, microwave-safe glass bowl, place chocolate chips and peanut butter. Melt 30 seconds at a time, stirring in between, until melted and smooth.
  • Stir in peanuts until completely coated with chocolate.
  • Spoon by teaspoonfuls onto the waxed paper lined cookie sheet. Sprinkle each cluster with salt. Refrigerate for 2 hours or overnight until completely solid.
  • Remove clusters from waxed paper and store in an air-tight container at room temperature for one week.
