SECRET KISS COOKIES/RUSSIAN TEA CAKES WITH A TWIST
Nana Devine made her Pecan Balls as she called them since I couldnt pronounce the polish word she used lol...my mother in law called them russian tea cakes and I have seen them listed as Mexican wedding cakes too. The recipes all seem basically the same, maybe a tad more of this or a bit less of that. My favorite way to eat them...

Steps:
- 1. Beat butter, granulated sugar and vanilla in large bowl until fluffy.
- 2. Add flour and walnuts and beat on low speed of mixer until well blended.
- 3. Cover and refrigerate 1 to 2 hours or until dough is firm enough to handle.
- 4. Heat oven to 375°F.
- 5. Shape about 1 tablespoon of dough around each hersheys kiss and roll to make ball. (Make sure chocolate is completely covered) Put cookies on ungreased cookie sheet.
- 6. Bake 10 to 12 minutes or until cookies are set but not brown.
- 7. Cool slightly. While cookies are still slightly warm, roll them in powdered sugar. Cool completely. (I roll mine again after cooled)
- 8. If you prefer you can mix together cocoa and powdered sugar and roll them in that.

- Preheat the oven to 325 degrees F.
- Cream butter in a large mixing bowl. Add the vanilla then gradually add the 1/2 cup confectioners' sugar, beating until light and fluffy. Sift the flour, measure, then sift again with the salt. Add gradually to the butter mixture. Add the pecans and mix well.
- Shape the dough into 1-inch balls and place 2 inches apart on ungreased baking sheets. Flatten slightly using the bottom of a glass, then bake for 20 minutes, or until edges are very lightly browned. Remove the cookies from the baking sheets and roll in powdered sugar while still hot. Cool on wire racks and roll cookies again in powdered sugar before serving.
- Once they are completely cooled, cookies may be stored in airtight containers for up to 1 week.

Refrigerate dough until firm, 2-3 hours. , Preheat oven to 375°. Shape into 1-in. balls. Flatten balls and place a chocolate kiss in the center of each; pinch dough together around kiss. Place 2 in. apart on ungreased baking sheets. , Bake until set but not browned, 12 minutes. Cool 1 minute; remove from pans to wire racks. , Sift together 2/3 cup confectioners' sugar and cocoa. While cookies are still warm, roll half in cocoa mixture and half in remaining confectioners' sugar. Cool completely. Store in an airtight container.

SECRET KISS COOKIES
This cookie recipe is sooooooo good. The finely chopped walnuts add a richness to the cookies. The original recipe called for rolling these cookies in powdered sugar after they cool down, but honestly these cookies don't need the powdered sugar and are certainly less messy to eat without the sugar.

- In a large bowl, cream together the butter, sugar, and vanilla until light and fluffy. Gradually add the flour and mix well. Fold in the walnuts. Refrigerate the dough 2-3 hours until firm.
- Shape into 1 inch balls. Flatten the balls and place a candy kiss in the center of each. Pinch the dough together around the kiss. Place 2 inches apart on an ungreased cookie sheet.
- Bake at 375 degrees for 12 minutes or until set but not browned. Cool for one minute and then remove from cookie sheet to wire rack.
- After the cookies have cooled, you can roll them in powdered sugar if you wish. I prefer them without the extra sugar.

RUSSIAN TEA CAKES (NO NUTS)
These are bite-size shortbread-type cookies that are so simple and so popular. They're frequently the first cookie people will eat from my Christmas cookie tray. My mom made these every year for Christmas. She'd roll the dough into balls and we got to dunk the tops in green or red sugar crystals. Now I get to continue the tradition with my sons. My sister makes these for other holidays as well and changes the sugar color accordingly. The recipe is my mom's variation on the recipe from the old Betty Crocker "Cooky Book."
