TEX-MEX SEASONING MIX
This spice mix goes together quickly and makes a great little gift to include with holiday greetings for neighbors and coworkers. They can mix it into chili and scrambled eggs, use it to season tacos and burritos, or add zip to a can of refried beans. -Tammy Rose, Danville, Arkansas

TEX MEX SEASONING
A batch of homemade Tex Mex Seasoning is the best shortcut to making tacos, burrito bowls, fajitas, soups, or other Southwestern-style dishes. Keep a batch of this in your pantry and use it in any Southwestern or Mexican recipe. NOTE: This makes enough for any recipe that makes 4 servings, but use the slider below (next to "Servings") to easily adjust the measurements so you can make a big batch to store for future recipes.

Steps:
- Salt is always optional in homemade seasoning. Feel free to add it to the blend now or wait and add it, to taste, when you make a recipe later. (Just don't forget it entirely. Salt will bring out the flavors in the recipe you're making and will allow this seasoning blend to really shine.)
- Combine all ingredients in a bowl. Store in an airtight container for up to 6 months.

SEASONING ESSENTIALS: TEX MEX SPICE

Steps:
- 1. PREP/PREPARE
- 2. If kept in a cool dry place (the pantry comes to mind), most spices will last up to a year.
- 3. If you have an old glass spice bottle with a shaker top, that would be an ideal storage container.
- 4. Gather your ingredients (mise en place).
- 5. All of the ingredients have a ground consistency, except 3: The dehydrated onions, dried oregano, and the red pepper flakes. So, before mixing all the ingredients together, place those 3 into a spice grinder, or mortar, and grind until they are the same consistency as the other spices.
- 6. Mix all the ingredients together, and store in a bottle or jar with a tight-fitting lid.
- 7. PLATE/PRESENT
- 8. I use this in a lot of different recipes: • With chicken, beef, or chicken tacos • Shake a bit over a taco bowl • As a spice topping on mashed, or smashed potatoes • Sprinkled over a queso cheese and chili dip • Add to mac & cheese for a South-of-the-Border twist And, leave a shaker full of it on the table for Taco Tuesdays Enjoy.
- 9. Keep the faith, and keep cooking.

- Allspice. Allspice comes from evergreen trees that grow in the rainforests of South and Central America, and gets its name from its aroma: a blend of cinnamon, nutmeg, cloves and ginger.
- Bay Leaves. The bay leaf is a versatile and worldwide seasoning tool. Add a leaf or two to a soup, stew or sauce to lend an extra punch of flavor. Just don’t forget to remove the leaf before serving.
- Black Peppercorn. Although it’s tempting to skip a step and buy pre-ground black pepper, you’re much better off investing in a simple peppermill and whole black peppercorns.
- Cayenne. Cayenne pepper is another versatile and widely used spice. If you’ve ever watched Food Wishes, you’ve seen it used in everything from chocolate desserts to gumbo.
- Chili Powder. Chili powder, like cayenne, is a spice made from ground hot peppers. It is a popular ingredient and source of heat and flavor for Chinese, Indian, Korean and Tex-Mex meals.
- Cinnamon. Cinnamon — the inner bark of a tropical evergreen — is a popular baking spice that is also used in Middle Eastern and North African dishes. While you shouldn’t attempt to get your dose of cinnamon from the cinnamon challenge, studies have shown that the spice has a number of health benefits.
- Cloves. Dried cloves are very strong in flavor, so use sparingly. Due to their intensity, cloves are often pressed into roasts, just like nails, to provide flavor while cooking.
- Cream of Tartar. Although it sounds like you might be adding tartar sauce to your baking (ew), in actuality cream of tartar is an acidic residue that is used in popular desserts such as meringues and snickerdoodles.
- Cumin. Cumin is an extremely popular spice in Mexican, Spanish, Indian and Middle Eastern dishes. Use it for marinades, meat rubs, soups, salsas and other dishes.
- Garlic. Fresh pressed garlic is an aromatic and delicious addition to dishes of all cuisines. If you don’t wish to press fresh garlic for each meal, you can buy it pre-pressed by the jar.

- — Bay Leaves Whole. Goes well in simmering sauces like tomato sauce or even in hearty white bean and vegetable soup.
- — Medium Ground Black Pepper. Another must in cooking. It adds a hint of mild spiciness to food.
- — Cumin. This spice has such a distinct flavor, I love it in tomatillo salsa. It’s earthy and slightly citrusy and a staple in Latin American, Middle Eastern, North African, and Indian cuisines.
- — Fox Point. I particularly love all of the flavors in this Fox Point Seasoning by Penzeys Spices. It’s a hand-mixed blend of salt, freeze-dried shallots, chives, garlic, onion and green peppercorns.
- — Pasta Sprinkle. Great for any Italian meal, Pasta Sprinkle by Penzeys Spices blends California basil, Turkish oregano, French thyme and minced garlic.
- — Oregano. I love this spice for both Italian and Tex-Mex cooking. Its unique flavor adds more dimension to these cuisines. Oregano is earthy and slightly bitter, which intensifies when dried.
