CHEESY SPINACH AND BEEF CASSEROLE (SPINACH FANDANGO)

A cozy, hearty spinach and beef casserole with fresh mushrooms and melty jack cheese. You call it what you want, we call it Spinach Fandango.

1 lb ground beef (80/20 or leaner)
1 medium onion, diced
8 oz fresh button mushrooms, sliced
1 clove garlic, minced
2 - 12oz packages of frozen spinach
salt and pepper to taste
1/2 cup long grain white rice, measurement based on dry (or rice of your choice) prepared according to package directions.
1 tsp dried oregano
1 cup sour cream
1 Tbs butter
3/4 cup milk or cream
8 oz shredded Monterrey Jack Cheese

Steps:

  • Preheat oven to 350F.
  • In a large skillet or dutch oven, combine the 1lb ground beef, 1 diced onion, 8oz fresh sliced mushrooms, 1 clove of minced garlic, and 1 tsp oregano and cook over medium heat until meat is browned and the vegetables are softened and fragrant.
  • While the beef mixture is browning, microwave the frozen spinach to defrost it. I microwaved it in a microwave safe bowl for 4 minutes. Then, remove from the microwave and over the sink, press the spinach up against the sides of the bowl to extract excess liquid and drain off the liquid. You can also use cheesecloth or a sieve if you prefer.
  • Once the spinach is fully strained, add it to the browned beef mixture and toss to combine.
  • Next, combine the rice, 1 tsp oregano, 1 cup sour cream, 1 Tbs butter and 3/4 cup of milk in a small bowl and stir until combined and creamy. If the rice isn't warm and the butter doesn't melt, you can microwave it for 45 seconds.
  • Add the creamy rice mix to the beef and spinach mixture and then pour it all into a medium to large sized rectangular casserole dish and spread evenly to all sides.
  • Sprinkle 8 oz shredded Monterrey Jack Cheese evenly over the top of the casserole.
  • Bake for 35 - 40 minutes or until the casserole is bubbling and the cheese on top is melty and slightly browned.
  • Allow to rest for 5 minutes after removing from the oven before slicing.

1 (16 ounce) package elbow macaroni
3 tablespoons butter
3 tablespoons all-purpose flour
3 cups milk
1 pound frozen chopped spinach, not thawed
3 cups grated Cheddar cheese, divided

¼ teaspoon ground nutmeg

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with 1 teaspoon butter.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes.
  • Melt 3 tablespoons butter in a saucepan over medium heat while macaroni is cooking. Add flour and whisk until fragrant, 2 to 3 minutes. Pour in a little milk and continue whisking. Pour in remaining milk and add frozen spinach. Cook, whisking constantly, until spinach softens and sauce thickens, about 5 minutes.
  • Remove sauce from heat and stir in 2 cups Cheddar cheese; whisk until melted. Season sauce with salt, pepper, and nutmeg.
  • Drain macaroni and spread evenly in the prepared baking dish. Cover with cheese sauce. Mix well. Sprinkle remaining 1 cup Cheddar cheese on top.
  • Bake in the preheated oven until cheese is melted, about 30 minutes. Turn on the oven's broiler and broil until a golden crust forms on top, about 3 minutes.

3 cups Mussel Stock, heated, recipe follows
2 cups whole milk, heated
1 cup heavy whipping cream, heated

1 pound taleggio, rind removed, cut into pieces
1/4 cup grated Parmigiano-Reggiano
Salt and freshly ground black pepper
1/2 cup chopped fresh parsley

1 pound large pasta shells, cooked in salted water to al dente
Two 2-pound lobsters, steamed, meat removed from shells
1 1/2 cups coarse breadcrumbs

1/4 cup chopped fresh parsley
2 teaspoons grated lemon zest
2 tablespoons olive oil

Steps:

  • Melt the butter in large saucepan over medium-high heat. Whisk in the flour and cook for 1 minute. Add the hot stock, milk, and cream and whisk until the sauce begins to thicken. Cook for 5 minutes, whisking occasionally.
  • Remove from the heat and whisk in the cheeses and season with salt and pepper. Add the parsley, thyme, tarragon, and pasta and stir until combined. Chop the lobster into bite-sized pieces and fold into the pasta. Divide into bowls.
  • For the crumb topping: Preheat the oven to 350 degrees F. Spread the breadcrumbs on a sheet pan and toast until barely golden, stirring once or twice, about 10 minutes. Heat the olive oil in a medium skillet over medium heat. Add the anchovies and stir a minute or 2 to warm through. Add the breadcrumbs, season with salt and pepper, and cook, tossing, until warm and slightly crisp. Remove from the heat and stir in the parsley and lemon zest. Sprinkle generously over the pasta.
  • Heat the oil in a large stockpot over medium heat. Add the shallots and cook until soft. Add the wine, bring to a boil, add the mussels, cover and cook until the mussels have opened. Remove the mussels to a bowl for another use, and then strain the broth into a saucepan.

200g/7oz broccoli, cut into small florets
100g/3½oz baby spinach, any thicker stems removed
2 tsp olive oil
2 spring onions, outer leaves removed, thinly sliced
1 garlic clove, thinly sliced
1 tbsp plain flour
300ml/10fl oz skimmed milk
2 bay leaves
1 tsp wholegrain mustard
1 unwaxed lemon, finely grated zest only
100g/3½oz Parmesan (or vegetarian alternative), finely grated
salt and freshly ground black pepper
mixed salad leaves dressed with a squeeze of lemon juice and 1 tsp olive oil, to serve

Steps:

  • Preheat the oven to 200C/180C Fan/Gas 6
  • Cook the macaroni in boiling water for 6 minutes. Add the broccoli and cook for another 2 minutes. Turn off the heat, add the spinach and leave to stand with the lid on for 2 minutes. Drain well and set aside
  • Heat the oil in a heavy-based frying pan. Fry the spring onions for 2 minutes. Add the garlic and fry for another 2 minutes. Add the flour and cook, stirring all the time, for 1-2 minutes. Slowly pour in the milk, add the bay leaves and season with salt and pepper. Continue simmering for 2-3 minutes, until thickened. Remove the bay leaves.
  • Stir in the mustard, lemon zest and three quarters of the Parmesan, then season well.
  • Tip the pasta and broccoli into a shallow baking dish. Pour over the sauce and mix well. Sprinkle over the remaining cheese and bake for 15-20 minutes.
  • Serve with the dressed salad leaves.

This is a completely unpretentious, down-home macaroni and cheese recipe just like my grandma and mom always made. A simple white sauce where you add cheese and a few other flavors with macaroni and a potato chip crust. This recipe makes a lot, I like to make two pans so I can take one to a pot luck and have the other one to keep in the fridge for later. It's an easy recipe to adjust down if you only want to make one pan. If you aren't cooking it right away, just keep the topping separate until you are ready to put it in the oven.

1 cloved minced garlic
2 Tbsp olive oil
10 oz frozen spinach
1 medium chopped onion
1 lb can spaghetti sauce w/ mushrooms
8 oz can tomato sauce
6 oz can tomato paste
7 oz pkg of elbow macaroni; cooked
2 c shredded italian cheese blend (or mozzarella or cheddar)
1/2 c bread crumbs, dry
2 beaten eggs
salt and pepper

Steps:

  • 1. Preheat oven to 350. Brown the chicken, garlic and onions; drain. Cook the spinach according to microwave directions; squeeze dry-BUT SAVE THE JUICE.
  • 2. Cook the macaroni while chicken and spinach is cooking; drain.
  • 3. Add the spinach liquid to the chicken mixture; along with the sauces.
  • 4. Combine the elbow noodles with the cheese, eggs, drained spinach, oil and bread crumbs. Put the noodle mix into a 13 x 9 inch baking pan. Top with the chicken mixture.
  • 5. Bake for 30 mins. Let stand 10 min. before serving.

"WORLD'S BEST" MACARONI & CHEESE



We tasted this in Seattle at the Pike Place Market in the Beecher's store. It is the best! I had to get their recipe and I found it on the internet; It is a very rich creamy comfort food. I do not have Beecher's cheese so I improvised with what is available and it came out as tasty as the original. Serve this with a crisp salad. Enjoy!

Steps:

  • Preheat oven to 350; F. Set a large pot of water on high heat.
  • Meanwhile, begin the sauce by making a roux: in a medium saucepan melt the butter over medium heat. Whisk in the flour. Continue to stir this roux over medium heat for two to three minutes.
  • The roux should be cooked and free of the flour flavor but still light in color.
  • Gradually add milk, whisking briskly to maintain a smooth sauce.
  • Cook the sauce for about 10 minutes, stirring occasionally to avoid scorching.
  • When sauce thickens, add cheeses, salt and spices to the sauce, and stir until all the cheese has melted. I make my sauces in the microwave; turns out great and never scorches.
  • Somewhere during this sauce-cooking process, your pasta water has started boiling. The original is made with Penne noodles. Add a generous amount of salt to the water and cook the pasta until almost but not quite al dente (two minutes before the package directions indicate). You want barely undercooked pasta so that it can finish in the oven later. Halt the cooking by draining the pasta and rinsing with cold water. Return pasta to pot.
  • Pour sauce over pasta and stir until completely incorporated. The combination should be fairly saucy, almost soupy.
  • Dish the mixture into a buttered 9-13 pan and sprinkle with extra grated cheeses and cayenne. Bake, uncovered, for 30 minutes, until you have beautiful, browned edges. Those edges will be a welcome and flavorful addition to each serving.
  • Let the dish sit for 5 to 10 minutes before serving. I divided this in 2 containers and froze one.

8 ounce elbow macaroni - 2 cups (I use 1/4-1/2 cup less to make the mac and cheese more saucy) )
2 cups frozen chopped spinach ((or 4-5 cups fresh baby spinach, roughly chopped))
3 tablespoon butter
2 tablespoon flour
2 cups whole milk (or 2% if preferred) ((use 2% if preferred or any combination of milk - any type - and cream))
1/2 teaspoon salt or more, to taste ((depends on saltiness of cheese))
1 teaspoon Dijon mustard (optional) (prepared mustard is ok too)
3 cups (338g, 12 oz) shredded cheese. I use half American cheese (or gruyere) and half sharp cheddar cheese

Steps:

  • HEAT OVEN TO 400F/204C. Line 2 quart casserole with parchment paper (for easy cleanup) or spray casserole dish with oil.
  • BOIL MACARONI AND SPINACH: Bring salted water to a boil in a large saucepan and add macaroni. Cook as per package directions. 3 minutes before macaroni is cooked, add frozen or fresh chopped spinach. This will slow the boil, so increase heat to medium high to finish cooking pasta to al dente which is what you want. Drain in colander and set aside.
  • MAKE CHEESE SAUCE: Heat butter in saucepan on medium heat. Add flour and whisk to blend. Cook for 2 minutes. Add milk. Whisk to blend. Add salt and mustard (if using). Cook for about 5-7 minutes until thickened. Turn off heat. Mix in 2 1/2 cups (~280g) cheese, reserving remaining 1/2 cup (56g) of cheddar for topping.
  • COMBINE SAUCE AND MACARONI: Add cooked macaroni and spinach to cheese sauce. Mix to combine well. Transfer to 2 quart casserole. Sprinkle remaining 1/2 cup shredded cheese casserole.
  • BAKE AND SERVE: Bake for 15-20 minutes until cheese is golden brown on top. Serve with slaw, baked beans or tomato salad.

1 onion, chopped
250 g ground beef or 250 g ground pork
2 (400 g) cans chopped tomatoes
1 teaspoon garlic powder
2 teaspoons chili flakes
salt and pepper, to taste
10 ounces frozen spinach
200 g tagliatelle pasta noodles (or other pasta)
1/3 cup grated parmesan cheese

Steps:

  • Saute the onion in a deep frying pan for 1-2 minutes, then add the ground beef.
  • Cook until beef is browned, then add the tomatoes, spices, salt and pepper to taste.
  • Simmer for 3-4 minutes, then add the spinach and simmer 3-4 minutes more.
  • Adjust seasonings to taste.
  • Meanwhile, boil and drain the pasta according to directions on the package.
  • Combine the two and place in a baking tray.
  • Sprinkle the cheese over the top and bake in a hot oven until melted and the dish is pipping hot, about 5 minutes.
  • Serve with a salad and garlic bread.

  • Preheat oven to 350 degrees F. Spray a 2-quart baking dish with cooking spray and set aside.
  • In a large skillet, cook beef, onion and garlic over medium heat until no longer pink; drain.
  • Stir in the spinach, cream cheese, condensed soup, sour cream, milk, salt and 1 cup of the mozzarella cheese. Stir over low heat, just until combined.
  • Transfer to the prepared baking dish. Cover with foil. Bake for 20 minutes. Remove the foil; sprinkle with the remaining 1 cup of mozzarella cheese and the French-fried onions. Bake for 10 more minutes, or until the cheese is melted and the casserole is hot and bubbly.

This is a macaroni and ground beef casserole recipe, and it makes a great-tasting dinner for any night of the week.

8 ounces macaroni
2 tablespoons olive oil
1 large onion, chopped
1/2 green bell pepper, chopped
1 rib celery, chopped
1 1/2 pounds ground beef
3 cloves garlic, minced
1 (32 ounce) jar prepared spaghetti sauce (or your favorite)
3 tablespoons tomato paste
Salt, to taste
Pepper, to taste
2 cups shredded Cheddar cheese

Steps:

  • Gather the ingredients. Preheat the oven to 350 F.
  • Fill a pasta pot with cold water and set on a burner over medium-high heat. When the pasta water comes to a boil, salt the water , stir and taste. It should taste like the sea. Undersalted? Add more. Oversalted? Pour out some water and add fresh water until you get the right balance.
  • While the water is coming to a boil, heat a large skillet over medium heat. Add the olive oil, onion, bell pepper, and celery. Season with a pinch of salt and pepper and cook, stirring, for about 3 to 4 minutes, until tender.
  • Add tomato paste and stir to incorporate into the vegetables, for 1 to 2 minutes. Add the garlic and cook for 1 minute longer.
  • Add the ground beef and season with another pinch of salt and pepper. Cook, stirring and breaking up the meat, until no longer pink.
  • Add the spaghetti sauce. Bring to a simmer. Simmer for 5 minutes.
  • Pour pasta into boiling salted water gradually while stirring the water. When the water returns to a boil, begin the cooking time as directed by the packaging for al dente doneness. Drain.
  • Add pasta to meat sauce. Stir to blend.
  • Transfer half of the mixture to a 2 1/2- to 3-quart baking dish and top with half of the cheese. Add remaining mixture and top with remaining cheese.
  • Bake for 20 to 25 minutes, until cheese is melted and the mixture is bubbly.

5 ¼ cups uncooked elbow macaroni
2 ½ pounds ground beef
2 large onions, chopped
3 large carrots, shredded
3 stalk (blank)s celery ribs, chopped
2 (28 ounce) cans Italian-style diced tomatoes, undrained
4 teaspoons salt
1 teaspoon garlic powder
1 teaspoon pepper
½ teaspoon dried oregano
2 (10 ounce) packages frozen chopped spinach, thawed and squeezed dry
1 cup grated Parmesan cheese

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a Dutch oven or large kettle, cook the beef, onions, carrots and celery over medium heat until meat is no longer pink; drain. Add the tomatoes, salt, garlic powder, pepper and oregano. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until vegetables are tender. Drain macaroni; add macaroni and spinach to beef mixture. pour into two greased 3-qt. baking dishes. Sprinkle with Parmesan cheese. Bake, uncovered, at 350 degrees F for 25-30 minutes or until heated through.
