½ cup milk
1 tablespoon lemon juice
4 (3 ounce) fillets cod
1 cup oil for frying
⅓ cup cornmeal
⅓ cup all-purpose flour
1 teaspoon paprika
½ teaspoon ground black pepper
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon dried thyme
⅛ teaspoon cayenne pepper

Steps:

  • In a medium bowl, combine milk and lemon juice. Add cod fillets, and marinate 5 minutes. Heat oil in large heavy skillet over medium heat.
  • In a shallow bowl, mix together cornmeal and flour. Season with paprika, black pepper, salt, garlic powder, thyme and cayenne pepper. Dredge fish in cornmeal mixture.
  • Fry cod fillets in hot oil until golden brown.

1/2 teaspoon dried thyme
1/2 teaspoon pepper
1/2 cup buttermilk
1 broiler/fryer chicken (3 to 4 pounds), cut up and skin removed
1 tablespoon butter, melted

Steps:

  • In a large shallow dish, combine the first 9 ingredients. Place the buttermilk in a shallow bowl. Dip chicken in buttermilk, then dip in bread crumb mixture, a few pieces at a time, and turn to coat. , Place in a 13x9-in. baking pan coated with cooking spray. Bake at 375° for 10 minutes; drizzle with butter. Bake until juices run clear, 30-40 minutes longer.

  • Fry 2-3 minute per side or till fish flakes easily with fork.
  • Oven Fried Chicken: 6 servings.

1 ½ pounds boneless, skinless chicken breast*
1 ½ cups Crisco® Vegetable Oil

Steps:

  • Mix corn meal mix, 1/2 cup flour, seasoning and 1/2 teaspoon salt in pie plate. Place remaining 1 cup flour and 1/2 teaspoon salt in shallow bowl. Place buttermilk and hot sauce in separate shallow bowl.

1 tablespoon all-purpose flour
1 egg
1 cup yellow cornmeal

Steps:

  • Heat shortening in Dutch oven or deep fryer.
  • Beat together first four ingredients in a small bowl.
  • Mix the remaining ingredients in a pie pan.
  • Dip your fish or veggies in the wet mixture then dredge through dry mixture. (for thicker coating, do this step twice.).
  • Place coated pieces into hot grease and cook until done. I used a fry basket in a stew pot.
  • When thoroughly cooked, remove pieces to a wire rack to drain before serving.
