Pan Seared Scallops with Pasta image

A light, bright and completely flavor-packed Pan Seared Scallops with Pasta - perfect for summer days when you're craving carbs but want something unique

Provided by Yumna Jawad

Categories     Entree

Time 25m

Number Of Ingredients 8

8 ounces linguine
2 tablespoons avocado oil
1 pound large scallops
Salt and pepper (to taste)
1 tablespoon butter
2 garlic cloves (finely minced)
1 pint cherry tomatoes (halved lengthwise)
Fresh chopped parsley (for serving)

Steps:

  • Cook pasta in a large pot of heavily salted water until al dente. Reserve 1 cup pasta water and drain.
  • Heat avocado oil in a large non-stick skillet over medium heat. Pat the scallops dry with paper towels and add to the skillet, in batches if needed, keeping them about 1 inch apart in the pan. Cook for 3 minutes, then season with salt and pepper, and flip on the other side.
  • Add butter to the pan, season the other side with salt and pepper and cook for 3 more minutes. Transfer to a bowl, cover and set aside.
  • Add the garlic and cherry tomatoes to the pan along with ¼ cup of pasta water, scraping down any browned bits, and cook until the tomatoes soften and release some juice, about 3-5 minutes.
  • Toss the cooked pasta with the tomatoes and add as much of the remaining pasta water as desired. Turn off the heat, return the scallops to the skillet along with any juices that have accumulated, and stir to coat with the sauce and pasta.
  • Serve immediately with fresh parsley.

SEARED SEA SCALLOPS WITH PISTACHIO DRESSING

Seared Sea Scallops With Pistachio Dressing image

If you're looking for something to pair wonderfully with a few glasses of amber-hued amontillado, you can't do much better than these tender, burnished sea scallops, inspired by a memorable midcourse of scallops with pistachios and licorice at Restaurant Daniel. Though you're less likely to overcook larger sea scallops, remember that quality is more critical than sheer size. In the market, look for scallops that appear fairly dry; waterlogged scallops will never achieve that ideal caramelized crust.

Provided by Florence Fabricant

Categories     quick, appetizer, main course

Time 30m

Yield 4 servings

Number Of Ingredients 10

1 teaspoon anise seeds
1 clove garlic
1/4 teaspoon salt, more for seasoning
3/4 cup roasted shelled unsalted pistachios
3 tablespoons fresh tarragon, plus sprigs for garnish
2 tablespoons extra-virgin olive oil, plus more for pan
2 tablespoons amontillado sherry
2 tablespoons lemon juice
1/3 cup fish or seafood stock, or water
12 ounces sea scallops (12 to 16 jumbo)

Steps:

  • In a mortar, crush the anise seeds with 1/4 teaspoon salt and the garlic. Place pistachios and tarragon in a food processor and process until finely ground. Add anise mixture, oil, sherry and lemon juice. Process to a thick paste. Transfer to a small saucepan. Whisk in stock or water. Heat on low until tepid. Turn off heat.
  • Heat a cast iron skillet or a griddle to very hot. Dry scallops. Brush a slick of oil on the pan, lower heat a bit and place scallops in the pan. Sear on medium-high until handsomely browned, 2 to 3 minutes. You'll know when the scallops have browned enough when they can be lifted with your spatula without ruinous sticking. Lightly dust scallops with salt, then turn them. Reduce heat to medium-low and continue cooking until scallops are browned on the bottom and just cooked through, another 6 to 8 minutes. Meanwhile, gently warm the sauce. Whisk and add a smidgen of salt if needed.
  • Spoon some of the sauce in the center of each of 4 warm dinner plates. Poise 3 to 4 of the scallops around the edges of the sauce pool and garnish with tarragon.

SEARED SCALLOPS WITH CREAMY BASIL PESTO SAUCE

Seared Scallops with Creamy Basil Pesto Sauce image

The key to a nice golden sear on scallops is to dry them thoroughly. Make sure when you go to buy them they're dry packed and not sitting in liquid. This makes them retain the moisture and then they won't brown.

Provided by Victoria Townsend

Time 20m

Number Of Ingredients 7

1 pound Large Scallops, completely pat dry
Kosher Salt and Ground Black Pepper, for seasoning
2 tablespoons Olive Oil
1/3 cup Heavy Whipping Cream

Parsley, chopped for garnish

Steps:

  • Step 2 Add oil and scallops to the pan. Sear 2 minutes on one side until golden brown and 1 minute on the other side. Remove to a serving plate.
  • Step 3 Meanwhile, in a sauce pan heat cream over medium heat. Simmer until thickened, about 2-3 minutes. Turn heat off and whisk in pesto.
  • Step 4 Spoon pesto sauce over scallops and garnish with lemon zest and chopped parsley. Serve immediately.

Scallops and Pasta With Pistachio-Parsley Pesto image

PAN-SEARED SCALLOPS WITH CREAMY PESTO SAUCE

Pan-Seared Scallops with Creamy Pesto Sauce image

These perfectly seared scallops over creamy pesto sauce are deliciously tender and flavorful with irresistibly nutty caramelized crust.

Provided by Shinee Davaakhuu

Number Of Ingredients 6

6 sea scallops
Salt and pepper to taste
1 tablespoon olive oil
1 tablespoon unsalted butter
¼ cup basil pesto
3 tablespoons heavy cream

Steps:

  • Dry the scallops with paper towel to make sure there is no excess water. Sprinkle pinch of salt and pepper on each scallops on both sides.
  • Heat the olive oil and melt the butter in a large skillet over high heat. Add the scallops and sear for about 2 minutes, until nice and gold. Using a tong, flip the scallops. If it's stuck to the bottom, don't force and cook a little longer. When it's ready, it should un-stick easily. Cook for 1-2 minutes on other side. Be careful not to overcook the scallops, which will toughen the scallops. Remove the scallops onto the warm plate. Set aside.
  • Remove the skillet from heat and add pesto and heavy cream. Swirl the pan to mix the sauce.

PAN SEARED SCALLOPS WITH LINGUINE AL PESTO

Pan Seared Scallops with Linguine al Pesto image

Pan-Seared Scallops is a delicious restaurant-style dish that's easy to prepare in your home kitchen. Fresh from the sea, and served with a basil pesto tossed with linguine!

Provided by Chef Dennis Littley

Categories     Entree

Number Of Ingredients 10

2 bunches of Basil
½ bunch of Italian Parsley
¼ cup grated Romano cheese
¼ cup toasted pine nuts or walnuts
2 cloves of Garlic
¼ cup Extra Virgin Olive Oil
1 lb fresh sea scallops
1 tsp old bay seasoning
1 tbsp olive oil
1 pound linguine ( or your favorite pasta)

Steps:

  • To toast the pine nuts get a pan sauté pan very hot, then turn off the heat, and add the pine nuts to the pan. Keep the pine nuts moving around so they toast without burning.*If the pine nuts start to smoke take the pan off the heat.
  • Remove the leaves from the basil and parsley, do not use the stems
  • Place the basil and parsley into the food processor, Pulse it until the greens are very well minced
  • Add the garlic, toasted pine nuts, and grated Romano Cheese, pulse to combine
  • Drizzle in the Olive Oil until it has a nice smooth consistency without looking oily
  • cook linguine per instructions on the box
  • wash and clean your scallops (remove the little piece of side mussel)
  • pat dry the scallops with paper towels
  • sprinkle the old bay on both sides of the scallops
  • get your pan very hot
  • add enough olive oil to have a light coating in the pan
  • add the scallops carefully, not over crowding the pan (too many scallops will bring down the temperature of the pan)
  • most importantly once you place the scallops in the pan, do not move them!
  • allow the scallop to sear on one side for two minutes, when you turn one scallop you should begin to see a nice caramel color as a light crust forms. If your scallop looks like this continue turning them, if not let them cook a little longer.
  • after turning the scallop continue cooking, being careful not to over cook them.
  • a scallop will be just a little translucent in the center when it is done (the scallop will continue to cook after you've removed it from the pan)
  • look at the scallop from the side to determine if it is done.
  • the scallop should be a little springy when you push it with your fingers, if it is firm, its overcooked**
  • this is a matter of timing, while the scallops are searing, the pasta should just be getting done; you want to toss the linguine with a few large spoonfuls of the pesto (use as much or as little as you like), as soon as you drain it.
  • place the linguine with the pesto back in the pot, and hold on the back of the stove(off burner) until your scallops are done.
  • plate pasta and top with scallops, serve immediately!

SEARED SCALLOPS WITH PARSLEY AND SCALLION PESTO

Seared Scallops with Parsley and Scallion Pesto image

Provided by Alex Guarnaschelli

Categories     main-dish

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 14

Kosher salt
1 cup tightly packed fresh curly parsley leaves
1/4 teaspoon sugar
1/4 cup extra-virgin olive oil
1/2 cup thinly sliced scallions
1 bunch thin asparagus, trimmed and cut into 2-inch pieces
3 tablespoons extra-virgin olive oil
16 medium dry diver sea scallops (about 1 1/4 pounds)
Kosher salt and freshly ground pepper
1 pound small white button mushrooms, stemmed and thinly sliced
2 shallots, minced
2 cloves garlic, minced
1/4 cup dry vermouth
1 lemon, halved

Steps:

  • Bring a medium pot of water to a boil, adding salt until it tastes like seawater. Meanwhile, set a colander in a large bowl of ice water. Add the parsley to the boiling water and cook 1 minute, then remove with a slotted spoon. Immediately plunge the parsley into the ice bath and allow to cool, 3 to 5 minutes. Keep the water at a rolling boil.
  • Drain the parsley slightly and put it in a blender (reserve the ice water). Add the sugar and olive oil and blend until smooth. If the mixture is too thick, add a little water. Taste for seasoning. Transfer to a bowl and stir in the scallions; set aside.
  • Prepare the asparagus: Add the asparagus to the pot and cook until crisp-tender and bright green, about 2 minutes. Transfer with a slotted spoon to the ice water to cool. Drain and pat dry. (The pesto and asparagus can be made up to 4 hours ahead; cover and refrigerate.)
  • Cook the scallops: Heat a large skillet over medium-high heat and add 2 tablespoons olive oil. When the oil begins to smoke slightly, season the scallops with salt and pepper and add to the pan. Cook until browned, 2 to 3 minutes per side. Remove from the pan and set aside.
  • Add the remaining 1 tablespoon olive oil to the pan. Add the mushrooms and cook until tender, 4 to 5 minutes. Season with salt and pepper. Reduce the heat to medium, then add the shallots and garlic and cook until translucent, 2 to 3 minutes. Add the vermouth and cook an additional 2 to 3 minutes, or until the vegetables are tender and virtually all of the liquid has evaporated. Add the asparagus and toss until warmed through.
  • Arrange the scallops and vegetables on plates. Squeeze some lemon juice directly over the scallops. Top with the pesto.

  • Preheat oven to 250 degrees, and then turn off (the oven is only warmed to keep the corn and bacon warm while the scallops cook).
  • Dice bacon into small pieces. Have corn ready in a measuring cup. Heat a skillet (cast iron or non stick is my preference) over medium heat. Add bacon, and cook, stirring frequently, until bacon is done to your liking. Add corn, and continue to cook another 2 minutes or so, until corn is thawed and bright yellow. Remove bacon and corn from the skillet using a slotted spoon, leaving as much of the bacon grease behind as possible. Season to taste with salt and move to the oven to keep warm.

  • Sear Your Scallops. Before cooking, pat your scallops down with a paper towel. We suggest searing your weathervane scallops on a very hot pan undisturbed for a few minutes on each side until the tops and bottoms are brown and caramelized. Because weathervane scallops already have so much flavor cooking them simply is best, and be sure not to overcrowd the pan.
  • Dress the pasta. When pasta is cooked and drained (keeping a little of the pasta water on it!), add the pesto, a drizzle of olive oil, sea salt and pepper, and mix well until pesto is spread evenly throughout pasta.
