1 whole filet of beef tenderloin (4 to 5 pounds), trimmed and tied
6 tablespoons (3/4 stick) unsalted butter, melted
Kosher salt and freshly ground black pepper
1 1/2 cups good mayonnaise
1/3 cup sour cream
3 tablespoons Dijon mustard
1 1/2 tablespoons whole-grain mustard
1 tablespoon prepared horseradish
Bunch of parsley, for garnish

Steps:

  • Preheat the oven to 275 degrees F. Line a sheet pan with aluminum foil.
  • Pat the entire tenderloin dry with paper towels and brush it all over (top and bottom) with the butter. Sprinkle the tenderloin all over with 4 teaspoons salt and 2 teaspoons pepper. It will seem like a lot but trust me, it's important.
  • Place the tenderloin on the prepared sheet pan and roast it for 1 to 1 1/4 hours, until an instant-read thermometer inserted into the end of the filet registers 130 degrees F for medium rare. Remove from the oven, cover tightly with aluminum foil, and allow to rest at room temperature for 15 minutes. Discard the foil and allow to sit at room temperature.
  • Meanwhile, for the sauce, whisk together the mayonnaise, sour cream, mustards, horseradish, and 1/4 teaspoon salt in a small bowl. Refrigerate until ready to serve.
  • Remove the strings and slice the filet between 1/4 and 1/2 inch thick, sprinkle with salt, and place on a platter with a garnish of parsley. Serve warm, at room temperature, or cold with the sauce on the side.

6 (2-inch) beef tenderloin steaks
Salt and pepper
3 tablespoons butter, divided
2 tablespoons all-purpose flour
1 1/2 cups milk
3 rounded tablespoonfuls prepared horseradish, 1/4 cup
2 tablespoons chopped chives, 8 blades
1/2 cup Madeira or other dry sherry, optional

Steps:

  • Preheat oven to 375 degrees F.
  • Season meat with salt and pepper. Heat a large nonstick skillet with oven safe handle over high heat. If you have a rubber handled pan, wrap the handle twice with tin foil for baking.
  • Sear meat in the very hot nonstick skillet to caramelize the beef, 3 minutes on each side. Transfer to oven and cook 8 to 15 minutes longer for medium rare to well done meat.
  • In a medium saucepan over medium heat melt 2 tablespoons butter. Combine melted butter with flour and cook a minute longer. Whisk in milk. Thicken milk to gravy consistency, then stir in horseradish, chives and salt and pepper. Transfer sauce to a serving dish.
  • Remove meat from oven and transfer to a platter. Return pan to stovetop over moderate heat and deglaze pan with 1/2 cup Madeira or dry sherry. Add remaining tablespoon butter to the pan and pour the drippings over steaks.

1 7 or 8 oz. beef tenderloin, (filet mignon)
1 tsp kosher salt
1/2 tsp black pepper, fresh coarse ground is best
1/2 tsp granulated garlic
1/2 tsp dried oregano
1 or 2 tbsp fresh ground horseradish, Silver Springs Foods brand or similar, see notes (Not creamy prepared)
1/4 cup sour cream
1 tsp dijon mustard
pinch of salt
2 tbsp olive oil, divided
2 oz. blue cheese crumbles
8 pcs baguette, in 1/4 inch slices
kosher salt, for the baguette
granulated garlic, for the baguette
Chopped parsley for garnish

Steps:

  • Take the filet out of the refrigerator 30 to 60 minutes before cooking.
  • Mix the horseradish sauce ingredients in a small bowl and set aside.
  • Mix together the dry rub ingredients. Apply a light coating of olive oil on the filet and sprinkle the dry rub on all sides of the meat.
  • Using a cast iron or heavy stainless steel skillet, add 1 tablespoon olive oil and place on high heat. Once the oil is smoking, start searing the beef starting with the sides. Lower the heat and try to maintain about 450°F. Sear each side for around 90 seconds to get some nice browning. Keep turning the meat to the remaining sides. Once the sides are browned, turn the meat to the first end and sear about 90 seconds, then turn to the final un-browned end. Keep rotating the meat with tongs until the internal temperature is 130° when measured with an instant read thermometer. This will take 8 to 12 minutes depending on the temperature of the skillet. Remove the filet from the heat and rest for 10 minutes tented with foil. Then slice into 1/4" pieces.
  • Turn on your broiler on high and place the rack 6 to 7 inches from the heating element or flame. Place the sliced baguette onto a small, sided baking sheet and drizzle with olive oil then brush to coat. Next sprinkle the bread with a very small amount of kosher salt and granulated garlic. Place the sheet under the broiler to toast the bread, turning every 30 seconds or so to brown evenly. Keep a close eye on this and remove the pan from the oven when slightly toasted, 1 1/2 to 2 minutes.
  • Keep the toasted baguettes in the baking sheet and spoon the horseradish sauce on each slice. Place a slice of filet on each, then sprinkle with crumbled blue cheese. Garnish with chopped parsley. Serve warm or at room temperature.

1 1 1/2-pound piece beef tenderloin (thick end), fat and sinew trimmed
3 1/2 tablespoons extra-virgin olive oil
1 large bunch watercress, trimmed
1 4-ounce jar capers, drained
1/2 cup shaved Parmesan cheese
2 tablespoons fresh lemon juice
1 French-bread baguette, sliced
Mustard-Horseradish Sauce

Steps:

  • Tie beef with kitchen string to hold shape. Sprinkle with salt and pepper. Heat heavy large skillet over medium-high heat. Rub 1 tablespoon oil over beef. Add beef to skillet. Sear until brown on all sides and cooked to desired doneness, about 20 minutes for medium-rare. Transfer beef to plate. Freeze until almost frozen solid, about 3 hours. Remove string. Using large sharp knife, cut beef crosswise into very thin slices. (Can be prepared 8 hours ahead. Arrange slices between sheets of waxed paper on baking sheet. Cover tightly and refrigerate.)
  • Cover large platter with watercress. Arrange beef slices atop watercress. Drizzle with 2 1/2 tablespoons oil. Sprinkle with capers and Parmesan cheese. Drizzle with lemon juice. Sprinkle with pepper. Serve with baguette slices and sauce.

13-MINUTE BEEF TENDERLOIN WITH HORSERADISH SAUCE



13-Minute Beef Tenderloin With Horseradish Sauce image

Food TV's Bobby Flay gets this super-easy and company-worthy tenderloin cooked for him every year on his birthday by his wife, Kathy. You won't believe how easy it is! Note that this recipe is written for a gas oven; also note that prep time is 3 hours (at least) for marinating. You'll need the heavy-duty aluminum foil for this one.... no substitutions or it won't work!!

2 lbs beef tenderloin (the butt end, tied with kitchen twine)
3 garlic cloves, finely chopped
salt and pepper
4 tablespoons unsalted butter, cut into small pieces
2 tablespoons Worcestershire sauce
2 limes, juice of
1/2 cup sour cream
3 tablespoons prepared horseradish, drained
heavy duty aluminum foil

Steps:

  • Prepare a heavy baking dish that is as close to the size of the beef tenderloin as possible by making an aluminum foil "basket" for it to sit inches It is VERY important to use heavy duty aluminum foil. Place 2 or 3 pieces of foil in the dish and put the beef tenderloin on top of it, leaving enough hanging over the edges of the dish to really wrap up the meat.
  • Season the tenderloin well with salt and pepper, and then "mash" the garlic over the entire tenderloin. Sprinkle the butter pieces evenly over the beef. Drizzle with Worcestershire and lime juice let marinate in the refrigerator for at least 3 hours, turning halfway through marination time. Bring the tenderloin back to room temperature before roasting.
  • Adjust the oven rack to the highest position and preheat the broiler.
  • Place the pan right underneath the broiler and broil for about 8 minutes. (It will look like the flames are burning or touching the meat, but that is fine).
  • Carefully pull the pan out and turn the meat over. Broil for another 5 minutes or until cooked to desired doneness. (When the meat is done under the flame it will look like it is burned, but it's not).
  • Wrap it up very tightly in the foil and let it sit and continue to cook inside the foil on the kitchen counter for about another 1 1/2 hours.
  • Whisk together the sour cream and horseradish and season with salt and pepper. Remove the string binding the roast, slice the meat and serve with the horseradish sauce on the side.

1 1/2 pounds top round of beef, about 1 1/2 inches thick
2 teaspoons black peppercorns, crushed
2 tablespoons vegetable oil
4 ounces fresh horseradish, grated
1 tablespoon white vinegar
4 tablespoons heavy cream
Salt and freshly ground pepper to taste
2 tablespoons butter

Steps:

  • Place the meat in a roasting pan, and coat it with the crushed peppercorns. Press the peppercorns to make them adhere. Drizzle the vegetable oil over the steak on both sides. Set aside.
  • Put the horseradish, the vinegar and the cream in a saucepan over medium-high heat. Bring to a boil. Remove from heat. Add salt and pepper to taste, cover and set aside.
  • Transfer the steak to a pan, preferably cast iron, that has been heated over medium-high heat. Sear for two minutes and flip. Season with salt to taste. Sear for two more minutes and reduce heat to medium. Continue cooking, flipping occasionally, for 15 to 20 minutes depending on degree of doneness desired. When done, transfer the meat to a warm dish, and place two tablespoons of butter over it. Let the meat rest for five minutes.
  • Slice the beef crosswise on a wide bias. Serve on warm plates moistened with the pan juices, along with the horeseradish sauce.

I got this recipe out of Wine Enthusiast Magazine. This horseradish sauce is a delicious addition to Filet Mignon. Note: Marinate the beef in olive oil mixed with chopped garlic, parsley, rosemary, thyme, salt, pepper and fresh herbs, covered, in the referigerator for a least an hour or overnight. Cut the filet into medallions for serving.

2 tablespoons fresh lemon juice
3 cups trimmed watercress (about 1 bunch)

Steps:

  • Combine first 4 ingredients, stirring well with a whisk. Cover and chill.
  • Secure beef at 2-inch intervals with twine. Sprinkle beef with pepper.
  • Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray.
  • Add beef to pan; cook 15 minutes or until desired degree of doneness, turning frequently.
  • Let stand 15 minutes.
  • Cut into 16 slices.
  • Sprinkle with juice.
  • Arrange watercress evenly on bread slices.
  • Place 1 beef slice and about 1 tablespoon chilled sauce over each bread slice.
  • Arrange capers and cheese evenly over sauce.
