2 cups all-purpose flour
½ teaspoon kosher salt
1 teaspoon baker's ammonia
1 cup unsalted butter, high-quality, cubed, and softened
½ cup sugar
2 teaspoons vanilla extract
additional topping, chocolate chips, whole almonds, or raisins

Steps:

  • Preheat the oven to 275˚F (135˚C). Line 2 baking sheets with parchment paper.
  • In a medium bowl, sift together the flour, salt, and baker's ammonia.
  • In a separate medium bowl, cream together the butter and sugar with an electric hand mixer on low speed until light and fluffy, about 2 minutes.
  • Add the vanilla and continue beating until fully combined.
  • Add the dry ingredients to the wet ingredients and beat to incorporate.
  • Roll about 1 ounce of dough at a time in your hands to make walnut-sized balls. They will be small, about ½ inch (1 ¼ cm) wide. Place the balls of dough on the prepared baking sheets, leaving about 1 inch (2 ½ cm) of space between each cookie. Using a flat-bottomed measuring cup, gently press down on the cookies to flatten.
  • Top each cookie with 3 chocolate chips, a single almond, or raisins.
  • Bake the cookies for 30 minutes, or until the bottoms are light golden brown and the edges are crispy.

1 lb powdered sugar
1/2 cup margarine, room temp
2 cups peanut butter
3 cups Rice Krispies
8 ounces Plain Hershey Bar
6 ounces chocolate chips
1 teaspoon paraffin wax

Steps:

  • Mix together sugar, margarine, peanut butter, and rice krispies together and form into balls. (As large/small as you want them. I make them smaller than a golf ball.).
  • In a double boiler, melt the chocolate bar and chips together and add paraffin wax, may add more wax if needed.
  • Once chocolate is melted, dip the balls in chocolate and place on wax paper to cool.
  • After the balls settle, store them away. We keep them in the refrigerator or freezer during the holidays.

This is the first cookie I ever learned to make as a child. They're very delicious with the peanut butter and oatmeal. You can eat them fresh out of the pan in a bowl with a spoon, which is delicious with a glass of milk besides. This no-bake cookie recipe was my grandmother's, and my mother taught it to her children, and I will to mine. I hope you have as much fun making this either by yourself or with your children, as I did with my mom. Separate cookies with waxed paper if putting in a tin or baggie to prevent sticking.

1 ½ teaspoons baking powder
½ teaspoon salt
1 cup white sugar
1 cup butter
1 egg, lightly beaten
3 tablespoons cream
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C) .
  • Over a large bowl, sift together all-purpose flour, baking powder, salt, sugar. Cut in butter and blend with a pastry blender until mixture resembles cornmeal. Stir in lightly beaten egg, cream, and vanilla. Blend well. Dough may be chilled, if desired.
  • On a floured surface, roll out dough to 1/8 inch thickness. Sprinkle with sugar; cut into desired shapes. Transfer to ungreased baking sheets.

2 cups sugar
1 cup butter, softened
1 teaspoon vanilla extract
1/2 teaspoon salt
2 large eggs, lightly beaten
3 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon baking soda
ICING:
4 cups confectioners' sugar
1/4 teaspoon almond extract
1/2 to 2/3 cup evaporated milk
Assorted food coloring and decorations of your choice

Steps:

  • In a large bowl, cream the sugar, butter, vanilla and salt. Add eggs and mix well. Combine the flour, baking powder and baking soda; add to creamed mixture. Chill until firm, about 1 hour., On a floured surface, roll dough to 1/4-in. thickness. Cut shapes with cookie cutters; place on greased baking sheets. Bake at 375° for 7-12 minutes (depending on size) or until light golden brown. Remove to wire racks to cool completely., In a large bowl, combine the confectioners' sugar, extract and enough milk to achieve desired consistency. Tint with food coloring. Decorate cookies as desired.

1 large egg
2 large egg yolks, divided
2 teaspoons almond extract
3 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon kosher salt
1 teaspoon water
1 teaspoon red food coloring

Steps:

  • In a large bowl, cream the butter and sugar together with an electric hand mixer for 5 minutes, or until light and fluffy.
  • Add the egg, then 1 egg yolk, beating to incorporate after each addition.
  • Add the almond extract and beat to combine.
  • Sift the flour, baking soda, and salt into the bowl and beat for 3 minutes, or until a crumbly dough forms.
  • Turn out the dough onto a sheet of plastic wrap and fold the wrap over the dough on all 4 sides to create a square dough block about ½ inch (1 ¼ cm) thick. Refrigerate the dough for 2 hours.
  • Preheat the oven to 325˚F (165˚C). Line a baking sheet with parchment paper.
  • Unwrap the dough on a cutting board and cut into 25 cubes.

  • In a small bowl, beat the remaining egg yolk with the water.
  • Brush a thick layer of egg wash onto the cookies.

  • Bake for 35 minutes, or until the cookies are golden.

1 cup unsalted butter, 2 sticks
½ cup granulated sugar
1 ½ cups dark brown sugar
2 teaspoons vanilla extract
1 tablespoon greek yogurt
1 large egg
1 large egg yolk
2 ½ cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
¾ cup milk chocolate chips
½ cup mini chocolate chips
1 tablespoon caramel, per cooking
1 tablespoon cookie butter, per cookie
1 tablespoon chocolate hazelnut spread, per cookie
1 tablespoon peanut butter, per cookie
¼ cup mini marshmallows
¼ cup chocolate caramel candy, chopped
¼ cup chocolate chips
¼ cup chocolate sandwich cookie, crushed
¼ cup white chocolate chip
¾ cup rainbow sprinkles
¼ cup pretzel, crushed
¼ cup potato chip, crushed

Steps:

  • In a medium saucepan over medium heat, melt the butter and toast for about 5 minutes until it turns brown and smells nutty. Pour the brown butter into a large bowl. Let sit for 30 minutes to cool before starting to make the dough.
  • To the bowl with the cooled butter, add the granulated sugar, brown sugar, vanilla, and yogurt. Using an electric hand mixer or stand mixer, beat for 2-3 minutes until fluffy.
  • Add the egg and egg yolk and beat again until fluffy and well-combined.
  • In a separate large bowl, whisk together the flour, baking soda, and salt. Sift ⅓ of the dry ingredients at a time into the wet ingredients. Beat just until incorporated, then scrape down the sides of the bowl with a rubber spatula between each addition. Make sure not to overmix.
  • Add the chocolate chips and mini chocolate chips to the dough and gently fold just to incorporate. Cover the bowl with plastic wrap and chill in the refrigerator for 2 hours. You can also store the stuffings in the fridge so they're easier to work with later.
  • Preheat the oven to 350˚F (180˚C). Line a baking sheet (or 2) with parchment paper.
  • Using an ice cream scooper, scoop out 3 tablespoons of chilled dough and flatten out into a ¼-inch (6 mm) thick circle.
  • Add 1 tablespoon of your stuffing of choice, such as caramel, cookie butter, chocolate hazelnut spread, or peanut butter, to the center of the dough round, and fold the edges of the dough around the stuffing. Seal tightly and roll into a ball. Repeat with the rest of the dough and stuffings.
  • To the outside of the cookie dough balls, add your choice of toppings, such as mini marshmallows, chopped candy bar, chocolate chips, crushed chocolate sandwich cookies, white chocolate chips, rainbow sprinkles, pretzel pieces, or crushed potato chips. Press the toppings firmly into the dough, so they don't fall off. Repeat with the remaining stuffed cookie dough balls.
  • Place the stuffed and decorated cookie dough balls onto the prepared baking sheet approximately 3 inches (7 cm) apart, so the cookies don't spread into one another. You may need to use 2 baking sheets.
  • Bake for 11-14 minutes, or until the cookies are golden brown and evenly spread.
  • Cool on a cooling rack for 10 minutes before devouring!
  • Enjoy!

These are old fashioned cookies that have been in my family for many years. I have not tried them myself, but am submitting them in response to a request. I got the recipe from my great aunt, who says it's from her mother. She says they always used to call these "Grandma Cookies". I'm fairly sure you could use either softened butter or oil in place of the "fat"! Sorry I have no clue about how many cookies this makes or exactly how hot the oven should be!
