Number Of Ingredients 11

13 pounds ripe tomatoes (about 40 medium)
2 celery ribs, coarsely chopped
3 medium onions, coarsely chopped
1 medium green pepper, coarsely chopped
1-1/2 cups chopped fresh parsley
1/2 cup sugar
1 tablespoon Worcestershire sauce
4 teaspoons salt
1/4 teaspoon hot pepper sauce
1/4 teaspoon cayenne pepper
1/4 teaspoon pepper

Steps:

  • Quarter tomatoes; place in a 6-qt. Dutch oven. Add celery, onions, green pepper and parsley. Simmer, uncovered, until vegetables are tender, about 45 minutes, stirring occasionally. , Meanwhile, rinse five 1-quart plastic containers and lids with boiling water. Dry thoroughly. Cool tomato mixture slightly; put through a sieve or food mill. Return to pan. Add remaining ingredients; mix well. Bring to a boil. Remove from heat; cool. , Fill all containers to within 1/2 in. of tops. Wipe off top edges of containers; immediately cover with lids. Freeze up to 12 months. Thaw frozen juice in refrigerator before serving.

1/4 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon salt

  • In a large saucepan, combine the first six ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes. Remove from the heat; stir in lemon juice. Serve warm or cold.

2 tablespoons olive oil
3 medium garlic cloves, peeled
1 (28 ounce) can whole canned tomatoes
1/8 teaspoon crushed red pepper flakes
2 tablespoons coarsely chopped flat leaf parsley
kosher salt, to taste
pepper, to taste

Steps:

  • In a large skillet, heat oil over medium heat.
  • Add garlic and cook slowly until golden brown on all sides, about 10 minutes, careful not to burn.
  • Add tomatoes and their juices (do this carefully to keep oil from spattering), red pepper flakes, and salt and peper to taste.
  • Raise heat and bring to a boil.
  • Reduce heat to medium and simmer, breaking up tomatoes into small pieces with the side of a wooden spoon.
  • Cook unitl sauce thickens, about 25 minutes.
  • Remove from heat, transfer to a service dish, and garnish with parsley.

This is from Taste of Homes Light & Tasty 2003 cookbook which I received in the 2011 Cookbook Swap from BusyMomof3. The feature I like about these recipes are the give the diabetic exchanges with each recipe. For this one a serve of 3/4 cup is equivalent to 1 vegetable and 1/2 starch and if you wish to lower the sodium they advise to use reduced-sodium tomato juice and skip the salt in the recipe. They also say that you can drink it warm or chilled. I would suggest serving with a stick of celery which will alter the exchange amount.

2 pounds tomatoes, diced
1 red onion, finely chopped
1 cup brown sugar
1 ½ teaspoons red pepper flakes
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon salt
1 lemon, juiced

Steps:

  • Inspect jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jam is ready. Wash new, unused lids and rings in warm soapy water.
  • Combine tomatoes, onion, brown sugar, pepper flakes, cumin, coriander, salt, and lemon juice in a saucepan. Bring to a boil over medium-high heat. Cook, stirring frequently, about 15 minutes. Reduce heat to medium and simmer until reduced and it reaches a jam-like consistency, 20 to 30 minutes. Set aside to cool.
  • Pack jam into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw rings on tightly.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 15 minutes.
  • Remove the jars from the stockpot and let rest, several inches apart, for 12 to 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.
