Orange, Radish, and Mint Salad image

4 navel oranges
1/2 red onion, thinly sliced
8 radishes, halved and thinly sliced
1/4 cup fresh mint leaves, torn
2 tablespoons olive oil
1/4 teaspoon salt
Freshly ground black pepper

Steps:

  • Cut the top and bottom off of each orange. Stand the orange on 1 end on a cutting board and, following the curve of the fruit, cut away the skin and pith of the orange. Cut each orange section out of its pith.
  • In a medium bowl toss together the orange sections, onion, radishes, and mint leaves. Drizzle with oil and season with salt and pepper.

2 English (or hothouse) cucumbers
1 teaspoon salt
¼ cup chopped red onions
¼ cup white wine vinegar
2 tablespoons extra virgin olive oil
2 tablespoons vegetable oil
2½ teaspoons sugar
¼ teaspoon freshly ground black pepper
¼ cup chopped fresh mint

Steps:

  • Cut the cucumbers in half lengthwise. Use a teaspoon to scrape out the seeds, then cut into thin slices. Toss the cucumbers with the salt in a colander. Let drain in the sink for at least 30 minutes.
  • Meanwhile, soak the red onions in a small bowl of ice water for ten minutes, then drain in a fine mesh strainer. Blot dry with a paper towel.
  • Tap the cucumber-filled colander on the base of the sink to release any excess water. Lay a clean dish towel flat on the counter, and then dump the cucumbers over top. Use the edges of the towel to blot the cucumbers dry.
  • In a medium bowl, toss the cucumbers, onions, white wine vinegar, olive oil, vegetable oil, sugar, pepper and mint. Cover and let stand in refrigerator for at least 20 minutes or up to 12 hours. Before serving, taste and adjust seasoning, if necessary. Serve cold.
  • Make-Ahead Instructions: This salad can be made up to 12 hours ahead of time. Cover and refrigerate until ready to serve.

1 large cucumber , halved lengthways and sliced
1 bunch chives , snipped
2 tbsp mint sauce, from a jar
2 tbsp white wine vinegar
2 tbsp olive oil

Steps:

  • Tip peas into a bowl, pour over a kettleful of hot water and set aside for 10 mins. Check the peas are defrosted, then drain really well. Halve the cucumber lengthways, then slice. Just before serving mix with chives, mint sauce, vinegar and olive oil. Season and serve.

Among those cities is Glendale (not so small: it would be the second-most-populous city in New England), a center of the Armenian diaspora and home to one of the world's largest Armenian populations outside Armenia. Fleeing religious violence in the late 19th century, genocide in the early 20th or the Soviet Union after that, Armenian Californians became integral in the development of the fig, raisin and bulgur businesses. They also opened restaurants. This salad comes from one of them, Adana. The chef and owner, Edward Khechemyan, gave me the recipe in 2013.

1 head butter lettuce (or other greens of your choice)
6 kiwi fruit
1/2 long English cucumber
1/3 cup walnut pieces
1 handful fresh mint sprigs
1/4 cup olive oil, (extra virgin)
1 tbsp lime infused olive oil, (OR 1 tbsp fresh lime juice and 1 tsp lime zest)
1/4 cup rice vinegar
2 tsp honey
salt and pepper, (to taste)

Steps:

  • Wash, dry and tear lettuce leaves and arrange in a serving dish or on 4 plates. Slice cucumber very thinly, using a sharp knife, a mandoline slicer or a spiralizer. Pat dry with paper towel to remove excess moisture. Add to salad.
  • Peel and slice 2 kiwifruit and add to salad. Carve the remaining kiwi fruit into flowers and add to salad. Top with walnut pieces and fresh mint leaves.
  • Drizzle with Lime Vinaigrette just before serving.

3 tablespoons fresh minced parsley
1 green onion, thinly sliced
1/4 teaspoon salt
fresh ground black pepper

Steps:

  • Cut the cucumber in quarters lengthwise (or in halves if using small Persian cucumbers) then cut into thin slices. Place in a large bowl.
  • Peel the oranges and dice, removing seeds as you go. Add to bowl.
  • Add minced parsley, onion, salt and pepper and toss gently.
  • Let rest 10 minutes before serving or refrigerate up to a few hours.
