LEMON BLACKBERRY TORTILLA FRENCH TOAST

- In a small bowl, beat cream cheese, 3 tablespoons lemon curd, lemon zest and extract until fluffy. Set aside., In a shallow bowl, whisk eggs, cream and remaining lemon curd until blended; stir in poppy seeds. In a large cast-iron or other heavy skillet, heat 1 tablespoon butter over medium heat. Dip both sides of a tortilla in egg mixture, allowing excess to drip off. Place in skillet; toast until golden brown, 2-3 minutes on each side. Remove to a wire rack. Repeat with remaining tortillas, adding butter to grease the skillet as needed. , Spread about 3 tablespoons cream cheese mixture over each tortilla to within 1/4 in. of edges. Fold tortillas in half over filling. In a microwave-safe bowl, combine blackberries and spreadable fruit; microwave, covered, at 50% power until warmed, 2-3 minutes, stirring once. Serve with tortillas and, if desired, additional lemon zest.

LEMON BLUEBERRY FRENCH TOAST BAKE

Steps:
- Grease an 8-inch square baking dish with butter.
- Add the butter to the bowl of a stand mixer fitted with a whisk attachment and whip on medium speed for 1 minute. With the mixer running, slowly pour in the maple syrup and 1 teaspoon of the vanilla bean paste and whip until completely combined. Transfer to a serving bowl and reserve.
- Keep the rolls intact and slice across the equator to create 1 large top and 1 large bottom roll. Place the bottom roll in the baking dish, then spread with 2 tablespoons of the maple butter. Sprinkle with the lemon zest and half of the blueberries and top with the top roll.
- In a medium bowl, whisk together the milk, cream, sugar, eggs, remaining 1 teaspoon vanilla bean paste and a pinch of salt. Pour the mixture over the rolls. Cover and refrigerate at least 8 hours.
- Preheat the oven to 400 degrees F.
- Cover the baking dish with foil and bake for 40 to 45 minutes. Remove the foil, then continue to bake until golden brown, about 10 more minutes.
- Arrange scoops of the maple butter on top and sprinkle with the bacon and remaining blueberries. Serve with additional maple syrup.
LEMON-BERRY FRENCH TOAST
Steps:
- Make the egg mixture for Perfect French Toast using 1/2 teaspoon ground ginger instead of nutmeg. Spread lemon curd on 4 thick slices brioche, top with blueberries, then another bread slice. Press together; dip in the egg mixture, then fry and bake as directed. Top with confectioners' sugar.
MAKE-AHEAD ONE-DISH BLACKBERRY FRENCH TOAST
A friend gave me this recipe for a meeting we're planning. She says it is wonderful. It is originally from the November 2009 issue of Southern Living in an article by Marion McGahey about dishes you "mix up...in 30 minutes the night before for a stress-free meal the next day." I look forward to trying it!

Steps:
- Cook jam in a small saucepan over medium heat 1 to 2 minutes or until it is melted and smooth, stirring once.
- Place half of the bread cubes in the bottom of a lightly greased 13x9 inch baking dish.
- Top with cream cheese cubes, and drizzle with melted jam.
- Top with remaining bread cubes.
- Whisk together eggs and next 3 ingredients. Pour over bread in the baking dish.
- Sprinkle the casserole with brown sugar.
- Chill for 8 to 24 hours.
- The next morning, preheat the oven to 325 degrees.
- Bake covered for 20 minutes. Uncover and bake 10 to 15 minutes more or until bread is golden brown and mixture is set. Serve with desired toppings.

- In small bowl combine 1 cup pie filling and 1/4 cup powdered sugar and 1 tablespoon of water. Mix well. Put in saucepan on low heat. This will be for the topping.
- In bowl add two eggs and beat well. Set aside.
- In small bowl combine 1 cup cream cheese, 1/4 cup of powdered sugar and 1 tablespoon of water. Mix well. Spread this onto one slice of bread. It will be thick and spreadable.
- Next, add one to two tablespoons of blackberry pie filling on top of cream cheese. (you can add more filling if you want it extra thick).
- Place a slice of bread on top so that you have made a sandwich.
- (Repeat steps to make second serving).
- Dip sandwich into egg mixture so that it's coated on both sides.
- Place a dab of butter onto skillet. Cook on medium to medium low heat until both sides are golden brown.
- Top with warm topping mixture. Add cool whip if you prefer. Serve warm.

- Cook blackberry jam in a small saucepan over medium heat until melted and smooth, stirring once, 1 to 2 minutes.
- Place 1/2 of the bread cubes into the bottom of a lightly greased 9x13-inch baking dish and drizzle with melted jam. Top with remaining bread cubes.
