Easy Shrimp Tacos are the perfect simple dinner for busy weeknights! Plump, juicy shrimp are cooked in a flavorful spice blend then wrapped in warm flour tortillas and piled high with your favorite toppings.

1 pound medium shrimp ((thawed & peeled))
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
8-10 medium flour tortillas
Toppings (optional, to taste): sour cream, salsa, iceberg lettuce, tomatoes, cilantro, etc.

Steps:

  • Prep your shrimp. If frozen, run them under cool water until thawed. Peel them and remove the tails.
  • Meanwhile, prep your toppings.
  • Add the shrimp to a skillet along with the olive oil and spices. Cook over medium-high heat until the shrimp are no longer pink, flipping/stirring them occasionally (about 5-6 minutes).
  • Assemble tacos as desired and serve immediately.

1 pound large or jumbo shrimp (peeled, deveined, and tails removed (fresh or frozen and thawed))
1 tablespoon extra-virgin olive oil (divided)
1 teaspoon chili powder
1 teaspoon ground chipotle chili
1 teaspoon ground cumin
1/2 teaspoon kosher salt
6 to 8 corn or flour tortillas
Garnishes: avocados (cilantro, sour cream (or Greek yogurt), lime wedges)
1 cup nonfat plain Greek yogurt
2 tablespoons extra-virgin olive oil
1 clove garlic (peeled)
1/2 small jalapeno (seeds and membranes removed)
1/4 cup tightly packed fresh cilantro leaves
1/4 teaspoon kosher salt
Zest and juice of 1 large or 2 very small limes (about 2 teaspoons zest and 3 tablespoons juice)
2 cups shredded cabbage ( or slaw mix)

Steps:

  • Rinse and pat the shrimp dry, then transfer to a large mixing bowl. Drizzle with 1/2 tablespoon olive oil and sprinkle with the chili powder, chipotle chili, cumin, and salt. Toss to coat evenly. Let rest while you prepare the shrimp taco sauce and slaw.
  • Prepare the sauce and slaw: In a food processor fitted with a steel blade, process the Greek yogurt, olive oil, garlic, jalapeno, cilantro, salt, lime zest, and lime juice. Taste and adjust seasonings as desired. Place the cabbage in a mixing bowl and toss with about 1/2 cup of the sauce. Add more sauce if you desire a creamier slaw, then reserve the rest of the sauce for serving.
  • Cook the shrimp: In a large nonstick skillet over medium high, heat the remaining 1/2 tablespoon olive oil. Add the shrimp and sauté just until the shrimp is cooked through and no longer translucent in the center, about 4 minutes. Do not overcook! Transfer the shrimp immediately to a plate.
  • Warm the tortillas (optional) and assemble the tacos: If you like, warm the tortillas in the microwave (put them in a stack and cover them with a lightly damp towel) or a 250 degree F oven while the shrimp cook. To serve, fill the tortillas with your desired number of shrimp, then top generously with the slaw, extra sauce, a squeeze of lime juice, and any other desired toppings. Enjoy immediately.

1/3 cup chopped green pepper
1/4 cup chopped onion
1 tablespoon olive oil
1 medium plum tomato, chopped
1/4 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon ground cumin
1/8 teaspoon pepper
4 flour tortillas (8 inches), warmed
1 tablespoon minced fresh cilantro

Steps:

  • Place the fish in a greased 11x7-in. baking dish. Bake, uncovered, at 350° for 20-25 minutes or until fish flakes easily with a fork; cut into 1-in. pieces., In a large skillet, saute green pepper and onion in oil until crisp-tender. Stir in the tomato, salt, garlic powder, cumin and pepper; cook and stir for 1 minute. Add fish; heat through. Spoon filling on one side of tortillas. Sprinkle with cilantro; fold in half.

Marinade
1 1/2 tbsp minced red onion
1/2 tsp finely chopped garlic
1 tbsp honey
1 tsp chopped fresh cilantro
1/2 cup freshly squeezed lime juice
1/2 tsp Jamaican jerk or Cajun seasoning
1/8 tsp paprika
16 shrimp, shelled, deveined, tails removed
Corn relish
2 ears corn (or 1 cup canned or frozen and thawed)
Vegetable-oil cooking spray
6 Roma tomatoes, diced
1 green onion, chopped
Lime- or lemon-pepper seasoning
Tacos
4 lowfat whole-wheat tortillas
1 tsp chopped fresh cilantro
1 green onion, chopped

Steps:

  • Combine marinade ingredients with 1/4 cup water and season with salt. Add shrimp; refrigerate 1 hour. To make relish, cut corn kernels off cob. Lightly spray a sturdy skillet with cooking spray and heat over moderately high heat. (Avoid Teflon pans, which should not be used when cooking at such high temperatures.) Stir-fry corn until golden brown. Pour corn into a bowl and add remaining relish ingredients; season with salt. Remove shrimp and reserve marinade. Lightly spray the same skillet with cooking spray and heat on high until very hot. Toss in a few shrimp at a time and cook until just opaque; remove shrimp. Pour marinade into pan, bring to boil and boil for 2 minutes; lower heat and simmer until thick. Put 4 shrimp on each tortilla; top with corn relish and marinade sauce. Sprinkle with cilantro and green onion.

3 poblano chile peppers, roasted, peeled, seeds and veins removed
1-1/2 tsp. granulated chicken bouillon
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese
1-1/2 tsp. Cajun seasoning
1 lb. uncooked medium shrimp, peeled, deveined, tails removed, rinsed and patted dry
1 Tbsp. canola oil
1 garlic clove, chopped
1/2 cup chopped yellow onion
12 (6-inch) corn tortillas, warmed
3/4 cup KRAFT Shredded Mozzarella Cheese
1/4 cup crumbled queso fresco
fresh cilantro, chopped for garnish

Steps:

  • Combine milk, poblano peppers, bouillon, cream cheese in a blender container. Blend until smooth, set aside.
  • In a large bowl combine Cajun seasoning and shrimp. Toss to evenly season.
  • Heat oil in a large sauté pan over low medium heat. Stir in garlic and onion and cook for approximately 1 minute or until onion is tender. Add shrimp. Stir, cooking evenly; approximately 5-7 minutes or until shrimp is thoroughly cooked.
  • Place 3-4 cooked shrimp and 1-½ tablespoons shredded mozzarella in each tortilla and fold. Drizzle tacos with poblano cream sauce and queso fresco and serve.

1 cup plain Greek yogurt or sour cream
1/4 cup minced fresh cilantro
3 tablespoons lemon juice
2 tablespoons lime juice

2 medium green pepper, chopped
4 fresh green chilies, such as Hatch or Anaheim, seed and chopped
1/2 cup chopped red onion
1 pound uncooked shrimp (31-40 per pound), peeled and deveined
4 garlic cloves, minced

2 cups torn lettuce
8 corn tortillas (6 inches), warmed

Steps:

  • In a small bowl, combine yogurt, cilantro, lemon juice, lime juice and 1/8 teaspoon salt; set aside. In a large skillet, heat oil over medium-high heat. Add peppers and onion; cook and stir until crisp-tender, 4-5 minutes. Add shrimp, garlic, cumin and remaining ¼ teaspoon salt. Cook and stir until shrimp turn pink, 2-3 minutes. Remove from the heat. 1/2 recipe corn tortillas
6 leaves green leaf lettuce, washed and halved
2 pounds cooked lobster or crabmeat, shrimp and salmon (preferable poached)
1 1/2 cups Citrus Cucumber Relish, recipe above
1/2 avocado, peeled, seeded and mashed
1 cup sweet peas, blanched
1/2 bunch red radishes, washed, trimmed and thinly sliced
1/2 bunch cilantro, leaves only, roughly chopped
2 limes, halved
1/4 cup extra-virgin olive oil

Steps:

  • Toast 12 small tortillas. Lay tortillas out on counter. Line each tortilla with a piece of lettuce and spread the fish on top. Cover with 2 tablespoons of cucumber relish, a dab of avocado, a tablespoon of sweet peas, a few slices of radish and a pinch of cilantro. Finish each with a squeeze of lime and a teaspoon of olive oil. Serve immediately.

8 crispy corn taco shells
2 sushi-grade skinless salmon fillets (about 250g), cut into 1cm cubes (ask your fishmonger)
2 tbsp soy sauce
2 tbsp Yuzu juice or lime juice
1 tsp sesame oil
1 avocado , stoned, peeled and cubed
nori seaweed , sliced, to serve
1 tsp olive oil
1 crushed garlic
1 tsp crushed ginger
3 spring onions , sliced, plus extra to serve
1⁄2 tsp finely chopped red chilli
250g raw king prawns , roughly chopped
1 lime , zested and juiced, plus wedges to serve
1⁄2 small bunch coriander , leaves picked

Steps:

  • For the salmon, combine all the ingredients, except the avocado and seaweed, in a bowl and mix well. Cover and leave to marinate in the fridge while you prepare the other ingredients.
  • For the prawns, heat the olive oil in a pan over a high heat. Add the garlic, ginger, spring onions and chilli, stirring into the oil for 20 secs. Add the prawns and stir constantly until cooked through and pink. Remove from the heat and stir through the lime zest and juice.
  • Stir the avocado into the salmon and warm the taco shells following pack instructions. Fill each taco with the prawns or the salmon. Top the salmon tacos with the seaweed and the prawn tacos with coriander and extra spring onions. Squeeze over lime wedges to serve.
