ITALIAN MARINATED SEAFOOD SALAD
This is my own original recipe. Serve over ribbons of radicchio, romaine, spinach, or any favorite salad greens, mixed with paper thin slices of red onion, along with some crusty fresh Italian bread for dipping.

Steps:
- Bring a large pot of water to boiling. Cook scallops, shrimp, mussels, and calamari in boiling water for 2 minutes. Drain. Peel the shrimp, and shell the scallops and mussels.
- Place cooked seafood and olives in a large bowl, and toss with lemon juice, olive oil, garlic, parsley, chives, and red pepper flakes. Chill for 1 hour.
- Divide salad greens onto 6 plates or salad bowls. Spoon seafood over greens. Garnish with slices of lemon and red onions. Season with salt and freshly ground black pepper.

- Combine the orange juice concentrate, oil, honey, dried dill weed, white pepper, salt, and orange zest, and pour over the fish in a glass baking dish. Cover and chill 30 minutes. (You can also make this without marinating the fish; just broil it and brush with the marinade.)
- Remove the fish from the dish and reserve the marinade. Grill or broil the fish 4 to 6 inches away from the heat source (either over medium coals or under a hot broiler), turning carefully once and brushing with the marinade until fish is thoroughly cooked and flakes easily when tested with a fork, about 5 to 10 minutes.
- If the fish is less than 1/2-inch thick, you can broil it without turning, which makes the recipe much easier. Discard any remaining marinade and serve the fish immediately.

- In a food processor, combine the chilies, garlic, shallots, turmeric, tomato, ginger, coriander, candlenuts and shrimp paste. Process until the ingredients are well ground but not pureed.
- In a medium-size saute pan, heat the oil over medium heat and add the chili mixture, lemongrass and palm sugar. Cook, stirring occasionally, for 10 minutes. Remove from the heat and cool to room temperature. Remove the lemongrass stalks and stir in the tamarind paste and salt. Use as a marinade for seafood and as a condiment. Store, covered, in the refrigerator for up to three weeks.

Get out a small bowl and put 1/2 cup (115 g) of ketchup into it along with 2 tablespoons (30 g) of horseradish, 1 teaspoon (4.9 ml) of lemon juice, 1⁄2 teaspoon (2.5 ml) of Worcestershire sauce, and 1⁄2 teaspoon (2.5 ml) of hot sauce.Tip: For the most intense flavor, use freshly squeezed lemon juice instead of bottled.
