4 teaspoons olive oil
2 teaspoons cider vinegar
Artificial sweetener equivalent to 2 teaspoons sugar
1/4 teaspoon dried marjoram
3/4 cup buttermilk
3 tablespoons plain nonfat yogurt
2 tablespoons fat-free mayonnaise
2 tablespoons finely chopped onion
2 tablespoons minced fresh parsley
1 garlic clove, minced

Steps:

  • In a bowl, combine oil, vinegar, sweetener and marjoram. Whisk in buttermilk, yogurt and mayonnaise. Stir in onion, parsley and garlic. Cover and refrigerate for 6 hours or overnight to thicken. whisk before serving. serve over salad greens and vegetables of your choice. Refrigerate leftover dressing.

1 tsp garlic powder
1 tsp onion powder
1 tbsp chopped fresh chives

1 tsp salt
freshly ground pepper
1-2 tbsp white balsamic vinegar
2 cups 1% low fat buttermilk

Steps:

  • In a small bowl or large measuring cup, combine the sour cream, yogurt, mayonnaise, garlic, powder, onion powder, parsley, chives, salt, and cracked pepper. Mix well.
  • Stir in the white balsamic vinegar; then buttermilk.
  • Adjust the seasonings to taste, adding another tablespoon of balsamic vinegar if desired. The flavors will become bolder over time.

1 clove garlic
Kosher salt and freshly ground black pepper
1 cup mayonnaise
1/3 cup buttermilk
1 teaspoon white wine vinegar
2 tablespoons minced chives
2 tablespoons minced flat-leaf parsley
1 scallion (white and green parts), thinly sliced
8 ounces small red-skinned potatoes, halved
Kosher salt and freshly ground black pepper
1 cup fresh corn kernels (from 2 ears of corn)
1 cup chopped fresh green or wax beans
1 cup small broccoli florets
1 cup cherry tomatoes, halved
1 Kirby cucumber with peel, chopped
4 cups torn mixed greens, such as arugula, romaine and watercress
1 cup sprouts, such as alfalfa, broccoli, radish or pea, optional

Steps:

  • For the ranch dressing: Smash the garlic clove, sprinkle with 1/2 teaspoon salt and, with the side of a large knife, mash and smear the mixture to a coarse paste. Scrape the paste into a small bowl. Add the mayonnaise, buttermilk, vinegar, chives, parsley and scallions and whisk well to make a creamy dressing. Use immediately or refrigerate in a tightly sealed container for up to 3 days. (Makes about 1 1/3 cups.)
  • For the salad: Put the potatoes in a small saucepan with enough cold water to cover and season with salt. Bring to a boil and then simmer, uncovered, until just tender, about 5 minutes. Drain and put in a large bowl.
  • Bring a medium saucepan of water to a boil and salt it generously. Fill a medium bowl with ice water and salt it as well. Add the corn, beans and broccoli to the boiling water and cook until crisp-tender, about 2 minutes. Use a slotted spoon or strainer to scoop out the vegetables and plunge them immediately into the ice water. Drain the vegetables, pat them dry and add to the bowl of potatoes along with the tomatoes and cucumber. Toss the salad with 1/2 cup of the dressing. Taste, and add more salt and pepper if desired. (The salad may be prepared up to this point 2 hours ahead and refrigerated.)
  • When ready to serve, toss the salad with the greens and the sprouts if desired, and with a bit more dressing if you like your salad on the well-dressed side. Pass the remaining dressing at the table.

  • In a blender or food processor blend all ingredients and salt and pepper to taste until smooth. Dressing keeps, covered and chilled, 1 week. Serve dressing with soft lettuce, shellfish salad, or salmon salad.

1/4 cup low-fat sour cream or 1/4 cup nonfat sour cream
2 tablespoons nonfat yogurt, lemon flavour optional
1 teaspoon onion powder
3/4 teaspoon garlic powder
1/2 teaspoon chives, snipped
1/4 teaspoon lemon, zest of
1 teaspoon dried dill
1 teaspoon mixed dried herbs or 1 teaspoon mixed fines herbes
1 teaspoon low-sodium instant chicken bouillon granules
1/2 teaspoon lemon juice
1/4-3/4 cup fat-free buttermilk

Steps:

  • Use a food processor, blender, or whisk by hand, all of the ingredients except buttermilk.
  • Add buttermilk a little at a time until desired consistency is reached (If you like a thicker consistency, this can double as a dip or a spread).
  • Chill 4-6 hours or overnight.
  • Serve over crisp salad greens and garnish with croutons.
  • For variation, omit salad herbs, and add 3/4 cup chopped green onion and 3/4 cup crumbled blue cheese or spicy Feta cheese.

1/2 teaspoon onion powder
1/4 teaspoon garlic powder
Kosher salt (Diamond Crystal) and black pepper
3 romaine lettuce hearts (about 1 pound), trimmed and chopped into bite-size pieces
3 fresh ears of corn, shucked, kernels removed from cobs
8 radishes, halved lengthwise and thinly sliced into half-moons
2 large, ripe avocados, pitted and diced
5 scallions, trimmed and thinly sliced at an angle

Steps:

  • Prepare the dressing: In a large measuring cup, whisk all the dressing ingredients together to combine. Season with ¾ teaspoon salt and ½ teaspoon pepper. (Makes 1 ¼ cups. It will taste quite salty at this point, and that is intentional. You want it to hold up when tossed with a big pile of vegetables.)
