This is a beautiful and delicious salad that was popular in our salad bar when we had our restaurant. Red and green vegetables are mixed together with the imitation crab, and then tossed with a light and lemony dressing.

2 ½ cups shredded cabbage
1 cup shredded red cabbage
1 head fresh broccoli, cut into florets
1 green bell pepper, thinly sliced
1 red bell pepper, sliced
1 pound imitation crabmeat, coarsely chopped
¾ cup light mayonnaise
¼ cup lemon juice
2 tablespoons white sugar
3 tablespoons white wine vinegar
1 clove crushed garlic
1 ½ teaspoons Worcestershire sauce
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon hot pepper sauce

Steps:

  • In a small bowl, whisk together mayonnaise, lemon juice, sugar, white wine vinegar, garlic, Worcestershire sauce, salt and pepper, and chile sauce.
  • In a large bowl, combine cabbage, broccoli, bell peppers, and crab. Toss mixture with dressing. Cover, and refrigerate until ready to serve.

This is yet another version of Ramen Noodle Slaw, but with a little different twist -- lime. Also,no nuts, as my family isn't wild about them in a main dish. The bottled dressings listed are Good Seasons and Kraft brands, because that's available here. This makes a great lunch or light supper when it's too hot to eat (but when is that???). It's easy to put together: use a LARGE Tupperware bowl with a lid, and you don't even need to stir, just turn it over a few times, and chill! (Cooking time is chilling time)

1 medium napa cabbage, sliced thin, including stem pieces (baby bok choy)
1 medium carrot, peeled and grated
1 (8 ounce) can sliced water chestnuts, drained
1 (8 ounce) can bean sprouts, drained
1 (8 ounce) package frozen ready-to-eat cocktail shrimp, thawed and drained
1 (3 ounce) package ramen noodles, oriental or 1 (3 ounce) package shrimp, flavor
1/3 cup asian sesame dressing
1/3 cup French dressing (Catalina)
1 lime, juice of

Steps:

  • Slice (shred) Napa cabbage and place in large bowl.
  • Grate carrot into the cabbage.
  • Add drained water chestnuts, bean sprouts and shrimp.
  • Crush ramen noodles and add those to bowl; sprinkle spice packet over all.
  • Pour in both salad dressings. The directions are for 1/3 cup each, but add or subtract amounts to your liking. Most times, I just squirt until it looks good!
  • Juice the lime over all.
  • Place lid on the bowl and turn over several times. Best chilled for at least an hour.

3 to 4 cloves garlic, peeled, crushed and chopped (2 teaspoons)
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 teaspoons Dijon-style mustard
1 tablespoon red-wine vinegar
1 tablespoon soy sauce
3 tablespoons canola oil
1 firm head Napa cabbage (about 1 pound)

Steps:

  • Put the garlic in a large salad bowl and mix in all the remaining ingredients except the cabbage.
  • Trim the cabbage, removing and discarding damaged or wilted leaves, and cut the head crosswise into 1-inch slices. You should have about 8 cups. Wash well and spin dry in a salad dryer (moisture would dilute the dressing). Ten or 15 minutes before serving, add the cabbage to the dressing, toss well and set aside, so the dressing can penetrate the cabbage and soften it slightly.

A restaurant quality seafood salad--no pasta, just veggies and whatever seafood you choose to add. This is a basic recipe; feel free to add your own spin (shredded carrots, diced green or red peppers, red cabbage, seasonings).

2 pounds cooked shrimp, peeled and deveined
1 pound imitation crabmeat, flaked
1 head cabbage, diced
1 bunch celery, diced
3 green onions, thinly sliced
1 cup mayonnaise
2 tablespoons white sugar

Steps:

  • Gently mix the shrimp, imitation crabmeat, cabbage, celery, and green onions together in a large bowl. Stir the mayonnaise and sugar together in a separate bowl until the sugar is dissolved into the mayonnaise; add to the shrimp mixture and gently stir until all ingredients are evenly coated.
  • Refrigerate for 3 hours to allow the cabbage to soften and the flavors to blend.

1 1/2 cups frozen shelled edamame
1 teaspoon finely grated lime zest, plus 2 tablespoons lime juice
1 tablespoon honey
6 teaspoons soy sauce
1 tablespoon plus 1/4 teaspoon toasted sesame oil
3/4 pound center-cut salmon fillet, skin removed
5 teaspoons grated peeled fresh ginger (from a 3-inch piece)
1/4 head napa cabbage, cored and thinly sliced (4 cups)
1/2 head red cabbage, cored and thinly sliced (4 cups)
1 small bunch scallions, thinly sliced (3/4 cup)

Steps:

  • Cook edamame according to package instructions; drain. Heat broiler, with rack in top position. In a small bowl, stir together lime zest, honey, and 2 teaspoons soy sauce. Brush a foil-lined rimmed baking sheet with 1/4 teaspoon sesame oil. Add salmon; brush with honey glaze. Broil until salmon is browned and opaque throughout, 6 minutes. Let cool slightly. Meanwhile, in a large bowl, whisk together lime juice, ginger, 4 teaspoons soy sauce, and 1 tablespoon sesame oil. Add cabbages, edamame, and scallions and toss to coat. Flake salmon into salad and toss very gently to combine.
