Southern Lima Beans with Ham image

This classic Southern Lima Bean recipe is a delicious side dish or budget-friendly entrée. The rich, smoky butter beans are flavored with a ham hock and slowly simmered until tender!

1 lb. large dried lima beans
2 tablespoons olive oil
2 medium onions, diced
1 stalk celery, diced
4 cloves garlic, minced
1 smoked ham hock, meat scored (about 12 ounces)
1 bay leaf
8 cups water
½ teaspoon kosher salt, or more to taste
½ teaspoon ground black pepper
Garnish: hot sauce; chopped fresh herbs
Optional, for serving: cornbread

Steps:

  • Rinse and sort the beans. Set aside.
  • In a large Dutch oven, heat olive oil over medium-high heat. Add onion and celery; cook, stirring frequently, until soft, about 5-8 minutes. Add garlic and cook for 1 more minute, stirring constantly.
  • Add the rinsed beans, ham hock, bay leaf, water, salt and pepper. Bring to a boil; reduce heat slightly just so that it's at a low boil, and cook for 20 minutes. Reduce heat again just so that the liquid is simmering. Cover and cook for about 1 ½ hours, or until beans are tender. Check the beans after 1 hour, because they may be soft enough at that point if you like your beans a bit more firm. If you prefer the beans really soft and broken down, you may prefer to extend the cooking time to 2 hours. While the beans are cooking, check to occasionally make sure that the beans are covered with water (adding more water, if necessary). Discard bay leaf, remove ham hock from the pot, and shred or chop the meat. Return chopped meat to the pot with the beans. Taste and season with additional salt and pepper, if necessary. Garnish individual servings with hot sauce and herbs; serve with cornbread.

16 ounces dried large lima beans
1 teaspoon salt
1/2 cup molasses
1/2 cup light brown sugar, firmly packed
2 tablespoons prepared mustard
1 (8 ounce) can tomato sauce
3 lbs smoked pork hocks (3)
1 cup onion, peeled and chopped

Steps:

  • Rinse beans; put into a large pot with 2 quarts cold water.
  • Heat to the boil; simmer two minutes.
  • Remove from heat; cover and let stand for one hour.
  • Add salt.
  • Reheat to boil, reduce heat and simmer, covered, until beans are tender (about an hour).
  • Drain and reserve liquid.
  • Combine molasses, sugar, mustard and tomato sauce.
  • Stir in 2 cups reserved cooking liquid; add to beans.
  • Stir in smoked pork hocks and onion.
  • Turn ingredients into a 2 1/2 quart casserole or a bean pot; bake at 300F for 3.5 to 4 hours.
  • Add more cooking liquid if needed.
  • Stir halfway through cooking.

It is just another ole farm recipe, that is sooooo good!! The veterans really appreciate any and all HOME COOKING...when made from the heart! and I do...

2 pkg lima beans (1 -pound each)...or in the south they call them... butter beans
2 pkg smoked pork hocks... ( 2-pork hocks to a pkg.)
2 Tbsp liquid smoke
salt & pepper...to taste
chopped parsley

Steps:

  • 1. For directions to pre-soak beans,for this recipe please go to: http://WWW.ochef.com/662.htm The night before put smoked pork hocks in your crock pot,cover with water.Cook on low overnight. Next morning strain all, save broth. Dump hocks from the strainer onto a platter. Separate and get rid of everything like skin, bones...etc.Save the meat! Hand pick all the delicious pork hock smoked meat..and add to the broth. Put this in refrigerator .
  • 2. NEXT DAY... Rinse your beans twice. Then skim most of the fat from the top of the meat broth. You will be using the meat and broth to add to your soaked and rinsed lima beans to this broth. Add a minced onion, 2 tablespoons liquid smoke,and some chopped parsley. Cook on low in the crock pot for about 4-5 hours. A little water or chickn broth can be added,if needed, to keep it moist. Be careful ...you are not making soup!!!....LOL Salt & pepper to taste. This recipe can be cut in half for the average family. Or cook all and freeze some for later. I share with my neighbors...They love all I cook!!!

Lima beans and ham hocks are true southern soul food. The beans supply protein and energy-rich carbohydrates, and the ham adds delicious flavor.

Number Of Ingredients 9

1 pound dried lima beans, thoroughly rinsed
1 tablespoon vegetable oil
1 yellow onion, chopped
2 celery stalks, diced
2 small carrots, diced
8 cups chicken stock (page 91) or water
1 ham hock
Salt and freshly ground black pepper
1/4 cup chopped fresh parsley, for garnish

Steps:

  • Place the lima beans in the slow cooker.
  • Place a sauté pan over medium-high heat and add the vegetable oil. Add the onion, celery, and carrots and sauté for about 10 minutes, until lightly browned.
  • Transfer the contents of the pan to the slow cooker and add the water and ham hock. Cover and cook on low for 5 to 7 hours. Remove the ham hock and strip it of as much fat as you can. Return the meat to the pot and continue to cook for 1 hour, until the beans are very tender. Season to taste with salt and pepper.
  • Serve hot, garnished with the parsley.

2 lbs meaty ham hocks
2 lbs dried lima beans
6 cups water
2 onions, chopped
1/3 cup celery, diced
1 tablespoon brown sugar
1 teaspoon dry mustard
1 teaspoon salt

Steps:

  • Put the lima beans in a kettle with the water. Bring to a full boil and boil for 2 minutes. Remove from heat and allow them to stand, covered, for 1 1/2 hours. Then add the ham hocks, onions, and celery. Season with brown sugar, mustard, and salt. Cover and simmer for 2 hours. Remove meat from bones, keeping it in large pieces. Skim excess fat from top of sauce. Return meat to kettle.

I was born and raised in the south, and we eat a lot of beans. Here is a easy and basic lima bean recipe. We've been doing it this way for years. You can use ham hocks, hambones, smoked bacon or smoked sausage for the pork flavor in this dish. Also fresh, frozen or even canned beans can be used--they just won't have to cook as long.

1 (1 lb) bag regular lima beans or 1 (1 lb) bag baby lima beans
1 medium onion, chopped
2 ham hocks or 1 leftover ham bone, with some meat still on it
2 garlic cloves
1 teaspoon black pepper
salt
1 tablespoon olive oil or 1 tablespoon vegetable oil

Steps:

  • I know the bag says to soak the beans overnight, but you really don't have to.
  • Wash the beans, and then put them in a large pot. Cover with water and bring to a boil. Boil for 3 to 5 minutes, then turn off the heat, cover and let it sit for 1 hour.
  • After the beans have sat, drain the water and sit the beans to the side.
  • Add the oil to the pot and sauté the ham hocks and onions together, until onion is clear and tender, add garlic and sauté about 2 minutes more. Add the beans and cover with water.
  • Add pepper and salt--only about 1 teaspoon of salt at first.
  • Bring to a boil; stir, reduce heat and cover and simmer for about 2 hours.
  • Keep checking the water level and stirring every once in a while. Add more water if needed, but not too much.
  • Just enough to keep about 1 inch of water above the beans as they cook.
  • Cook until beans are tender, adding more salt if needed. The water will turn into a wonderful gravy. Serve over rice.

  • In a saute pan over med-high heat, add vegetable oil.
  • Add in onion, celery, and carrots; saute for about 10 minutes until lightly browned.
  • Transfer mixture to the slow cooker and add in chicken stock and ham hock.
  • Cover and cook on low for 5-7 hours.
  • Remove the ham hock and strip it of as much fat as you can; return the meat to the pot and cook for 1 hour, until the beans are very tender.
  • If needed, season to taste with salt and pepper.
  • Serve hot, garnished with parsley.
