Steps:
- Beat eggs, milk, seasoned salt, salt, and black pepper together in a bowl.
- Heat olive oil in a large non-stick skillet over medium-high heat; saute jalapeno in hot oil until slightly softened, 2 to 3 minutes. Add ham to jalapeno and cook until heated through, about 1 minute.
- Pour egg mixture into ham mixture. Cook and stir until eggs are set but not dry, 3 to 5 minutes. Sprinkle 1/2 of the Cheddar cheese over eggs; cook and stir until cheese is melted. Transfer eggs to a plate and sprinkle remaining cheese over the top.

This recipe came from my Mother. I love to make this for breakfast and sometimes we have this for dinner. My family loves this.

Steps:
- Preheat oven to 350 degrees.
- In a large saucepan, melt 2 tablespoons butter and blend in flour. Cook for 1 minute.
- Gradually stir in milk, cook until thick. Add salt, pepper and cheese, stir until cheese melts. Set aside.
- In a large skillet saute the ham and green onion in 3 tablespoons butter until onion is tender. Add eggs and cook over medium heat until eggs are set, stir in mushrooms and cheese mixture. Spoon into a greased 13 x 9 x 2 inch casserole dish.
- Combine topping ingredients, sprinkle evenly over casserole.
- Bake uncovered for 30 minutes.
HAM AND VEGETABLE SCRAMBLED EGGS
This is a lovely dish for breakfast or supper. Save morning time by preparing the veggies and ham the night before. Remember that eggs should be scrambled slowly. Do not use high or even medium-high heat! Medium or low heat is best. Recipe is from one of those check-out stand cookbooks.

- In medium bowl, combine eggs, milk and garlic salt; beat well. Set aside.
- Melt butter in large skillet over medium heat. Add ham, bell pepper and onion; cook and stir 2 to 4 minutes or until veggies are crisp-tender.
- Pour egg mixture over ham mixture in skillet. Cook until eggs are set but slightly moist, stirring occasionally from outside edge to center of pan. Remove from heat. Sprinkle with cheese. Cover; let stand 1 minute or until cheese is melted.

- Spray non-stick frying pan with cooking spray.
- Heat up over medium to medium-high heat.
- (Use medium on an electric stove, medium-high on a gas.) While pan is heating, whisk together eggs, Worcestershire sauce, milk, salt, and pepper with a fork, just until blended.
- Pour into pan and stir continually for about 2 to 3 minutes, until eggs are cooked.
- Because of the milk, they will remain moist, but they should not be runny or sticky.
- Turn off heat, but leave pan on burner.
- Add ham and cheese.
- Stir until everything is mixed, ham is heated, and cheese is melted.
- Yum!

SCRAMBLED EGG BEATERS AND HAM
This is my breakfast every morning at work. High in protein, low in fat and calories, high in taste. This is a FANTASTIC and FILLING breakfast for those on the go. I use crumbled goat cheese, but feta or even shredded cheddar or whatever type you like will work great. You will need a microwave. You can also substitute the egg whites (in a carton) as well). As for the hamsteaks - I use the farmland hamsteaks - thicker than regular ham lunch meat and only 70 cals per slice! (I find these at wally world in the middle of the grocery section where the full hams are located). As far as storage to work - I just use the small ziplock containers in my lunch bag!

- In a microwavable bowl, place egg beaters and microwave for 2 minutes. Remove and fluff up with fork - there will be liquid at the bottom.
- Place back in microwave and microwave for 1 more minute or until all the liquid has been cooked.
- Slice up the ham how you prefer (I cut it into strips and cut those down). Microwave the ham for 30 seconds.
- Place in the bowl with the eggs and top with the cheese.
- Enjoy!
