3 cups mashed potatoes (with added milk and butter)
1 cup biscuit/baking mix
1 cup cooked stuffing
2 large eggs, lightly beaten
1 cup French-fried onions, crushed
3/4 cup dry bread crumbs

Steps:

  • In a large bowl, mix potatoes, baking mix, stuffing and eggs until blended. Refrigerate, covered, 30 minutes., Preheat oven to 400°. In a shallow bowl, mix onions and bread crumbs. Shape 1/4 cupfuls of the potato mixture into 3/4-in.-thick patties. Dip patties in crumb mixture, patting to help coating adhere., Transfer to two greased 15x10x1-in. baking pans. Bake 35-40 minutes or until golden brown, turning once. Let stand 5 minutes before serving.

2 sticks (16 tablespoons) unsalted butter
6 large Idaho baker potatoes, peeled
Kosher salt and freshly ground black pepper
1 bunch fresh thyme
Creme fraiche or sour cream and salmon roe, optional, for serving

Steps:

  • Clarify the butter: Melt the butter in a small saucepan and bring it to a gentle simmer.
  • Shut off the heat and allow it to sit a minute on the stove. The milk solids should start to sink to the bottom. Slowly pour the butter into a bowl, keeping as much of the white milky liquid as possible in the saucepan. Discard the milk solids. These are prone to burning and by clarifying the butter, the potato cake will be less likely to overbrown. Keep the butter warm on the stove.
  • Prepare the potatoes: Using a mandoline slicer or a sharp knife, cut the potatoes into thin 1/8-inch-thick slices. Transfer them to a bowl, sprinkle with a pinch of salt and black pepper, cover with all but 2 tablespoons of the melted butter and toss to coat.
  • Pour the remaining 2 tablespoons butter in the bottom of an 8-inch nonstick skillet and swirl it around to coat the bottom and sides. Add the thyme and a pinch of salt. It will start to crackle a little. Cook until it is no longer crackling, about 5 minutes, then remove the thyme from the butter and let cool slightly, about 1 minute. Strip half of the thyme leaves from the stems into the bowl with the potatoes.
  • Preheat the oven to 350 degrees F.
  • Assemble: Remember that the bottom layer will be the top when you unmold this cake so it should be done with extra care. Beginning in the center of the skillet, layer the potatoes in an overlapping circle following the edge of the skillet. Continue with the remaining potatoes, switching the direction and adding some salt and add a few spoonfuls of the potato liquid in between each layer. Gently press down on the potatoes as you're layering to make sure they stick together and form a cake. Pour any remaining potato liquid on top.
  • Cook: Place the skillet on high heat and cook until the water starts to release itself from the potatoes and you can see the edges browning, 10 to 12 minutes. Place the skillet on a baking sheet, transfer the baking sheet to the oven and cook, undisturbed, for 15 minutes.
  • Remove the baking sheet from the oven and carefully pour off any excess butter from the skillet into a bowl; save. Carefully line the hot baking sheet with parchment paper, then flip the skillet onto the sheet in one deft motion. Lift off the skillet and pour the reserved butter over the cake. Return the baking sheet to the oven to cook until the top of the cake is golden brown and crispy and the potatoes feel completely tender in the center when pierced with the tip of a knife, about 15 minutes.
  • Serve: Carefully transfer the cake to a cutting board, season with salt and cut into wedges like a pie. Serve with roe or creme fraiche if desired.

2 pounds Yukon gold potatoes, peeled
1 cup light cream
4 tablespoons butter
Salt and freshly ground black pepper
1 cup all-purpose flour
1/2 teaspoon cayenne pepper
2 eggs
1/2 cups milk
3 cups fresh bread crumbs, divided
Vegetable oil, for frying
2 tablespoons (1/4 stick) unsalted butter
2 tablespoons all-purpose flour
2 (15-ounce) cans chicken broth
2 teaspoons hot sauce
2 teaspoons Worcestershire sauce
2 tablespoons apple butter
4 sprigs thyme, leaves removed
Salt and freshly ground black pepper

Steps:

  • Cakes:
  • Put the potatoes in a large pot and cover with cold water. Bring to a boil over medium heat and cook until the potatoes are tender, about 15 to 20 minutes. Drain the potatoes and return to the pot over low heat and let the potatoes dry for 3 minutes. Mash the potatoes with a potato masher.
  • In a small pot, over low heat, combine the cream, butter, and salt and pepper, to taste. Heat until the butter is melted and the cream is hot. Slowly add the heated cream and butter to the potatoes and mix in with a wooden spoon or a hand mixer until all the cream is incorporated. Be careful not to overmix or the potatoes will become gummy.
  • Spread the potatoes out onto a sheet pan to cool. Once the potatoes have cooled to room temperature scoop out into 1 1/2 tablespoon portions. Roll each portion into a ball and then flatten into a patty about 1 1/2 inches in diameter. Arrange the patties in 1 layer on sheet trays and refrigerate for 1 hour until cold.
  • Line a sheet tray with 1 cup bread crumbs. Line another sheet tray with paper towels. Reserve both.
  • Set up a dredging station with 3 baking dishes. In 1 baking dish combine the flour, cayenne pepper, and season with salt and pepper. In the second baking dish beat together the eggs with the milk. In the third baking dish mix 2 cups bread crumbs with salt and pepper, to taste. Dredge each cake into the seasoned flour then into the egg mixture and then into the bread crumbs making sure they are completely coated. Arrange the bread cakes on the sheet tray with the bread crumbs on the bottom.
  • Heat about 1/2-inch of oil in large saute pan over medium-high heat. Fry the cakes until golden brown in batches, about 3 to 4 minutes per side. Transfer the cakes as they are fried to the baking sheet lined with a paper towel to drain. Blot the tops of the cakes with paper towels to remove the excess oil. Transfer the cakes to a serving platter.
  • Melt the butter in a large skillet over low heat, whisk in the flour and cook until flour turns a light brown color, about 3 to 4 minutes. Slowly whisk in the chicken broth. Add the hot sauce, Worcestershire sauce, apple butter, thyme leaves, and season with salt and pepper. Let simmer until thick, about 5 minutes. Remove the sauce from pan to a serving bowl and serve on the side as a dipping sauce with the mashed potato cakes.

1 egg
1 tablespoon dried parsley
1/2 teaspoon onion powder or 3 tablespoons grated fresh onions

Steps:

  • Mix all ingredients.
  • If mashed potatoes are warm, chill for a couple of hours.
  • Form into 4-6 patties about 1/2" thick.
  • If mixture is too moist to form patties, add a little flour.
  • Dip in flour.
  • Saute slowly in butter, adding more as needed, until crispy on the outside and golden brown.
  • Great with bratwurst, ham, meatloaf, or any meat that doesn't have gravy.
  • Also good with bacon and eggs for breakfast.

Steps:

  • Preheat oven to 350 degrees.
  • Scoop up 1/3 cup of mashed potatoes, press a slice of cheese in the center and pat the mashed potatoes around the cheese to enclose it.
  • Flatten the potato cake slightly.
  • Repeat with the remaining potatoes and cheese.
  • In a medium skillet, (cast-iron is best), melt the butter in the oil over high heat.
  • When fat begins to brown, carefully scoop two 1/2-cup mounds of shredded potato into the skillet; flatten them with a spatula and season with salt and pepper.
  • Top each with a mashed potato round and cover with another 1/2 cup of the shredded potatoes. Lightly press the shredded potato into the mashed potato.
  • Season with salt and pepper, reduce the heat to low and cook, turning once, until the cakes are crisp and golden, about 8 minutes.
  • Transfer the potato cakes to a baking sheet and keep warm in the oven.
  • Repeat to make the remaining 2 cakes.
  • Plate the potato cakes and sprinkle with the chopped green onion.
  • Serve hot.
  • If you are tempted to use frozen hash browns, don't. I tried it and was sadly disappointed with the results.

1 lb yellow potatoes ~ mashed - no butter or milk
4 slice thick bacon - cooked crisp and save the drippings
1 1/2 Tbsp grated onion
kosher salt & fresh cracked black pepper
2 Tbsp flour
1 Tbsp fresh parsely, chopped
sour cream

Steps:

  • 1. If you have an iron skillet, use it for these cakes. Browns nicely. If not any skillet will do. Fry your bacon until crisp and drain. Save the drippings and add some extra if you have it. You just want enough drippings in the pan, that the potatoes won't absorb too much before nicely browned.
  • 2. Mash potatoes ( cool ) and fold in the flour, salt, pepper, bacon, parsley and onion.
  • 3. Get skillet good and hot, but not smoking. Make 4 - 6 patties with the potato mixture and place in hot grease. Re salt and pepper. Fry for 4 - 5 minutes on the first side, can carefully lift around the edge to see if browned enough. Carefully flip to the other side and cook until golden crispy. Drain on paper towels.
  • 4. Serve with sour cream if desired. These cakes are so good! Enjoy them with breakfast, dinner or just a snack.
