1/4 cup brown sugar
1/4 cup sugar
7/8 cup butter
2 tablespoons corn syrup
5/8 cup flour
1 teaspoon baking powder
1 1/3 cups rolled oats
1 egg

Steps:

  • Beat the butter with the sugars until light and fluffy. Add the egg and syrup and mix well.
  • Sift in the flour and baking powder and add the oats. Stir until well mixed together.
  • Put heaped teaspoons of the mixture onto a greased cookie sheet and flatten slightly.
  • Bake for 12 minutes, then lift onto a cake rack. The cookies will be slightly soft, but they'll become firm and chewy when they cool down.

3 tablespoons shortening
1 1/2 cups white sugar
3 eggs
1 1/2 teaspoons almond extract
3 cups rolled oats
1 1/2 teaspoons salt

Steps:

  • Preheat oven to 325 deg F.
  • Cream together shortening and sugar. Beat in eggs, then extract. Gradually blen in oats and salt.
  • Drop dough by spoonfuls 2 in apart on cookie sheets. Flatten cookies with the bottom of a glass dipped in flour. Bake 12-15 min until golden brown. Transfer to wire racks for cooling.

These cookies are a very simple Scottish recipe, similar to the more popular Scottish favourite shortbread.

2 cups flour
1 cup butter (softened)
1 cup sugar

Steps:

  • In large bowl, mix flour and sugar.
  • Add softened butter, and mix to make a crumbly dough.
  • Form small balls with the dough.
  • Place on ungreased cookie sheet, and then smoosh the balls down to make a flat cookie shape.
  • Cook in 400 degree oven until very lightly browned on top.
  • im not 100% sure how long the browning process will take, so watch them as they cook.
  • it should take about 20 minutes.
  • They can be eaten warm, or they can be cooled, whatever you prefer.
  • Enjoy!
